PROSCIUTTO-WRAPPED CHICKEN INVOLTINI WITH PEAS AND RICOTTA

Prosciutto-Wrapped Chicken Involtini with Peas and Ricotta image

Provided by Valerie Bertinelli

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 11

1/2 cup frozen peas, thawed
1/4 cup ricotta
1/4 cup freshly grated Parmesan
1 teaspoon lemon zest
1/4 teaspoon chile flakes
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
4 chicken cutlets
Kosher salt and freshly ground black pepper
12 thin slices prosciutto
1 tablespoon olive oil

Steps:

  • Preheat the oven to 375 degrees F.
  • Add the peas to a bowl and begin to mash them with the back of a fork until they are mostly broken down. Add the ricotta and use the fork to blend and mash them together. Add the Parmesan, lemon zest, chile flakes, garlic powder and onion powder and stir to combine. Set the mixture aside while you prepare the chicken.
  • Place the chicken cutlets between 2 pieces of parchment paper and pound them with a meat mallet or rolling pin until they are 1/4-inch thick. Remove the top layer of parchment paper and sprinkle the chicken with 1/4 teaspoon salt and 1/4 teaspoon pepper. Divide the pea and ricotta mixture evenly among the chicken cutlets, smoothing it out to cover the surface area.
  • Working one at a time, starting with the large end of the cutlet, roll the chicken up in a continuous spiral. Place the chicken on a plate seam-side down and continue the process with the remaining chicken.
  • Shingle 3 slices of prosciutto so they slightly overlap. Place one piece of chicken about a third of the way up from the bottom of the prosciutto. Similarly to wrapping a burrito, bring the base of the prosciutto up over the chicken, roll the chicken once, then fold in the ends of the prosciutto, so that the ends of the chicken are covered, and continue to roll until the chicken is completely wrapped in the prosciutto. Set aside and continue the process with the remaining chicken.
  • Heat a large ovenproof skillet over medium-high heat. Add the oil and swirl to coat the skillet. Add the prosciutto-wrapped chicken to the skillet and sear it on all sides. Transfer the skillet to the oven and cook until the chicken is cooked through and the prosciutto is golden and crisp, 15 to 20 minutes.
  • Remove the chicken from the oven and let sit for 5 minutes before serving.

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 40m

Yield 2 servings

Number Of Ingredients 14

Kosher salt and freshly ground black pepper
8 ounces casarecce pasta
2 boneless, skinless chicken breasts (if breasts are thick, lightly pound to 1-inch thickness)
2 tablespoons olive oil
1/4 cup white wine, such as Pinot Grigio
1 tablespoon salted butter
3 stalks broccolini, cut into 2-inch pieces
10 asparagus spears, cut into 2-inch pieces
2 cloves garlic, minced
1 teaspoon dried oregano
3/4 cup heavy cream
1/3 cup grated Parmesan, plus a piece of Parmesan for shaving
Zest and juice of 1/2 lemon
6 fresh basil leaves

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta to the boiling water and cook according to the package directions.
  • Sprinkle the chicken on one side with salt and pepper. Heat the olive oil over medium-high heat in a large skillet. When the oil is hot, add the chicken, seasoned-side down, then sprinkle the other side with salt and pepper. Cook until golden brown and cooked through, 5 to 6 minutes per side. Remove from the skillet and set aside.
  • Drain the pasta, reserving 1 cup of the pasta water. Set aside.
  • With the empty chicken skillet over a medium heat, add the white wine, scraping the bottom of the skillet with a wooden spoon, until almost fully reduced, about 30 seconds. Add the butter and melt. Add the broccolini and saute until bright green, about 1 minute. Add the asparagus and saute for 1 minute more. Add the garlic and oregano and stir to combine. Add the cream and bring to a simmer, stirring. Stir in the grated Parmesan, lemon zest and juice. Season with salt and pepper. Add the reserved pasta to the sauce and toss well to coat the pasta, adding the pasta water 1/4 cup at a time, if the sauce is too thick.
  • Slice the chicken breasts thinly and place on top of the pasta, or serve them whole if you prefer. Garnish with the basil leaves and Parmesan shavings.

