MORNING CASSEROLE
I like the recipe because it is easy. If you don't want to get up early and have to make breakfast early it is already made the night before. All you have to do is pop it in the oven in the morning and let it cook while you are getting ready for the day. It came from my late Grandma...may God bless her soul. I miss her. This makes a great Christmas morning casserole as you can cook it while opening Santa's gifts. Try it. It is yummy and saves time on Christmas morning--or anytime.

Steps:
- In a large skillet, brown sausage; crumble and drain.
- Butter a 9 x 13-inch casserole dish.
- Place bread (torn into bite-sized pieces) in bottom of dish.
- Place sausage on the top of bread.
- Sprinkle cheese over top.
- In a large bowl, mix beaten eggs, milk, salt, and dry mustard; blend well.
- Pour over the other ingredients.
- Cover and refrigerate overnight.
- The next morning, uncover and bake at 350°F for 45 minutes.
- Slice into squares and serve warm.
- You may also add some ham, cut into bite-sized pieces, or crumble some bacon in it along with the sausage.

Steps:
- Grease a 2 1/2 to 3 quart baking dish with butter, oil, or cooking spray.
- Cube the bread and place in the dish in a single even layer.
- In a large skillet, cook the sausage, breaking it up with a spoon, until it is almost cooked through, about 5 minutes.
- Drain off the fat.
- Layer the sausage over the bread, and top with the potatoes; sprinkle the cheese on top.
- In a medium bowl, whisk together the eggs, milk, mustard powder, salt, and black pepper to taste.
- Pour the egg mixture over the sausage and potatoes in the casserole.
- Cover with plastic wrap and refrigerate overnight.
- When ready to cook the casserole, preheat the oven to 350°.
- Bake the casserole until set and golden, about 30 minutes.
- Serve hot.

EASY LIKE SUNDAY MORNING BREAKFAST CASSEROLE
I found this recipe on the Trader Joe's website, but since it didn't exactly fit my family's tastes, I changed it just a litte bit. Also, Sunday is the beginning of the work/school week here in Israel, so this is usually reserved for Friday morning, which is the start of our weekend. Actually, we have this more often for supper on a Thursday night. But I never heard Lionel Ritchie sing Easy Like Thursday Night, so Sunday morning it is.

Steps:
- Preheat the oven to 350 degrees F.
- Grease a baking pan (I use olive oil).
- Distribute the bread pieces evenly in the pan. In my house this means tossing to bowl into the pan and just patting everything into place.
- Beat the eggs with the milk. Add the salt, pepper, paprika and any other spices and herbs that float your boat. Beat again.
- Pour this over the bread. Aim for an even distribution.
- Toss the sausage pieces over the bread. Try to be fair and cover the whole dish evenly.
- Sprinkle the cheese over the whole thing. Again, aim for an even distribution.
- Bake for 25 minutes or until the top is golden brown. Stick a knife in the center. If it comes out clean, your breakfast is done.
- Let cool for about 5 minutes until serving.

- Cut the bread into 1-inch cubes and spread in the bottom of a greased 9- by 13- by 2- inch casserole dish.
- In a medium skillet, brown the sausage over medium heat until fully cooked and no longer pink. Remove the sausage with a slotted spoon to drain the fat. Spread the cooked sausage over the bread and top with the cheese. Then stir together the, half-and-half, dry mustard, salt and eggs. Pour this mixture over the cheese. Cover the casserole with aluminum foil and refrigerate for 8 hours or overnight.
- The next day, preheat the oven to 350 degrees F.
- Bake the covered casserole until set and slightly golden, about 50 minutes. Remove from the oven and allow the casserole to set for 15 minutes before serving.
BAGEL BREAKFAST CASSEROLE
This dish has everything you love about a traditional bagel breakfast sandwich, but it's all baked into a creamy, cheesy casserole that can be made the night before.

- Position a rack in the center of the oven and preheat to 350 degrees F. Grease a 9-by-13-inch baking dish with butter or cooking spray.
- Heat the olive oil in a large skillet over medium high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes; transfer to a bowl with a slotted spoon.
- Whisk together the milk, half-and-half, cayenne, eggs, 3/4 teaspoon salt and 1/2 teaspoon pepper in a large bowl. Fold in the sausage, spinach, bagels and 3/4 cup of the provolone, then pour into the prepared baking dish. Dot the top with the cream cheese and sprinkle all over with the everything bagel seasoning and remaining provolone (see Cook's Note).

Delicious and SO SIMPLE to make! This is the perfect make-ahead dish. Great for Christmas morning, or for when you have guests. (Prep time does not include the overnight refrigeration process)

- Grease a 3 litre casserole dish or a 9 x 13 baking dish.
- Put cubed bread and shredded cheese in after lightly tossing together.
- Mix the eggs, milk, salt and dry mustard together.
- Pour mixture over bread and cheese in casserole dish.
- Add a bit of ground black pepper to the top.
- Refrigerate overnight, covered with plastic wrap.
- Before baking, pour 1/4 cup melted butter over the top, add bacon, shrimp, sausage, crab-- anything that sounds good.

FARMER'S CASSEROLE
This is a great use for the leftover Easter ham. You can prepare it the night before, or if you're last minute like me it still works like a charm to throw it all together at once. I didn't have ham, but Jimmy Dean sausage was wonderful (I cooked it first then mixed it in with everything). I think this serves more than 6 people, but I must confess I couldn't eat just one scoop. - Spread ham into the bottom of prepared casserole dish. Butter one side of each bread slice; cut slices into cubes. Arrange buttered bread cubes atop ham; layer American cheese over bread cubes.

- Preheat the oven to 325 degrees F (165 degrees C). Spray a 9x13-inch casserole dish with cooking spray.

CHRISTMAS CASSEROLE
There are many kinds of breakfast egg casseroles, but for my children, this is the one that makes Christmas Christmas. I make it the day before and the first person up on Christmas morning pops it in the oven. Prep time does not include the overnight in the refrigerator which is necessary.

- Cut crusts off loaf of bread.
- Cut bread into half inch cubes.
- Note: I have used a Pepperidge Farms type loaf or have made my own bread such as an oatmeal white bread.
- Melt butter in a bowl and toss bread cubes to coat.
- Grease a 9" x 13" glass casserole dish.
- Layer bread cubes, grated cheese, mushrooms, ham, etc. in dish.
- Combine the eggs, milk salt and pepper and beat.
- Pour over casserole.
- Cover with foil and let set overnight in the refrigerator so bread absorbs some of the egg mixture.
- To bake, place casserole in larger pan with 1 inch hot water.
- Bake, at 375 degrees (350 convection) for 1 1/2 hours or until silver knife inserted in center comes out clean. I start the baking with the foil on, then uncover for the last half hour.
- Casserole can be cooked without the water bath, but the sides will be a little crustier. It also bakes faster this way.
