1 tablespoon freshly squeezed lemon juice

Steps:

  • Shake all ingredients in a cocktail shaker to thoroughly incorporate the egg whites. Strain the mixture into 2 cocktail glasses. When you pour the drink into glasses, a white foam should form on the top.

large handful of ice
few drops of Angostura bitters
lime slices, to serve (optional)

Steps:

  • Pour the Pisco, lime juice and sugar syrup into a cocktail shaker or blender with the egg white and add a large handful of ice. Shake vigorously for 30 secs or blend for 10 secs, then strain into 2 glasses. Add a few drops of Angostura bitters to the top of each cocktail, garnish with a lime slice and serve.

2 ounces pisco (Peruvian or Chilean brandy)
3/4 ounce fresh lemon juice (1 1/2 tablespoons)
1 large egg white
Bitters, for garnish

Steps:

  • For the simple syrup: Combine the sugar and 1 cup water in a small saucepot over medium heat. Bring to a simmer and cook, whisking occasionally, until the sugar dissolves, about 5 minutes. Remove from the heat and cool to room temperature. Refrigerate in an airtight container for up to 2 weeks.
  • For the pisco sour: Fill a cocktail shaker with the ice, and then pour in the pisco, 3/4 ounce simple syrup, the lemon juice and egg white. Shake very well, and then strain into a tall champagne flute. Garnish with 3 drops of bitters.

1 ounce freshly squeezed lime juice
2 ounces pisco
1 3/4 teaspoons simple syrup, recipe follows
Dash bitters
Very finely grated lime zest or lime wedge, for garnish
1 cup sugar
1 cup water

Steps:

  • Dissolve meringue powder in lime juice. Fill a cocktail shaker with ice. Add meringue mixture, pisco, simple syrup and bitters. Cover and shake vigorously until frothy, mixed and chilled, about 45 seconds. Strain into a glass and garnish with grated zest or a wedge of lime.
  • Put the sugar and water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. (Alternatively, heat in the microwave.) Store in a sealed container in the refrigerator for up to 1 month.
  • Yield: about 1 1/2 cups

Pisco is a clear brandy that is popular in both Peru and Chile. The white muscat grapes, from which pisco is distilled, were first grown in Peru by the Spaniards in the 16th century (at that time Peru & Chile were both part of Spain's American empire.) When they became independent countries, both claimed the liquor as their own. Therefore the national drink of both Peru and Chile, is the rich "Pisco Sour." However there is a difference in sweetness and the fruit used between the two countries' piscos. I have posted both recipes so be sure to try the Chilean Pisco Sour as well.

3 cups (1-inch) pineapple chunks (from 1/2 pineapple)
1 1/2 cups pisco (preferably Peruvian; 12 ounces)
1/2 cup fresh lime juice (preferably Key lime)
4 large egg whites
1/3 cup superfine granulated sugar
8 drops Angostura bitters

Steps:

  • Purée pineapple in a blender until very smooth. Force through a fine-mesh sieve into a bowl, pressing hard on and then discarding solids. (You should have about 1 3/4 cups juice.)
  • Return pineapple juice to blender and add remaining ingredients, except bitters, then pulse until smooth and foamy.
  • Pour over ice in glasses. Add a drop of bitters to center of each drink.

At the banquet that terminated the convention, I was introduced to the Peruvian National Drink - the "Pisco Sour." This drink was so delicious, I had to have the recipe and was given the original recipe by my friend, Waldo Fernandez who had obtained it from the vineyard at Tabernero.

100g granulated sugar
a thin slice root ginger
juice 3 limes
200ml Pisco
1 egg white
Angostura bitters , to finish

Steps:

  • Put the mango pieces, granulated sugar and root ginger into a medium-sized saucepan and add 100ml water. Stir and bring to a simmer for 7-8 mins or until the mango is starting to soften. Take off the heat and allow to cool for 10-15 mins.
  • Pour the cooled mango syrup through a sieve into a cocktail shaker. Add the lime juice, Pisco and egg white. Fill to the top with ice, shake well, then strain into 4 tumblers. Add a couple of shakes of Angostura bitters to each one and serve.