CAVATELLI WITH ASPARAGUS, LEMON AND FRESH RICOTTA

Cavatelli with Asparagus, Lemon and Fresh Ricotta image

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 10

One 1-pound bunch asparagus, tough ends trimmed and reserved, spears sliced on a bias into 2-inch pieces
Kosher salt and freshly cracked black pepper
1 cup (8 ounces) fresh full-fat ricotta, drained (see Cook's Note)
2 tablespoons freshly grated Parmesan, plus more for serving
2 tablespoons lemon juice plus zest of 1/2 lemon (plus more zest for garnish)
1 pound fresh or frozen cavatelli
3 tablespoons olive oil
3 cloves garlic
Grated Pecorino-Romano, for garnish
Fresh basil, for garnish

Steps:

  • Place the woody stems from the asparagus in a food processor. Process until smooth. Transfer the pureed asparagus to a fine-mesh strainer set over a small bowl. Let the juices drain, 5 to 10 minutes, pressing down lightly on the puree with a wooden spoon occasionally. Reserve the juice and discard the pulp.
  • Bring a large pot of generously salted water to a boil.
  • Meanwhile, in a large bowl, whisk the ricotta, Parmesan and 1 tablespoon lemon juice with some salt and pepper. Add the lemon zest and set aside.
  • Once the water has boiled, add the cavatelli and cook according to the package instructions until al dente.
  • Meanwhile, add the olive oil to a large skillet over medium heat. Add the garlic and cook until lightly golden, about 2 minutes. Remove the garlic, then add the sliced asparagus and saute until tender, 3 to 5 minutes. Drain the cavatelli directly into the skillet with the asparagus. Add about half of the asparagus juice and allow to simmer for 1 minute. Add the remaining asparagus juice and the remaining tablespoon lemon juice and cook until the pasta is glossy, about 1 minute. Transfer to a bowl and garnish with Pecorino-Romano, lemon zest, dollops of the whipped ricotta, basil and black pepper.

PASTA WITH BROCCOLI, CRISPY PROSCIUTTO, AND TOASTED BREADCRUMBS

Pasta With Broccoli, Crispy Prosciutto, and Toasted Breadcrumbs image

Taken from chow. com and posted for ZWT. Originally from Aida Mollenkamp - "Even the staunchest broccoli-hater will be tempted by this pasta dish, in which the underappreciated veggie teams up with salty prosciutto and crunchy breadcrumbs. Keep these ingredients on hand for a quick and satisfying weeknight dinner." Pair this dish with a Pinot grigio with a nice body and a 'green' flavor.

Provided by alligirl

Categories     Pork

Time 45m

Yield 4 entrees, 4 serving(s)

Number Of Ingredients 8

1 lb broccoli floret, cut into bite-size pieces
1 lb dried short pasta (such as penne or rotini)
3 tablespoons olive oil
4 ounces thinly sliced prosciutto, small dice
2 medium garlic cloves, minced
2 medium shallots, minced
2/3 cup panko breadcrumbs
freshly grated parmigiano-reggiano cheese, for serving

Steps:

  • Bring a large pot of generously salted water to a boil over high heat.
  • Prepare an ice water bath by filling a bowl halfway with ice and water; set aside.
  • Once water boils, add broccoli and cook until just tender, about 4 minutes. Using a slotted spoon or strainer, remove broccoli and plunge in the ice water bath; return cooking water to a boil.
  • Remove broccoli from the ice water bath and place in a colander or strainer set over a bowl to drain.
  • Once cooking water returns to a boil, add pasta and cook according to the package directions.
  • Drain pasta, reserving 1/4 cup of the cooking water.
  • Meanwhile, heat 1 tablespoon of the olive oil in a large frying pan over medium-high heat.
  • Add prosciutto and cook until crisp and golden brown, about 5 minutes.
  • Use a slotted spoon to remove prosciutto to a plate; set aside (and do not wash the pan).
  • Return the pan to the stove over medium-high heat; add remaining olive oil. When oil shimmers, add garlic and shallots, cooking until golden brown, about 2 to 3 minutes.
  • Stir in panko and cook until toasted and golden brown, about 2 minutes; remove from heat.
  • Return pasta to the pot and place over medium-low heat. Add reserved pasta water, broccoli, and prosciutto.
  • Taste pasta and adjust seasoning, adding more salt if necessary; stir until ingredients are well mixed and broccoli is heated through.
  • Transfer pasta to a serving platter and sprinkle panko mixture over top. Pass freshly grated Parmigiano-Reggiano on the side.

