65 vanilla wafers cookies, finely crushed
1 stick butter, melted, plus more for pan
3 ripe bananas, peeled, thinly sliced on a diagonal
2 tablespoons fresh orange juice
1/2 cup peanut brittle, ground into crumbs
Chocolate Pudding, recipe follows
Peanut Butter Cream, recipe follows
2 cups heavy cream
1 teaspoons almond extract
1/4 cup confectioners' sugar
1/2 cup peanut brittle, broken into bite-size pieces
3/4 cup sugar
1/2 cup cocoa powder
1/3 cup all-purpose flour
2 eggs
4 egg yolks
2 cups milk, divided
4 ounces cream cheese, at room temperature
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
1/2 cup creamy peanut butter (do not use old-fashioned or freshly ground)
2/3 cup chilled heavy whipping cream

Steps:

  • Preheat the oven to 350 degrees F. Butter a deep 9 by 2-inch pie plate.
  • Drizzle the crushed vanilla wafers with the melted butter and stir until blended. Press on the bottom and up the sides of the pie plate. Pop in the oven and bake until lightly browned, 20 to 25 minutes. Cool on a wire rack for about 30 minutes.
  • Toss the banana slices with the orange juice, making sure all the slices get coated. (This helps keep the bananas from browning.) Place the slices on a paper towel-lined plate and pat any excess juices dry.
  • Arrange half the banana slices in a single layer over the cooled crust. Cover completely with the Chocolate Pudding, spreading it with an offset spatula or butter knife. Top with the rest of the bananas. Sprinkle the peanut brittle crumbs over the bananas. Place dollops of the Peanut Butter Cream on top, spreading it out evenly. Chill the pie in the refrigerator for at least 3 hours.
  • Whip the cream until stiff peaks are just about to form. Whip in the almond extract and sugar until stiff peaks form.
  • Take the pie out of the refrigerator. Place dollops of the whipped cream on top and spread it out evenly. Scatter pieces of peanut brittle on top and serve.
  • Whisk the sugar, cocoa powder and flour in a bowl until there are no lumps. Crack the eggs into the bowl, add the yolks and whisk into a paste. Slowly whisk in 1 cup milk until it is fully incorporated, and then whisk in the remaining 1 cup milk. Put the milk mixture into a saucepan and put over medium heat. Cook, whisking constantly, until it starts to look like pudding, 10 to 15 minutes. It will begin to bubble and it will hold soft peaks when you lift the whisk out. Take off the heat and cool to room temperature.
  • Beat the cream cheese and confectioners'sugar with an electric mixer until completely smooth. Add the vanilla and peanut butter, beating until fully incorporated. In a separate bowl, beat the heavy cream until stiff peaks form. Working in batches, taking care not to deflate the whipped cream, fold a large spoonful of whipped cream into the peanut butter mixture. Fold in the remaining cream in 2 additions.

1 cup all-purpose flour
1/2 cup granulated sugar
3/4 cup creamy peanut butter
2 tablespoons shortening
1 cup heavy whipping cream, whipped
1 (3.4 ounce) package banana cream pudding mix
1/2 cup milk
1 (14 ounce) can sweetened condensed milk
5 large bananas
2 cups heavy whipping cream, whipped
1/2 cup creamy peanut butter
1/2 cup powdered sugar
2 tablespoons milk
2 tablespoons peanut butter
2 tablespoons milk
1/2 cup powdered sugar

Steps:

  • Preheat oven to 375°F. Grease a 9-inch tart pan or pie plate with shortening and set aside.
  • In a large bowl, stir together the flour and sugar. Using a pastry blender and/or your hands, mix in the peanut butter and shortening until well combined and a ball of dough forms. Press the dough evenly into the bottom and up the sides of the prepared tart or pie pan. Prick the bottom of the crust several times with a fork. Bake for 10-12 minutes or until the crust is set and starts to turn a light brown. Let cool completely.
  • While the crust is cooling, prepare the filling. In a large bowl or electric mixer, beat 1 cup heavy cream until soft peaks form. In another bowl, whisk together the pudding mix, milk and sweetened condensed milk until smooth and thick. Gently fold the whipped cream into the pudding mixture.
  • Thinly slice each banana. Once the crust is cooled, place a thin layer of banana slices over the bottom of the crust. Spoon half of the filling over the bananas and spread evenly to the edges of the crust. Repeat with another layer of banana slices and the remaining filling. Refrigerate for at least 30 minutes.
  • Place another even layer of banana slices over the chilled filling.
  • To make the peanut butter whipped topping, beat 2 cups heavy whipping cream in a large bowl or electric mixer until soft peaks form. In another bowl, whisk together the peanut butter, powdered sugar and milk. Gently fold the whipped cream into the peanut butter mixture until well combined and smooth. Spread whipped topping evenly over the bananas on the pie.
  • To make the peanut butter drizzle, whisk the peanut butter, milk and powdered sugar in a small bowl until smooth and thin enough to drizzle. If it's too thick, whisk in a little more milk. Drizzle over the top of the pie. Top with remaining banana slices. Refrigerate or serve immediately.

150g icing sugar
150g smooth peanut butter
3 bananas, peeled and chopped
1 tsp vanilla extract
300ml whipping cream, plus extra for serving
300g gingernut, Granita or Butternut Snap biscuits
115g butter, melted
1 tbsp cocoa powder
Top with extra whipped cream, sliced bananas tossed in orange or lemon juice, crushed candied nuts or peanut brittle, and chocolate shavings or hot melted chocolate.

