Steps:

  • Preheat oven to 375 degrees F.
  • Combine paprika, onion and garlic powder, salt, oregano, thyme, black pepper, cayenne pepper and brown sugar in a small bowl.
  • Cut salmon into 4 portions and brush with oil. Distribute the rub over the salmon generously coating all surfaces. Place salmon on a shallow baking pan with sides.
  • Bake for 15 to 20 minutes, until fish flakes easily.
  • Coarsely chop grapefruit into bite size pieces. Combine all salsa ingredients and serve with salmon. Grapefruit salsa can be made ahead and refrigerated until ready to serve.

2 ruby red grapefruit
1 1/2 tablespoons honey
Kosher salt and finely ground black pepper
1 large shallot, finely chopped
2 tablespoons extra-virgin olive oil
3 cups fresh flat-leaf parsley leaves
Four 6-ounce skinless salmon fillets

Steps:

  • Juice 1 grapefruit into a bowl. Cut the peel and pith from the other grapefruit. Remove the flesh from the membranes with a sharp knife, adding any juice to the juice in the bowl. Reserve the grapefruit segments.
  • Boil the reserved juice, honey and 1/4 teaspoon each salt and pepper in a small saucepan until reduced by half and slightly syrupy, 4 to 6 minutes.
  • Toss the grapefruit segments with the shallots, oil, parsley, 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Bring a large, straight-sided skillet with 4 cups of well-salted water to a simmer; the water should cover the salmon. Add the salmon to the skillet and remove from the heat. Let the salmon cook in the hot water until just cooked through, 5 to 7 minutes.
  • Transfer the salmon to paper towels and pat dry. Place on serving plates. Drizzle the salmon with the sauce and top with the grapefruit salad.

Four 4- to 6-ounce fillets salmon
Sea salt and white pepper
2 lemons, 1 halved and 1 cut into wedges

  • Drizzle the olive oil over the salmon fillets and season with some sea salt and white pepper. Set aside.

1/4 teaspoon salt, plus more for seasoning
2 ruby red grapefruits
2 teaspoons olive oil

2 teaspoons lemon juice

Steps:

  • Preheat the oven to 350 degrees F.
  • Season the salmon with 1/4 teaspoon salt, place in a baking dish and roast until cooked through, about 18 minutes.
  • While the salmon is cooking prepare the sauce. Cut 1 of the grapefruits into sections by cutting off the top and bottom of the fruit, then standing it on 1 end, cut down the skin to remove the pith and peel. Then, with a paring knife, remove each segment of fruit from its casing and cut the segments in half. Set the segment pieces aside. Juice the other grapefruit and set the juice aside.
  • In a medium skillet, heat the oil over a medium heat. Add the shallot and saute until softened, about 2 minutes. Add the ginger, grapefruit juice, honey, and cayenne pepper and bring to simmer. Cook until sauce is reduced by about half about, 10 minutes. Add lemon juice and season with salt, to taste. Right before serving, toss the grapefruit pieces and basil into the sauce. Put the salmon onto a serving dish. Spoon sauce over the salmon and serve.

3 Ruby Red grapefruits
3 to 4 tablespoons light brown sugar
1/4 to 1/2 teaspoon red pepper flakes
4 skinless salmon fillets, (about 6 ounces each)

Steps:

  • Remove a thin slice from the top and bottom of 2 grapefruits, and discard. Set one of the flat sides on the work surface. From top to bottom, following the curve of the fruit, cut away peel and white pith. Holding fruit over bowl, cut along both sides of each segment (close to the membrane) to release. Reserve segments. Squeeze juice from membrane into a measuring cup. Juice the third grapefruit to total 1 1/2 cups juice.
  • In a medium non-aluminum saucepan, combine juice, brown sugar, and red pepper flakes. Bring to a boil and cook unti syrupy, about 15 minutes (you should have about 1/4 cup). Remove half of the glaze to bowl and let cool to room temperature.
  • Add 1 cup of grapefruit segments to the pot (reserve remainder for serving); bring to a boil. Cook, stirring occasionally, until segments have broken down and sauce has thickened, about 12 minutes (you should have about 1/4 cup of relish).
  • Heat broiler with the rack set 4 inches from the top. Line a rimmed baking sheet with aluminum foil. Place salmon fillets on prepared sheet and season with salt and pepper. Brush salmon with reserved glaze and broil, rotating once during cooking, until opaque throughout, 6 to 7 minutes. Serve salmon with relish and reserved grapefruit segments.

