BARILLA NO-BOIL LASAGNA

This is the best lasagna ever!! The noodles are so nice and thin and there is NO PREBOILING!! I will never purchase any other lasagna other than Barilla. I've been making this now for 3 years and everyone agrees--the recipe makes the very best! The instructions are right on the back of the lasagna box. I usually make multiple batches and freeze them. Its a great housewarming or "new baby" meal for a friend!

1 (9 ounce) box barilla no-boil lasagna noodles
2 eggs
1 (15 ounce) container ricotta cheese
4 cups shredded mozzarella cheese
1/2 cup parmesan cheese (optional)
1 lb ground beef or 1 lb sausage, browned
2 (24 ounce) jars spaghetti sauce or 2 (24 ounce) jars pasta sauce
parsley (to garnish)

Steps:

  • Preheat oven to 375.
  • In bowl, combine beaten eggs, ricotta cheese and TWO cups of the mozzarella cheese and parmesan.
  • If you choose not to use the parmesan, just add more mozzarella.
  • Set aside.
  • In a 13X9X3 pan, spread 1 cup of sauce on bottom of pan.
  • Layer in the order, 4 uncooked lasagna noodles (they will overlap), then 1/3 part of the ricotta cheese mixture, half the browned meat, 1 cup mozzarella cheese, and 1 cup of spaghetti sauce.
  • Next layer, 4 uncooked lasagna noodles, 1/3 part of the ricotta cheese mixture, and 1 1/2 Cups sauce.
  • Next layer, 4 uncooked lasagna noodles, remaining ricotta mixture and remained meat, 1 cup of sauce.
  • For top layer, 4 uncooked lasagna noodles, remaining sauce, and remaining 1 cup mozzarella.
  • Bake covered with foil for 50-60 minutes.
  • Uncover and continue cooking until all the cheese is melted on the top (about 5 minutes).
  • Let stand 15 minutes before serving.
  • If you are using a 13X9X2 pan---just make 3 layers to avoid boiling over.

This is a really good basic lasagna recipe. It's based on one I found somewhere, but I've tweaked it quite a bit to suit my own tastes. I like it as written with italian sausage, but you can substitute ground beef if you must.

1 1/4 lbs Italian sausage, casings removed (I use spicy)
1 (28 ounce) jar spaghetti sauce, of your choice
1 (14 1/2 ounce) can diced tomatoes
1 1/2 cups water
1 garlic clove, chopped
1 teaspoon italian seasoning
12 ounces ricotta cheese (about 3/4 small container)
3 cups grated mozzarella cheese
1/2 cup grated parmesan cheese
2 eggs
1 tablespoon parsley
1/2 teaspoon ground black pepper
1 (8 ounce) package lasagna noodles, uncooked

Steps:

  • Heat oven to 350.
  • In large pan, brown italian sausage; drain.
  • Add spaghetti sauce, diced tomatoes, water, garlic and italian seasoning. Cover and simmer for 10-15 minutes.
  • In medium bowl, combine ricotta, 2 cups of the mozzarella, parmesan, eggs, parsley and pepper. Mix well.
  • Pour about 1 cup of the sauce on bottom of 9x13 pan.
  • Arrange 3 uncooked lasagna noodles over sauce; cover with about 1 cup sauce.
  • Spread 1/2 the cheese filling over sauce.
  • Repeat layers of lasagna, sauce and cheese filling.
  • Top with layer of lasagna and remaining sauce; sprinkle with remaining 1 cup mozzarella cheese.
  • Cover with foil and bake at 350 for 45 minutes.
  • Remove foil; bake an additional 15 minutes.
  • Let stand 10 minutes before cutting.

I found this recipe a long time ago on a box or jar, we've made our own additions to it over the years. Everyone always comments on the great flavors and the secret is the sausage- we use breakfast sausage for a great slightly spicy slightly sweet taste. You can use any red pasta sauce that you like- we LOVE a roasted red pepper and onion flavor because it complements the sausage really well. Enjoy!

