SHRIMP ALFREDO PASTA
A wonderful shrimp pasta dish! I came up with this on my own one night. You can change the amount of ingredients to your taste.

Steps:
- In a saucepan over low-temperature, heat the Alfredo sauce. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 minutes or until al dente; drain.
- Boil shrimp in a large pot of water until they turn orange. Then place in bowl with melted butter. Let shrimp marinate for 15 to 30 minutes; remove. In a large skillet over medium heat, saute the green pepper and onion in a small amount of oil.
- Mix together the cooked pasta, shrimp, pepper-onion mixture and Alfredo sauce. Season with garlic powder and cumin.

Steps:
- Prepare pasta according to package directions.
- Meanwhile, melt butter in a large skillet over medium heat. Add shrimp and cook until pink, about 1 minute per side. Remove from skillet and set aside.
- Add green onions and jalapeno to skillet and saute 1 minute. Add wine and bring to a boil. Mix in orange juice and cream. Boil until reduced to thin sauce, stirring occasionally, about 10 minutes. Add salt and pepper, if desired.
- Add shrimp to sauce and cook until heated through. Add pasta and toss well. Sprinkle with minced fresh parsley and serve.

Steps:
- In a small saucepan stir together marmalade, peanut butter, water, soy sauce, cornstarch and crushed red pepper.
- Bring to a boil, reduce heat and cook for 2 minutes; remove from heat.
- On 6 skewers, alternately thread shrimp and bell peppers.
- Grill kabobs on the rack of an uncovered grill directly over medium heat for 5-7 minutes or until shrimp turn pink, turning once.
- While grilling kabobs, cook pasta according to package directions; drain.
- Return pasta to pan, cover and seat aside.
- To serve, add shrimp and peppers to cooked pasta.
- Add the sauce; toss gently to coat.

- In a small dry skillet over medium heat, toast cumin seeds and peppercorns until aromatic, 1-2 minutes. Remove from skillet. Crush seeds using a spice grinder or mortar and pestle., In a small bowl, combine the orange zest, oregano, salt and crushed spices. Sprinkle 1 tablespoon spice mixture over shrimp., In a large skillet, cook shrimp in oil over medium-high heat 1 minute; turn shrimp. Add orange juice, rum, garlic and 1 tablespoon spice mixture. Cook and stir until shrimp turn pink, 1-2 minutes longer; remove and keep warm. , Bring liquid in skillet to a boil. Cook until reduced to 2/3 cup, about 35 minutes. Meanwhile, for salsa, combine orange, onion, avocado, 1/4 cup cilantro, jalapeno and remaining spice mixture in a small bowl. , Stir shrimp and remaining cilantro into sauce; heat through. PASTA WITH SHRIMP AND JALAPEñO-ORANGE SAUCE RECIPE

- Put a large pot of water on to boil for the pasta. In a heavy large skillet over medium-high heat, melt butter. Add shrimp and cook until just pink, about 1 minute per side. Transfer shrimp to plate. Add shallots and jalapeño to skillet and sauté 1 minute. Add wine and bring to a boil. Mix in orange juice and cream. Boil until reduced to thin sauce, stirring occasionally, about 15 minutes. Season to taste with salt and pepper. (Can be prepared 4 hours ahead. Cover and refrigerate shrimp and sauce separately.) When water comes to a boil, add pasta and cook until al dente, stirring occasionally to prevent sticking. Drain. Bring sauce to simmer. Add shrimp and cook until just heated through. Add pasta and toss well. Divide pasta among 4 plates. Sprinkle with fresh parsley and serve.
