BEEF AND GREEN PEPPER STIR-FRY

Steps:
- Combine 1 1/2 tablespoons soy sauce, wine, sesame oil, 2 teaspoons cornstarch, ginger and garlic in medium bowl. Add beef and stir to coat. Let stand 30 minutes. Combine broth, remaining 1 teaspoon soy sauce and remaining 1 teaspoon cornstarch in small bowl.
- Heat 3 tablespoons vegetable oil in wok or heavy large skillet over high heat. Add water chestnuts and bell pepper and stir-fry 2 minutes. Remove from wok. Heat remaining 3 tablespoons oil in wok. Add beef with marinade and stir-fry until just cooked through, about 4 minutes. Return water chestnuts and peppers to wok and mix well. Stir broth mixture. Add to wok and cook until sauce boils and thickens, about 30 seconds. Serve with freshly cooked rice.
PEPPER STEAK PACKET
This is the best way to make any steak stand out! If you have extra vegetables, wrap them up and cook with the steak.

- Preheat an outdoor grill for medium high heat and lightly oil grate.
- Place the steak strips on a piece of foil large enough to hold the meat and some vegetables. Layer with the red, green and yellow peppers, chopped onion, cherry tomatoes and chopped zucchini. Dot with butter, and drizzle with steak sauce. Fold edges of foil to seal the packet well.
- Grill over medium high heat for 45 to 60 minutes. About halfway through cooking, flip the packet, being careful not to puncture it. (Note: Be careful when opening foil packet as the steam that escapes will be very hot.)

- Sprinkle meat with paprika. In a large skillet, melt butter over medium-high heat. Brown beef. Add broth and garlic. Simmer, covered, for 30 minutes. Add green peppers and onion. Steps:
- Marinate sliced round steak in soy sauce marinade for 1 hour.
- Clean 4 peppers and 2 onions and slice lengthwise.
- Fry peppers, onions and 1/2 tsp salt in 2 TBS safflower oil in a large skillet until tender.
- Remove vegetables.
- Add 4 TBS safflower oil and 1 TBS water to skillet and fry meat quickly.
- Add vegetables and stir with spatula or wooden spoon, getting the good brown stuff off bottom of skillet.
- Serve over cooked rice, on a roll or in a sub sandwich.
- You can double the marinade ingredients if you want more sauce/goop -.
- The wine helps the marinade absorb so well into the meat, yet you can't taste it at all.

GREEN PEPPER STEAK
A good family dish made with economical beef, either chuck or round, sliced into thin strips and then cooked until tender. You can prepare the beef ahead and refrigerate just before adding the vegetables and finish cooking later. If you want to halve this recipe, just use half of the ingredients, but you may need to add some water. To make 8 servings, you would double the ingredients but reduce the water to 1-1/4 cups and add another 1/2 T. cornstarch.

- Slice beef across grain into thin strips, about 1/8-inch-thick.
- Combine soy sauce, garlic, and ginger; add beef. Toss and set aside while preparing vegetables.
- Heat oil in large skillet or wok. Add beef and stir-fry over high heat until browned. Check beef for tenderness. If it is not tender, reduce heat to low heat and simmer, covered, for 30-40 minutes until tender.
