These nut and butter cookie with a sugar coating are great for the holidays when sampling lots of cookies. Just pop one in your mouth and enjoy!

1 cup butter
½ cup white sugar
1 tablespoon vanilla extract
2 cups sifted all-purpose flour
¾ teaspoon salt
1 cup chopped pecans
¾ cup sifted confectioners' sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C.) Lightly butter 2 baking sheets, or line with parchment paper.
  • Cream the butter, sugar, and vanilla until light and fluffy. Sift together the flour and salt; mix into the butter mixture. Stir in the pecans. Dust your hands with a little of the confectioners' sugar and roll the dough into 1 inch balls.
  • Place 2 inches apart on the baking sheets and bake for 25 minutes or just until brown. Put on racks to cool for 15 minutes, then roll in the confectioners sugar.

When I make these, they always bring me back to my childhood. They are perfect to make with children. Keep them in the freezer for the chewy texture or room temperature for soft melting texture. Either way they are sooo yummy!! This is a Christmas favorite!

1 1/2 cups sugar
1/2 cup cocoa
1/2 cup milk
1/2 cup butter
1 cup unsweetened coconut
1 cup sweetened coconut
3 1/2 cups rolled oats

Steps:

  • In a sauce pan, bring sugar, cocoa and milk to a boil. Add in butter and remove from heat.
  • Stir in 1 cup sweetened coconut and oats. Chill for 30 minutes or cool to touch.
  • Shape into 1 inch balls and roll in 1 cup unsweetened coconut and store in freezer.
  • Its better to eat them from the freezer in my opinion. If you serve them thawed its too soft for my liking =) Try both ways and see what you like!

Slightly sweet, nutty little no-bake snowballs taste indulgent but are a pretty nutritionally sound snack, especially during the holidays. Full of cashews, coconut, agave, oats, and vanilla, they keep tummies satisfied without the sugar overload.

1/2 cup quick-cooking oats
2/3 cup cashews (toasted if desired)
3 tablespoons agave syrup
1 pinch vanilla bean powder
1 pinch sea salt
1 tablespoon water
4 tablespoons desiccated coconut (divided)

Steps:

  • In a food processor or blender, blitz the oats and cashews until you have a fine meal, 1 to 2 minutes. Add the agave syrup, vanilla, salt, and water and blitz again briefly, just until the mixture resembles wet cookie dough.
  • Dump the mixture into a bowl and stir in 2 tablespoons of the desiccated coconut. Shape into small balls. Place the remaining coconut on a plate and roll the balls to fully coat with coconut.
  • Stored in a tin or jar in the refrigerator, the no-bake snowballs will keep for about a week.

1 (300 ml) can sweetened condensed milk (Eagle Brand)
3 cups mini marshmallows
1 cup unsalted nuts, chopped (nuts of choice)
confectioners' sugar
cocoa powder (1 part confectioners' sugar, 1 part cocoa powder)
sweetened coconut
finely chopped nuts

Steps:

  • In large bowl, stir all filling ingredients together (you may need to use your hands to thoroughly combine, as dough may be stiff).
  • Take 2-3 teaspoons filling and roll into a ball (if dough is too sticky, refrigerate until easier to handle, about 30 minutes). Roll in coating(s) of choice.
  • Place on parchment paper lined baking sheet, cover and refrigerate until firm (about 4 hours). Keep refrigerated.

1-1/2 cups graham cracker crumbs (about 10 finely crushed crackers)
1/2 cup pecan halves, finely chopped
6 Tbsp. powdered sugar
2 Tbsp. BAKER'S 100% Pure Cocoa Powder
1/4 cup milk
4 tsp. light corn syrup
12 JET-PUFFED Marshmallows
1/2 cup BAKER'S ANGEL FLAKE Coconut, finely chopped

Steps:

  • Combine first 4 ingredients in large bowl. Add milk and corn syrup; mix well.
  • Use moistened fingers to press 2 Tbsp. graham crumb mixture into ball; flatten into 3-inch round. Wrap dough around marshmallow to completely enclose marshmallow, then re-roll into ball. Repeat with remaining dough and marshmallows.
  • Cover plate with waxed paper. Place coconut in medium bowl. Roll balls, 1 at a time, in coconut until evenly coated with coconut; place on prepared plate.
  • Refrigerate 1 hour.

Growing up in Newfoundland, I looked forward to Christmas each year for the huge family get-togethers, and of course the food that went along with them. This recipe is one that my Grandmother made every year. Definitely one of my favourite Christmas cookies.

1 cup 2% milk
1 cup white sugar
¼ cup butter
¼ cup unsweetened cocoa powder
2 teaspoons vanilla extract
2 cups rolled oats
2 ½ cups unsweetened shredded coconut, divided

Steps:

  • Combine milk, sugar, butter, and cocoa powder in a large pot; bring to a boil for 3 minutes. Stir vanilla extract into the milk mixture; boil another 2 minutes. Remove pot from heat.
  • Stir oats and 2 cups coconut into the milk mixture until thoroughly mixed; cool for 5 minutes.
  • Spread 1/2 cup coconut onto a plate. Roll the mixture into 24 balls and roll in the coconut. Set on a sheet of parchment paper until finished.
