GLAZED DOUBLE-CUT PORK CHOPS

1/4 cup coarsely ground black pepper
2 tablespoons packed dark brown sugar
2 teaspoons smoked paprika
4 double-cut bone-in pork loin chops (about 1 pound each)
Vegetable oil, for the grill
4 tablespoons unsalted butter
2 cups diced onions
1 cup apple cider vinegar
3/4 cup packed dark brown sugar
1 1/2 cups ketchup
1 1/4 cups apple juice
1 cup maple syrup
1/2 cup bourbon
1/2 cup prunes
1/4 cup Worcestershire sauce
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
Serving suggestion: Smoky Corn on the Cob, recipe follows

Steps:

  • Prepare the pork: Mix 2 tablespoons salt, the black pepper, brown sugar and paprika in a bowl, then rub all over the chops. Wrap in plastic wrap and refrigerate 2 to 4 hours.
  • Meanwhile, make the sauce: Melt the butter in a saucepan over medium heat, then add the onions and cook until translucent, about 4 minutes. Stir in the vinegar and brown sugar until dissolved. Add the ketchup, apple juice, syrup, bourbon, prunes, Worcestershire sauce, cayenne, 1 tablespoon salt and 1 1/2 teaspoons black pepper and bring to a boil. Reduce to a simmer and cook until thickened, about 30 minutes. Puree with an immersion blender or in a regular blender.
  • Preheat a grill to medium. Brush the grates with vegetable oil, then place the chops directly over the flame and grill until marked and cooked halfway through, about 15 minutes. Turn the chops and place on a cooler area of the grill (such as the edges); cover and cook until a thermometer inserted into the thickest part registers 140 degrees F to 145 degrees F, 15 to 20 minutes. Uncover and brush the chops on all sides with the prepared sauce, then cover and cook until glazed, about 5 more minutes. Transfer to a cutting board and brush with more sauce. Tent with foil and let rest 10 minutes. Serve with more sauce and Smoky Corn on the Cob.
  • Peel back the husks from the corn and remove the silk. Butter the kernels and sprinkle with salt and smoked paprika. Fold the husks back over the corn and grill over low heat until cooked through, turning occasionally, 12 to 15 minutes.

5 bone-in pork chops, trimmed of fat
¼ teaspoon ground black pepper
1 large clove garlic, finely chopped
¼ cup dry white wine
1 (10.75 ounce) can condensed cream of mushroom soup
1 ¼ cups water
¼ cup water
2 tablespoons all-purpose flour
1 teaspoon low-sodium soy sauce (such as Bragg®)

Steps:

  • Heat oil in the pot of an electric pressure cooker (such as Instant Pot®) set on the Saute function.
  • Season pork chops with black pepper. Cook 2 to 3 chops in the hot oil, flipping halfway, until browned, 7 to 8 minutes. Move to a plate; sear the remaining chops and place on a plate.
  • Add garlic to the pot and cook until just fragrant, about 30 seconds. Deglaze the bottom of the pot with wine, scraping up any browned bits. Simmer until sauce is reduced by half, 5 to 7 minutes.
  • Stir mushroom soup and 1 1/4 cup water into the pot with the sauce. Simmer until smooth, about 3 minutes. Add the seared pork chops and turn to coat. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 18 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Remove chops from the pot.
  • Mix 1/4 cup water and flour together; add slurry to the pot. Select Saute function and cook until gravy is thickened, about 3 minutes. Add soy sauce and stir well. Return chops to the pot and turn to coat.

2 tablespoons flour

Steps:

  • Sprinkle pork chops with salt and black pepper, coat evenly with flour, of course shaking off excess.
  • Cook pork chops in hot oil over medium- high heat for 3 minutes on each side.
  • Add sliced onions and cook for 5 minutes, turning pork chops over.
  • Add beef broth, cover, reduce heat, and simmer for 15 minutes.
  • Remove pork chops only leaving onions in skillet.

4 boneless center cut pork chops
flour, seasoned with
salt and pepper
1/2 medium onion, diced
1 (10 3/4 ounce) can cream of chicken soup
1 (1 ounce) package pork gravy mix
1 (10 3/4 ounce) soup can water

Steps:

  • Dredge chops in seasoned flour.
  • Heat oil in a large skillet and brown chops on both sides. Remove to a warming plate.
  • Saute onions in remaining oil until translucent, scraping up bits remaining from the chops.
  • Stir in soup, gravy mix and water. Blend until smooth and bring to a boil.
  • Add chops to gravy, cover, reduce heat and simmer until chops are done, approximately 20-30 minutes depending on the thickness of the chops. This should give you just enough time to peel, cook and mash potatoes or cook rice. Delicious served with either.