Steps:

  • 1. To make the crumb crust, break up the biscuits and whiz in a food processor until crumbled. Add melted butter, cocoa powder and a pinch of salt, and whiz until it clumps. 2. 26 Nutter Butter cookies
4 tbsp. butter, melted
2 bananas, sliced about ¼" thick
1 oz box vanilla pudding (prepared according to instructions on box-you will need cold milk)
2 cups heavy cream
2 tbsp. sugar
½ tsp. vanilla
¼ cup + 2 tbsp. peanut butter
2 tbsp. mascarpone or cream cheese
chocolate syrup for drizzling (optional)

Steps:

  • Add all but two of the cookies to a gallon-sized ziplock bag, seal well. Using a rolling pin, mash the cookies until they have turned into crumbs.
  • Add the crumbs to a medium sized bowl and drizzle in the melted butter. Toss to fully coat the crumbs. Pour into a 9" pie dish and begin spreading out the crumbs and pressing firmly along the bottom and up the sides of the pie pan to create your crust. Once firm, pop your crust in the freezer while you finish preparing the filling.
  • Now make your vanilla pudding, according to the instructions on the box. I whisk together the contents of the box plus 2 cups of cold milk. It thickens within five minutes and is ready to go.
  • Now to make your PB Frosting. In a large bowl, add the heavy cream, sugar and vanilla. Begin beating the mixture, either by hand or using an electric mixer. Once it begins to thicken, but isn't completely whipped cream yet, add the peanut butter and mascarpone. Continue beating the whipped cream until stiff peaks form, then stop. You don't want to overdo it.
  • Now that everything has been prepped, remove your crust from the freezer and place the banana slices in an even layer covering the entire crust. Add the vanilla pudding next, evenly spreading it.
  • Top with the peanut-butter whipped cream, using a rubber spatula to push the cream to the edges of the pie.
  • If you'd like, drizzle with chocolate syrup, and crush the remaining two Nutter Butters on top.
  • Store in the fridge until ready to serve. Enjoy!

1 cup cashews (raw and unsalted)
2 tbsp maple syrup or honey
2-3 tbsp any milk (I used almond milk)

1 cup smooth peanut butter (unsweetened and unsalted)
3 medium-large bananas (ripe (very yellow or with many brown spots))
3 tbsp any milk (I used almond milk)

Steps:

  • Make crust: In a food processor, add walnuts, cashews, maple syrup, milk, pure vanilla extract, cinnamon and salt.
  • Process until a ball of dough forms, stopping and scraping the sides of the bowl. Be careful not to over process the crust into a nut butter.
  • Transfer "the dough" to a 9" pie dish and flatten on the bottom and sides with your hands to make a pie shell. You can make a pretty rim using the fork.

1 ¼ cups finely crushed graham crackers (about 18 crackers)
1 cup whipping cream

1 cup creamy peanut butter*
⅓ cup honey
2 bananas, thinly sliced

Steps:

  • In a medium bowl, stir together the melted butter and 1/4 cup sugar. Add crushed crackers; toss to mix well. Press mixture evenly onto the bottom and sides of a lightly greased 9-inch pie plate. Bake at 375° about 5 minutes or until edges are light brown. Cool crust completely on a wire rack.
  • In a chilled large mixing bowl, beat whipping cream, 1 tablespoon sugar and vanilla with an electric mixer on medium speed until soft peaks form. Transfer 3/4 cup of the whipped cream to a small bowl and chill; set large bowl aside.

1 cup white sugar
¼ cup cornstarch

  • Preheat the oven to 350 degrees F (175 degrees C).

  • Once pudding has cooled, pour about half of the pudding into the pie shell. Sprinkle the crumbled wafers in an even layer over top. Arrange the banana slices over the wafers. Sprinkle the remaining peanut butter crumble mixture over the bananas. Pour remaining pudding over top. (Some of the peanut butter crumble and banana slices may float towards the surface; that's just fine. Smooth the surface as well as you can with a silicone spatula.) Place a piece of plastic wrap directly onto surface of the pudding filling to prevent a skin from forming. Refrigerate for 8 hours, or overnight.
  • When ready to serve, combine heavy cream, confectioners' sugar, and vanilla for topping in a chilled mixing bowl. Beat with an electric mixer fitted with a whisk attachment until medium-soft peaks form. Spoon the whipped cream on top of the pie.

I have made a few changes for our family such as I like Reeses peanut butter and I use Semi-Sweet Chocolate Chips if I don't have the bakers chocolate. I hope you all enjoy it as much as we do. Shortcut: You can substitute a prepared Nilla Pie Crust for the Nilla wafers and butter. Cooking time is actually refrigeration time.

  • For the Crust:Place the Oreos in a large ziplock bag and crush them into fine crumbs with a rolling pin. Stir in the melted butter until the crumbs are moistened- stir in the salt. Press the crumbs into the bottom and sides of a 9-inch pie dish. Bake at 350F for about 10 minutes or until set. For the pudding:Combine 2 cups of milk and the sugar in a medium-sized saucepan over medium heat. Stir together and heat until simmering. 1 baked and cooled 9 inch pie shell
3/4 cup granulated sugar, divided

Place the saucepan over high heat, and whisk constantly just until the mixture comes to a boil. Then immediately remove the pan from the heat and whisk in the vanilla extract and peanut butter until completely combined. Transfer the pudding to a container with an airtight lid, and refrigerate until it’s room temperature or chilled.
  • Then make the coconut whipped cream by scraping the hardened cream off the top of both cans, reserving the liquid for another use like a smoothie. Then with an electric mixer, whip the cream on high speed until it becomes fluffy, 2-3 minutes, scraping down the sides as necessary. Finally, add maple syrup to taste, a pinch of sea salt, and vanilla extract. Whip the cream again on high speed for 1-2 minutes, then transfer it to a container to be refrigerated.
  • When the pudding has cooled to room temperature, remove it from the fridge. Measure out 3/4 cup of the coconut whipped cream, and fold it into the pudding until it’s completely combined.