8 ounces lasagna noodles
1 lb breakfast sausage
1/4 cup onion, finely chopped
1/2 teaspoon garlic salt
2 (26 ounce) jars pasta sauce
2 eggs
15 ounces low-fat ricotta cheese
12 ounces mozzarella cheese, shredded
1/4 cup romano cheese or 1/4 cup parmesan cheese, grated
parsley, chopped (optional)

Steps:

  • Saute meat, onion, and garlic salt with a small amount of salt. Drain.
  • Add spaghetti sauce, bring to boil, reduce heat and simmer while assembling cheese mixture.
  • In a large bowl combine ricotta, Romano, eggs. Mix well.
  • Spray a 9x13 inch baking dish lightly with nonstick spray.
  • Spread about 1 cup of meat/sauce mixture in the bottom of dish. Top with 3 or 4 strips uncooked lasagna noodles- however many will fit in a single layer.
  • Cover with 1/3 the meat/sauce mixture then 1/3 the cheese/egg mixture, then 1/3 the shredded Mozzarella.
  • Repeat layers of uncooked noodles, meat/sauce, cheese/egg mixtures and Mozzarella, ending with the 3rd layer of Mozzarella on top.
  • Sprinkle with chopped parsley.
  • Cover tightly, bake at 350 degrees for 1 hour.
  • Let stand covered 15 minutes before serving.

1 tablespoon olive oil
1 pound mild Italian sausage, casings removed
2 cups Classic Marinara Sauce, recipe follows
12 ounces mafaldine corte or farfalle pasta
8 ounces mini mozzarella balls
3/4 cup ricotta
1/4 cup grated Parmesan
Torn basil leaves, for topping
1/3 cup olive oil
6 cloves garlic, minced
Three 26-ounce cartons chopped tomatoes
1 teaspoon Italian seasoning
1 large basil sprig
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter

Steps:

  • Heat the olive oil in a Dutch oven or large, wide pot over medium-high heat. Add the sausage and cook, breaking up clumps with a wooden spoon, until brown, about 6 minutes. Add the Marinara and 3 1/2 cups water and bring to a boil. Add the pasta, then partially cover and cook, stirring occasionally, until the pasta is al dente and the sauce is coating it nicely, about 16 minutes. Stir in the mozzarella and ricotta, then sprinkle with the Parmesan and basil, and serve.
  • Heat the olive oil in a large saucepan over medium heat. Add the garlic and cook, stirring frequently, until it just turns golden, 3 to 4 minutes. Add the tomatoes, Italian seasoning, basil, 1 teaspoon salt and a few grinds of fresh pepper. Bring to a simmer and cook, stirring occasionally, for 7 minutes. Take off the heat and stir in the butter until melted. Add salt and pepper to taste.

RICH NO BOIL LASAGNE

Cheesy goodness! I adapted this from the recipe on the Barilla no-boil noodle box. I increased the amount of cheese, and used a homemade sauce because I think canned sauces are too sweet.

9 ounces no-boil lasagna noodles (1 box)
2 eggs
28 -32 ounces nonfat cottage cheese
4 cups shredded part-skim mozzarella cheese
1/2 cup grated parmesan cheese or 1/2 cup romano cheese
1 tablespoon olive oil
1 lb bulk Italian sausage
1 small diced onion
2 garlic cloves, minced
2 (14 ounce) cans stewed tomatoes or 2 (14 ounce) cans diced tomatoes
1 (6 ounce) can tomato paste
3/4 cup red wine
1/2 cup water
2 teaspoons dried oregano, divided
2 teaspoons dried basil, divided
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 375.
  • Lightly beat eggs in a medium bowl. Add cottage cheese, 2 cups of mozzarella, and the parmesan or romano cheese. Add the pepper and 1 tsp each of dried basil and oregano and stir well.
  • Heat olive oil in a large skillet over medium heat - swirl to coat skillet. Add sausage and onion, and cook until sausage is no longer pink, then add garlic and cook briefly (one minute or so).
  • If there's extra oil in the pan at this point, drain and discard.
  • Stir tomato paste into sausage mixture and then slowly stir in red wine and water.
  • Process canned tomatoes in food processor until finely chopped. Add with ALL liquid to skillet and stir.
  • Add remaining 1 tsp each of oregano and basil and heat just until bubbling, then remove from heat.
  • Spread 1 cup of sauce in bottom of pan.
  • To layer lasagne:.
  • In 13 x 19 dish layer 1/4 of noodles, 1/3 of cheese mixture, and 1 1/4 c of sauce.
  • Repeat layers twice.
  • Then top with remaining 1/4 of noodles, remaining sauce, and 2 cups of mozzarella.
  • Cover tightly with foil and bake for 55 minutes. Uncover and bake another 5 minutes so top can brown slightly.
  • Let stand 15 minutes before cutting.

