8 slices sourdough bread
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
3 tablespoons mayonnaise
3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
4 ounces Brie cheese, rind removed, sliced
Oven-Roasted Tomatoes

Steps:

  • Spread 3 tablespoons butter on one side of each slice of bread. Place bread, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with sliced brie and tomatoes. Sprinkle a portion of the cheddar cheese mixture evenly over brie; add fried onion rings. Sprinkle with the remaining cheddar cheese mixture and add bacon; top with remaining bread slices, toasted side facing inwards. Spread the butter-mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.

2 tablespoons unsalted butter

Steps:

  • Put 2 slices of bread on a cutting board or work surface. Top each with 1 slice of the Cheddar, 2 slices of bacon, a slice of Monterey Jack cheese, the remaining slice of Cheddar and another slice of bread; press down lightly.
  • Heat 1 tablespoon of the butter in a large skillet over medium-low heat. Add the sandwiches and cook until the bread toasts and the cheese is slightly melted, 3 to 5 minutes. Turn with a spatula and add the remaining 1 tablespoon butter to the pan. Cook until the second side is toasted and the cheese is melted, about 3 minutes more, adjusting the heat as needed to keep the bread from burning before the cheese melts.?

10 slices bacon
1 12-pack pull-apart dinner rolls
6 tablespoons salted butter, melted
1/2 tomato, finely chopped
4 slices provolone cheese
3 slices muenster cheese

Steps:

  • Preheat the broiler. Heat the vegetable oil in a large nonstick skillet over medium heat. Add the bacon and cook, turning occasionally, until browned, about 10 minutes. Transfer to a paper towel?lined plate to drain, then crumble into small pieces.
  • Split the whole pack of attached dinner rolls in half horizontally. Place the top and bottom halves cut-side up on a baking sheet. Brush with all but 1 tablespoon of the melted butter and broil until toasted, 1 to 3 minutes. Remove the top bread piece from the baking sheet. Flip the bottom piece and continue to broil until toasted on the other side, 1 to 2 more minutes. Remove from the oven and preheat to 400 degrees F.
  • Turn the bottom bread piece cut-side up and sprinkle with the bacon. Top with the chopped tomato, then shingle the provolone and muenster on top, alternating the two. Cover with the top bread piece, then brush the roll tops with the remaining 1 tablespoon melted butter. Bake until the bread is toasted and the cheese is melted, 12 to 15 minutes.

Steps:

  • Preheat oven to 375 degrees. Lay bacon in a single layer on a rimmed baking sheet and cook until crisp, about 15 to 20 minutes. Drain on paper towels. Cool and rinse the pan.
  • Line the baking sheet with foil. Trim the root ends of the scallions, halve lengthwise, and chop into about 1-inch pieces.
  • Lay out the bread on a work surface and butter 1 side of each piece. Put 4 slices of the bread, buttered side down, on the prepared baking sheet. Layer half of the cheese slices on the bread. My hack of baking them on a sheet pan in the oven means the sandwiches will be ready at the same time, and I can enjoy hanging out with my friends and family while the oven does all the work.

12 slices assorted bread, such as Texas Toast, pumpernickel, and sourdough
1 stick (8 tablespoons) salted butter, at room temperature
12 slices assorted cheese, such as American cheese, Cheddar and Muenster cheese
1 cup Kardea's Pimento Cheese, recipe follows
Toppings, such as sliced roasted red peppers, pickles, sliced ham, sliced turkey, sliced tomatoes, fresh basil, sliced red onion and/or pulled pork
8 ounces extra-sharp yellow Cheddar, shredded (about 2 cups)
8 ounces cream cheese, at room temperature
4 ounces white Cheddar, shredded, preferably Vermont Cheddar (about 1 cup)
4 ounces diced pimentos, drained and juice reserved
3 tablespoons mayonnaise
1 tablespoon finely chopped fresh chives
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
Kosher salt and freshly ground black pepper

Steps:

  • Arrange a rack in the bottom of the oven, place a large rimmed baking sheet on the rack and preheat to 450 degrees F.
  • Spread one side of 6 slices of bread with 4 tablespoons of the butter and place, buttered sides down, on a second large rimmed baking sheet.
  • Top each buttered bread slice with 1 slice of cheese or some of Kardea's Pimento Cheese and your desired toppings. Top with another slice of cheese and the remaining 6 bread slices. Spread the tops of the bread slices with the remaining 4 tablespoons of the butter.
  • Carefully remove the hot baking sheet from the oven, and place it on top of the uncooked sandwiches, rimmed edges up. Press down on the sandwiches.
  • Place the stacked baking sheets in the oven on the bottom rack. Bake until the cheese is melted and the bread is golden brown and crispy, 10 to 12 minutes. Serve immediately.
  • Add the yellow Cheddar, cream cheese, white Cheddar, pimentos and mayonnaise to a bowl and mix together. Add the chives, garlic powder, cayenne, smoked paprika, salt and pepper and mix until thoroughly combined.

6 English muffins

Steps:

  • Preheat the oven to 375 degrees F. Spray a 9-by-13-inch baking pan with nonstick cooking spray or grease with butter.
  • Add the bacon to a cold medium skillet heat over medium heat. Cook, flipping occasionally, until crisp, about 10 minutes. Drain on paper towels and set aside.
  • Whisk the eggs, milk, 1 teaspoon salt and a few grinds of pepper together in a large bowl. Pour into the prepared pan. Bake until puffed and set, 15 to 20 minutes. Remove from the oven and let cool.
  • Place the English muffins cut-side up on a baking sheet and brush with some butter if using. Bake until slightly toasty, 3 to 4 minutes.
  • Once the eggs are cool enough to handle, use a large round biscuit cutter (about 3 3/4 inches in diameter) or the rim of a drinking glass to cut out 6 rounds.   • Red Onion Mayo.
  • Preheat oven to 375 degrees F.
  • On a small rimmed baking sheet, toss the red onion, olive oil, salt and pepper together. Roast in the oven for 25 to 30 minutes until the onion is very soft, stirring occasionally. Remove from oven and let cool. Transfer to a food processor and buzz until finely chopped. Add the mayo and pulse until smooth and combined.
  • Sandwich.
  • Preheat a seasoned grill pan or griddle over medium heat. Assemble this sandwich just as you would a traditional grilled cheese sandwich: spread 1 slice of bread with some Red Onion Mayo, then top with 2 slices Cheddar, the bacon, the apple slices, then 2 more slices of Cheddar, finishing with another mayo-slathered slice of bread. Butter the outsides of the bread and transfer to the hot grill. Grill about 3 minutes per side, since this sandwich is so thick. Remove to a cutting board and cut the sandwich in half on the diagonal to serve.

8 teaspoons mayonnaise
4 slices sourdough sandwich bread
2 slices deli sliced American cheese (2 oz)
4 slices cooked bacon
1/2 cup shredded sharp cheddar cheese (2 oz)
1/2 cup shredded Gruyère cheese (2 oz)

Steps:

  • Spread 2 teaspoons mayonnaise on one side of each slice of bread.
  • On the uncoated side of 2 bread slices, place 1 slice American cheese and 2 slices bacon. Top each with 1/4 cup cheddar cheese, 1/4 cup Gruyère cheese and 1 slice remaining bread, mayonnaise side out.
  • Heat 12-inch nonstick skillet over medium heat. Add sandwiches; cook uncovered 3 to 4 minutes or until bottom sides are golden brown. Carefully turn; cook 2 to 4 minutes longer or until bottom sides are golden brown and cheeses are melted.