CREAMY ONE-PAN CHICKEN & BROCCOLI PASTA

Creamy one-pan chicken & broccoli pasta image

Who doesn't love a creamy chicken pasta? If you don't have broccoli, there are so many alternatives - green beans, halved brussels sprouts or leafy greens

Provided by Good Food team

Categories     Dinner

Time 25m

Number Of Ingredients 11

1 tbsp olive oil, for frying
200g cooked chicken, torn into pieces
2 garlic cloves, thinly sliced
1 chicken stock cube
160g dried short pasta
100g frozen peas
200g long-stem broccoli, cut into 3-4 pieces
150g crème fraîche
1 lemon, juiced
30g parmesan, grated, plus extra to serve
small bunch fresh mint, leaves picked

Steps:

  • Drizzle a little oil into a large, high-sided frying pan set over a medium heat. When the pan is hot, add the chicken and garlic, and fry for 5 mins, stirring often so it doesn't burn. Pour in 900ml boiling water, then add the stock cube and pasta along with some seasoning. Bring to the boil, then cover and simmer for 8 mins.
  • Stir in the peas and broccoli for the last 4 mins of cooking time, and replace the lid. You might need to increase the heat slightly to get the temperature back up to a simmer. Add a splash more water if the pasta is looking dry. After 4 mins, remove the lid and reduce the heat to low, then stir in the crème fraîche. Taste for seasoning. Remove the pan from the heat and stir through the lemon juice, parmesan and mint leaves. Finish with some extra parmesan, if you like.

PASTA WITH CHICKEN, ASPARAGUS & PROSCIUTTO (OR BACON)

Pasta With Chicken, Asparagus & Prosciutto (Or Bacon) image

Make and share this Pasta With Chicken, Asparagus & Prosciutto (Or Bacon) recipe from Food.com.

Provided by English_Rose

Categories     Chicken

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 9

1 lb asparagus
2 lemons
3 1/2 ounces prosciutto or 3 1/2 ounces bacon
1 lb pasta
2 ounces butter
1 cup heavy cream
2 cooked chicken breasts, torn into strips (about 9oz total weight)
1 pinch fresh nutmeg
2 ounces parmesan cheese, freshly grated, plus extra for serving

Steps:

  • Trim the asparagus and cut into short lengths on the diagonal - keep the tips separate. (If you like, peel the stems to give a more vibrant colour when cooked.) Cook the stems in salted boiling water for about 4 minutes, then add the tips and cook for 1 minute more. Drain and refresh under cold running water.
  • Peel the lemons with a serrated knife, remove all the white pith, then cut into segments by slicing each side of the pieces of membrane. Now cut the segments into small pieces (flick out any pips) and put them in a bowl with any juice. Broil the prosciutto for 3-4 minutes until crisp - keep an eye on it because it can burn easily.
  • Meanwhile cook the pasta in plenty of well-salted boiling water until al dente. While it's cooking, put the butter and half the cream in a large pan and let them bubble together over a low heat for 2-3 minutes until thickened slightly. Tip in the lemon segments and juice, the chicken, asparagus and a few pinches of salt. Turn off the heat.
  • Drain the pasta and add it to the contents of the pan along with the rest of the cream. Toss well, adding black pepper and nutmeg to taste, and the grated parmesan. Toss again, top with the prosciutto and serve immediately.

PROSCIUTTO CRISPS

Prosciutto Crisps image

This recipe is sponsored by Target. Salty, porky, crispy prosciutto. What's not to love about that? Very often for cocktail hour, I do a prosciutto and Parmesan plate with Aperol Spritzes. To add a little twist, I'll serve some prosciutto as is, and some crisped in the oven. Make extra crisps and have them with eggs in the morning, or crumbled on a salad or on a simple plate of buttered pasta tossed with Parmesan.

Provided by Katie Lee Biegel

Categories     appetizer

Time 15m

Yield 4 servings

Number Of Ingredients 1

2 ounces (55 grams) thinly sliced prosciutto, such as Good & Gather™️ Prosciutto

Steps:

  • Preheat the oven to 400 degrees F (205 degrees C). Line a baking sheet with parchment paper.
  • Arrange the prosciutto on the prepared baking sheet so that the slices are not touching.
  • Bake for 7 to 10 minutes, until very crisp. Let cool completely on the baking sheet. Serve immediately or store in an airtight container.