I always thought Lasagna was too difficult to make until I found a 'no boil' recipe. Over the years, I have developed my own 'no boil' lasagna that my family loves.

1 lb ground chuck
1/2 cup yellow onion, diced (about 1/2 onion)
2 tablespoons butter
2 minced garlic cloves
1 (14 ounce) can petite diced tomatoes
1 (6 ounce) can tomato paste
1 (6 ounce) can tomato sauce
1 teaspoon sugar
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon thyme
1 teaspoon garlic pepper seasoning
1/2 teaspoon garlic sea salt (salt or garlic salt can be used instead)
1 1/2 cups water
1 (15 ounce) ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup parmesan cheese
1 egg
9 lasagna noodles
1 cup shredded mozzarella cheese

Steps:

  • In 9 X 13 inch pan, place 9 lasagna noodles and fill with cold water until noodles are covered. Set aside.
  • Melt butter for sauce in deep skillet and add minced garlic and diced onion. Cook until onions are transparent.
  • Add ground chuck to onions and cook, breaking up into small pieces with spatula.
  • While ground chuck is cooking, mix all Cheese mixture together, adding egg last. Set aside.
  • After ground chuck mixture is cooked, add remaining sauce ingredients: First add diced tomatoes, paste and sauce; then sugar and spices; then combine water into the mixture and stir well. Turn off burner.
  • Using a 9 X 13 inch glass baking dish, spread a small amount of sauce onto the bottom of the dish.
  • Place three of the lasagna noodles in a line in the bottom of the dish. Add approximately 1/3 of the cheese mixture and smooth over the lasagna noodles. Add approximately 1/4 of the sauce mix on top of the cheese mixture and lightly spread it to even it out.
  • Add a layer of lasagna noodles and repeat cheese and sauce layers. Repeat once again for the top layer.
  • With the last 1/4 of the sauce mixture, use it to spread around the edges and make sure all noodles are covered with sauce. (If not, the noodle will be hard when cooked).
  • Cover with foil and bake at 350 degrees for 1 hour.
  • Remove from oven, remove foil and add remaining 1 cup of mozeralla. Bake for an additional 10 minutes, cheese will melt.
  • Remove from oven and cut into 12 squares.

1 pound ground beef
1 cup chopped onion
4 cloves garlic, minced
2 (8 ounce) cans tomato sauce

1 (14 ounce) can Italian-style crushed tomatoes
2 (6 ounce) cans tomato paste
3 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
2 teaspoons brown sugar
1 teaspoon salt
1 teaspoon Italian seasoning
¼ teaspoon ground black pepper
½ teaspoon fennel seeds
½ cup grated Parmesan cheese
12 lasagna noodles
1 egg
1 (15 ounce) container ricotta cheese
2 tablespoons chopped fresh parsley
½ teaspoon salt
1 pinch ground nutmeg
1 (16 ounce) package shredded mozzarella cheese, divided

Steps:

  • Brown sausage and ground beef with onion and garlic in a large Dutch oven or heavy pot over medium heat, cooking and stirring until meat is cooked through, 10 to 15 minutes. Drain and discard grease. Stir tomato sauce, crushed tomatoes, Italian-style crushed tomatoes, tomato paste, basil, 2 tablespoons parsley, brown sugar, salt, Italian seasoning, black pepper, fennel seeds, and 1/2 cup Parmesan cheese into meat mixture. Bring to a boil, reduce heat to low, and simmer sauce for at least 1 hour (up to 6 for best flavor). Stir occasionally.
  • Place lasagna noodles into a deep bowl and cover with very hot tap water; let soak for 30 minutes.
  • Beat egg in a bowl and stir ricotta cheese, 2 tablespoons parsley, 1/2 teaspoon salt, and nutmeg into egg until thoroughly combined.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Cover bottom of a 9x13-inch baking dish with 1 cup sauce. 1 pound extra-lean ground beef
1 (16 ounce) can refried beans
2 teaspoons dried oregano
1 teaspoon ground cumin
¾ teaspoon garlic powder
12 dry lasagna noodles
2 ½ cups water
2 ½ cups salsa
2 cups sour cream
¾ cup chopped green onions
1 (2 ounce) can sliced black olives
1 cup shredded Pepper Jack cheese

Steps:

  • In a large skillet, cook the ground beef over medium-high heat until evenly brown. Drain off excess fat. In a large bowl, combine the cooked beef, refried beans, oregano, cumin and garlic powder.
  • Place four of the uncooked lasagna noodles in the bottom of a 9x13 inch baking dish. Spread half of the beef mixture over the noodles. Top with 4 more uncooked noodles and the remaining half of the beef mixture. Cover with remaining noodles. Combine the water and the salsa in a medium bowl, and pour over all.
  • Cover tightly with foil. Bake at 350 degrees F (175 degrees C) for 1 1/2 hours, or until noodles are tender.
  • In a medium bowl, combine the sour cream, green onions and olives. Spoon over casserole, and top with shredded cheese. Return to the oven, and bake for an additional 5 to 10 minutes, or until cheese is melted.

This is a great make ahead, no boil lasagna. I've tried it at high altitude and low, ahead of time or that day. I've served as is, or added a layer of torn up spinach and pesto leaves on top of the cheese layers. For a wedding, I once made 3 pans of this. It's great!

  • If you have to break a noodle to fill in gaps over 1/2 inch, that's okay.

  • Repeat layers.
  • End with cheese on top; put remaining parmesan on top of the other chesse.
  • Pour 1 cup of water around inside edges of the pan, and cover with foil.
  • **Bake in a 350 oven for 1 hour, then uncover and bake 15 minutes more.
  • Take from oven and let cool about 10 minutes before serving.
  • Can be refrigerated up to 48 hours at this point.

1 (16 ounce) package lasagna noodles
1 pound ground beef
1 onion, chopped
salt and pepper to taste
1 tablespoon Italian seasoning
4 cups ricotta cheese
1 cup grated Romano cheese
2 ½ cups spaghetti sauce
1 ½ cups shredded mozzarella cheese
2 medium zucchini, sliced
1 cup fresh basil leaves

Steps:

  • Bring a large pot of water to a rapid boil. Boil lasagna noodles 6 to 8 minutes until al dente. Drain and rinse with cold water. Lay noodles flat and remove excess water with a paper towel.
  • In a skillet, brown the ground beef over medium-high heat. Add onion, salt, pepper, and Italian seasoning. Cook until there is no remaining pink color in beef. Drain any liquids and set aside.
  • In a large bowl, mix together ricotta cheese, Romano cheese, 2 cups of the spaghetti sauce and the seasoned ground beef. Mix until well blended. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  • Add a thin layer of spaghetti sauce in the bottom of a 9x13 inch baking dish. Add a layer of noodles lengthwise and a few noodles in the opposite direction. Pour in a generous layer of ricotta mixture on top of noodles. Top ricotta layer with several basil leaves. Add another layer of noodles lengthwise. Spread on 1 cup of the mozzarella cheese. Line up the zucchini slices on top of the mozzarella cheese. Add another thin layer of ricotta cheese. Add the last layer of noodles lengthwise. Top the noodles with the remaining spaghetti sauce, several more basil leaves in an eye catching arrangement and top with the remaining 1/2 cup mozzarella cheese.
  • Bake in a preheated oven for 50 to 55 minutes. If Mozzarella cheese becomes too browned, loosely cover with a piece of foil.

