Ingredients:

  • 2 large parsnips (about 1/2 pound), peeled and cut into 1/2-inch-thick slices
  • 1 small fennel bulb (sometimes called anise), stalks trimmed flush with bulb and bulb chopped (about 1 cup)
  • 1/2 tablespoon unsalted butter

Steps:

  • In a saucepan cover parsnips and fennel with salted water and boil, covered, 15 to 20 minutes, or until very tender. Drain vegetables well in a large sieve. In a food processor purée hot vegetables with butter and salt and pepper to taste.

  • In the bottom of a heavy pot over medium heat, add in the oil and garlic and cook until the garlic is lightly browned. Add in the sliced leeks and fennel and cook until they begin to turn translucent. About five minutes.
  • Add in the parsnips and cook until they begin to caramelize on the side. Pour in the vegetable stock and bring to a boil. Reduce to a simmer and cook until the parsnips are soft.
  • Meanwhile in a small sauté pan, heat the bacon fat over medium heat. Add in the peeled and diced apples and cook until they are caramelized on the outside but still have a bit of crunchy al dente texture. Stir in the pinch of nutmeg and set aside.
  • Blend the soup with the heavy cream and season with salt and pepper. If the soup is too thin, continue to let it simmer until it reaches the desired thickness. If it is too thick, add a bit of extra vegetable stock or water. Serve with a bowlful of the soup topped with apples.

  • 1. Place the parsnips, cream, and water into the sauce pot. You may need to add additional water to cover the parsnips. Bring the liquid to a simmer and cook the parsnips until they have no resistance when tested with a paring knife.
  • 2. Transfer the parsnips and thickened liquid to a blender. Begin blending on low speed and gradually increase the speed. With the blender running, add the butter and season conservatively with salt. Process until the purée is extremely smooth. Stop the blender and check the seasoning, adjusting with salt if necessary. Check the consistency and adjust with additional water if necessary to your preference.

If necessary, place half the mixture in the food processor, pulse to puree, and continue adding the fennel mixture until all the mixture fits in the processor. Continue processing until pureed. Add the mascarpone cheese, salt, and pepper. Mix to combine. Add the mint and process until just combined. Add more salt and pepper, to taste.
  • Transfer the mixture to a serving dish. If the mixture is a little thin stir a few times and let rest for 5 minutes, then serve.