Create a poaching liquor of fennel, bay and parsley for your fish, then serve with an Italian 'green sauce'

1 tsp peppercorn
200ml white wine vinegar
1 fennel bulb , thinly sliced
2 bay leaves
few parsley stalks (from the bunch used for the salsa verde)
1kg/2lb 4oz piece British salmon fillet , skin on
few lemon slices
3 or 4 garlic clove
5 anchovy fillets, rinsed if packed in salt
zest and juice 2 unwaxed lemons
large bunch flat-leaf parsley , leaves and stems
large bunch basil , leaves and stems
4 tbsp caper drained and rinsed
6 tbsp rapeseed or extra-virgin olive oil
steamed Jersey Royal potatoes , buttered, and asparagus, to serve

Steps:

  • First make the poaching liquid for the fish. Put the peppercorns, 2 tsp salt, vinegar, fennel, bay leaves and parsley stalks in a saucepan with 2.5 litres of water, and bring to the boil. Boil for 10 mins so all the flavours infuse into the liquid.
  • Make sure that you choose a roasting tin big enough to hold the salmon fillet. Strain the liquid into the empty tin, bring to the boil on the hob, then add the fish, skin-side down, making sure it is covered in liquid. Scatter around the lemon slices, and simmer gently for 1-2 mins until the fish changes colour completely. Cover the surface with a large piece of foil, turn off the heat and leave to cool completely. The fish will cook as the liquid cools.
  • To make the salsa verde, put all the ingredients into the bowl of a food processor, then blitz to make a bright, slightly chunky sauce. Season to taste.
  • Carefully remove the salmon to a serving platter and peel away the skin if you like. Serve with the salsa verde, new potatoes and asparagus.

1 pink grapefruit
1batch hollandaise sauce (see 'Goes well with' below)
8large leaves fresh basil , finely shredded
2 bay leaves
3sprigs fresh thyme
½ small onion , sliced
3 tbsp wine vinegar
4 skinned salmon fillets (about 120g each)

Steps:

  • Top and tail the grapefruit, then slice off the peel and pith. Cut through the membranes to release fine segments. Catch these in a bowl, along with any juice. Stir the segments into the hollandaise along with a few tbsp of juice and the basil. Set aside.
  • Boil 1 litre water in a wide shallow pan with the herbs, onion, vinegar and seasoning for 5 mins. Put in the salmon, pour over extra water to cover and poach gently until just firm, about 7 mins. Remove and drain, then place on plates. Spoon over the sauce and serve with a green salad and potatoes.

8 salmon fillets (3 ounces each), skinned, preferably organic or wild

Steps:

  • Fill a small saucepan with water and bring to a boil over high heat; season with salt. Place a large skillet over medium heat and ladle in enough boiling water just to cover the bottom of skillet. Season salmon with salt and pepper and add to water. Cook at a bare simmer until fish is just warm to the touch, 3 to 5 minutes, depending on preferred degree of doneness. Serve immediately.

2 teaspoons olive oil
2 red grapefruits, rind and pitch removed and segments cut into 1/2 inch pieces (about 1 cup)
1/2 small shallot, minced (about 1 tablespoon)
2 tablespoons fresh basil leaves, chopped
2 teaspoons lemon juice
2 teaspoons extra virgin olive oil

Steps:

  • Preheat oven to 500* degrees.
  • Adjust oven rack to lowest position, place rimmed baking sheet on rack.
  • Place grapefruit segments in fine-mesh strainer set over medium bowl and drain for 15 minutes.
  • Meanwhile, make several shallow slashes about an inch apart along skin side of each salmon fillet, being careful not to cut into flesh.
  • Pat salmon dry with paper towels. Rub fillets evenly with oil and season liberally with salt and pepper.
  • Reduce oven temperate to 275* degrees and remove baking sheet.
  • Carefully place salmon skin-side down on baking sheet. Roast until centers of thickest part of fillets are still translucent when cut into with paring knife or instant-read thermometer inserted in thickest part of fillets registers 125* degrees, 9 to 13 minutes.
  • Meanwhile, pour off all but 1 tablespoon grapefruit juice from bowl; whisk in grapefruit segments, shallot, basil, lemon juice, and oil.
  • Stir in grapefruit and season to taste with salt and pepper.
  • Remove salmon and top with relish; serve warm or cold.