This is a delicious twist on vegetable lasagna - you do not have to pre-boil the noodles! This version of a traditional lasagna will not weigh you down and you won't mind eating the leftovers either.

8 lasagna noodles (1/2 of a 1 lb package)
1 (15 ounce) container small curd low fat cottage cheese
1/2 cup grated parmesan cheese
1 teaspoon dried basil
2 eggs
2 tablespoons olive oil
2 garlic cloves, minced
1 cup chopped onion
1 cup frozen broccoli (thawed and drained)
1 cup zucchini, chopped
1 cup green pepper, chopped
2 (26 ounce) jars spaghetti sauce, any flavor
2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 350.
  • In a large bowl combine cottage cheese, Parmesan, eggs and basil; mix well.
  • Heat olive oil over medium heat; saute garlic and onions for 3 minutes, stirring occasionally.
  • Add rest of vegetables and cook until tender, about 5 minutes.
  • Add veggies into the cottage cheese mixture and mix well.
  • Spread 1 c of pasta sauce in bottom of a 13x9" baking dish and spread evenly.
  • Layer with half each: uncooked lasagna noodles, cottage cheese mixture, remaining
  • pasta sauce and mozzarella.
  • Repeat layering.
  • Cover tighlty with aluminum foil.
  • Bake 1 hour.
  • Uncover; bake an additional 15 minutes or until hot and bubbly.
  • Let stand 15 minutes before serving.

This is a basic lasagna, it comes from the back of the Barilla no-boil lasagna noodle box. I add a little extra and I don't layer it like the box says, too complicated to remember what goes where... It's yummy and it surprises most that its from a box.

1 (9 ounce) box barilla lasagna noodles, uncooked
2 eggs
1 (15 ounce) container ricotta cheese or 15 ounces cottage cheese, can be substituted
4 cups shredded mozzarella cheese, divided
1/2 cup grated parmesan cheese
1 lb Italian sausage, cooked and crumbled
1 lb ground beef, cooked and seasoned with salt and pepper
2 (26 ounce) jars marinara sauce
1 teaspoon Italian spices

Steps:

  • Preheat oven to 375.
  • Spray a 9X13 baking pan.
  • In a medium bowl, beat eggs, stir in ricotta, 2/3 of the mozzarella, Parmesan and the Italian seasonings.
  • Pour the marinara sauce in with the cooked meats and stir.
  • Assembly: spread 1 cup of sauce on bottom of pan. Each layer will take 3-4 noodles. Each layer gets 1/3 of the cheese mixture, and the meat/sauce combo. The top layer gets the remaining mozzarella cheese.
  • Bake covered with foil for 50-60 minutes. Uncover and cook appx 5 minutes till cheese is melted and bubbly. Let stand 15 minutes before cutting.

½ cup grated Parmesan cheese, divided
2 eggs
2 (24 ounce) jars RAGÚ® Old World Style® Traditional Sauce
12 uncooked lasagna noodles

Steps:

  • Preheat oven to 375 degrees F. Combine ricotta cheese, 1 cup mozzarella cheese, 1/4 cup Parmesan cheese and eggs in bowl; set aside.
  • Spread 1 cup Sauce in 13 x 9-inch baking dish. Layer 4 uncooked noodles, then 1 cup sauce and 1/2 of the ricotta cheese mixture; repeat. Top with remaining 4 uncooked noodles and remaining sauce.
  • Bake 1 hour covered tightly with aluminum foil. Remove foil and sprinkle with remaining mozzarella and Parmesan cheeses. Bake uncovered an additional 10 minutes. Let stand 10 minutes before serving.