PESTO ONION PROSCIUTTO PASTA

Pesto Onion Prosciutto Pasta image

This goes together quickly, and it very tasty. It is a very flexible dish, it almost never turns out the same way twice in a row when I make it. The leftovers are fantastic. I use store bought pesto in the winter and from scratch during basil season. While the recipe calls for bacon, it is more for flavor than nutrition. You can leave it out and have a complete meal. The measurement on the cannellini beans is approximate, use a full can that is close to this size. If I have leftover chicken from another meal, it goes well in here. OAMC adaptation included.

Provided by gourmetmomma

Categories     One Dish Meal

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 15

2 cups uncooked pasta (macaroni or penne)
2 tablespoons olive oil
1 onion, sliced
1 bell pepper, sliced
2 garlic cloves, sliced
1 cup mushroom, sliced
2 ounces prosciutto (optional) or 4 slices bacon, chopped (optional)
1/4 cup white wine (optional)
18 ounces canned cannellini beans, rinsed and drained
1/4 cup grated parmesan cheese
1 cup pesto sauce
pepper (optional)
1/2 cup torn basil leaves (optional)
1/2 cup chopped fresh tomato (optional)
balsamic vinegar (optional)

Steps:

  • Start the water boiling for the pasta.
  • Put the olive oil in a big deep skillet and turn it on high. If you haven't chopped the veggies yet, chop them and dump them in the skillet as you go.
  • Start sauteing the onions, bell peppers, garlic, and mushrooms over medium high heat. You want them to develop some golden color, not just get mushy cooked. I do this while I wait for the water to boil.
  • When the water comes to a boil, add the pasta. Then add the proscuitto or bacon to the skillet with the vegetables. Stir, and then turn the heat down to medium low.
  • If you are not using wine, you will need to reserve 1/4 cup of the cooking water from the pasta right before the pasta is cooked.
  • When the pasta is cooked, drain. Return it to the cooking pot and cover. This will keep the pasta warm.
  • It's time to deglaze the pan with the vegetables. Use either the wine or the reserved pasta water. Stir and scrape to get all the good stuff off the bottom of the pot. You may need to turn the heat back up, you want the liquid to come to a boil and reduce slightly.
  • Combine the cooked vegetables and the pasta in the larger of your two cooking pots (or a big serving bowl). Add the cannellini beans, parmesean cheese and pesto. Stir. Taste. If you think you need to add salt, add it.
  • Move to a big serving bowl or individual plates. Garnish with basil, tomato, pepper, and balsamic vinegar. (This works great with a thick balsamic, it doesn't work well with the cheaper thin stuff).
  • Leftovers are fantastic heated or cold like a pasta salad.
  • OAMC adaptation: Cook the vegetable part as directed. Add the cannellini beans, pesto, and parmesean cheese. Then freeze. When you thaw you will need to cook/drain the pasta and then add in the HEATED vegetable pesto combo. I will make up a double batch of the veggies and freeze at least half.

LEMON ROASTED SPRING CHICKEN WITH ASPARAGUS

Lemon roasted spring chicken with asparagus image

Pop all the ingredients for this lemon roasted chicken into a roasting tin. With asparagus and peas, the colours and flavours sing spring

Provided by Shivi Ramoutar

Categories     Dinner

Time 1h10m

Number Of Ingredients 11

8 chicken pieces (thighs or drumsticks), bone-in, skin-on
2 small onions, cut into quarters
6 garlic cloves, unpeeled, bashed
1 lemon, sliced and pips removed
500g asparagus, woody ends trimmed
100g fresh or frozen peas
1 heaped tbsp dried oregano
2 tbsp olive oil
100ml chicken stock
25g butter
crusty bread, to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Arrange the chicken pieces, onion wedges, garlic, lemon slices, asparagus and peas in a roasting tin in a single layer, then sprinkle over the oregano, drizzle with the olive oil and pour over the stock. Give everything a good stir to mix well, then dot the butter over the chicken pieces and season well. Cover the whole tin with foil and bake for 30 mins.
  • Remove the foil and bake for 20-30 mins more until the chicken is cooked through and the juices run clear, and the vegetables are tender.
  • Heat the grill to high. Put the tin under the grill for a few minutes to crisp up the chicken skin, if needed, being careful not to let the asparagus catch. Serve straight from the tin, or on a platter, with crusty bread to mop up the juices.