1 small onion, sliced and separated into rings

  • Sprinkle pork chops with pepper and salt. In a large skillet over medium heat, cook chops with onion in oil for 2-3 minutes on each side or until lightly browned., Add broth. Bring to a boil. Reduce heat; cover and simmer for 10 minutes or until a thermometer reads 160°. , In a small bowl, whisk the gravy mix, garlic powder and water. Pour over pork. Bring to a boil. This is the way we cooked pork chops in my younger days down south. It is NOT a recipe for those beautiful thick chops that need tender care. It IS a recipe for quick, tasty meat with good old down home taste, and gnawing on the bone if you never make it to the gravy. Bone-in chops add a lot more flavor and they taste great with mashed potatoes. For those who grew up with brown gravy made with water, just substitute water for the milk/cream.

4 pork chops (I like bone-in rib chops, not too thick)
seasoning salt or salt and pepper
1/4 cup flour, plus
2 tablespoons flour, for gravy, if making
2 teaspoons seasoning salt
1/2 teaspoon dry mustard
fresh ground black pepper
1/2 teaspoon paprika
2 tablespoons butter, more if needed for gravy
1 teaspoon oil
2 cups milk or 2 cups cream

Steps:

  • Trim excess fat from chops. Season chops with seasoned salt or salt and pepper.
  • Mix flour with 2 teaspoons seasoned salt, dry mustard, pepper and paprika. Adjust seasonings as needed. If making gravy, remove 2 tablespoons seasoned flour and set aside for gravy to prevent lumps. Coat chops with remaining flour mixture.
  • Melt 2 tablespoons butter and oil in skillet over medium high heat until hot.
  • If NOT making gravy, brown chops on both sides until done. Drain on paper towels, then serve.
  • If making gravy, add floured chops to pan and brown on both sides, about 3-5 minutes per side. Remove chops to drain on paper towels, then cover and keep warm.
  • Reduce heat to medium. Check pan to make sure you have 2 tablespoons of drippings; if not, add butter or oil as needed.
  • Add 2 tablespoons reserved flour to make the roux. Stir until smooth and dark brown.
  • Lower heat and gradually add milk, stirring constantly until temperature reduces. Then stir frequently until gravy reaches desired consistency. Check seasonings and adjust as needed.
  • Return chops to pan and simmer in gravy until hot and tender or, if chops are done and you prefer, just ladle gravy on top and serve.

2 (14 ounce) cans chicken broth
2 cups uncooked pearl barley (not the quick-cooking type)
3 jalapeno peppers, finely minced
2 large carrots, chopped into 3/8 pieces
1 1/2 teaspoons dried basil (or 1 1/2 Tablespoons fresh, minced)
1 cup red onion, chopped
2 stalks celery, chopped into 1/4 pieces
1 cup toasted pecan pieces
1 large apple, peeled, cored and chopped into 3/8 pieces
salt & freshly ground black pepper
2 tablespoons butter
3 cups thinly sliced onions
2 tablespoons maple syrup
1 tablespoon brown sugar
2 tablespoons all-purpose flour
1 cup chicken stock
salt & freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Season pork chops with salt. Heat a large pot over high heat. Brown the pork chops on each side and set aside, reserving drippings and the pan for the gravy.
  • In a separate pot, bring the chicken broth, barley, peppers and carrots to a boil and cook for 10 minutes. Remove from heat and stir in onion, pecans and apple, along with salt and pepper to taste. Spread evenly into a 9x13 inch baking dish. Arrange the pork chops over the barley mix.
  • Cover and bake 1 ½ hours until the barley is tender and the pork has reached an internal temperature of 155 degrees F. (Thickness of pork chops and actual oven temperatures vary.).
  • 50 minutes later, heat the pan used to sear the pork chops over medium heat, add the butter and ¼ cup of the chicken stock.
  • When boiling, scrape any brown remains from the bottom of the pan. Add the onions, syrup and sugar to the pan, stirring occasionally until onions are soft and caramelized, about 15 minutes.
  • Add the flour to the pan and stir constantly for 2 minutes. Add the remaining chicken stock; bring to a boil while stirring. Reduce heat to medium low and simmer uncovered for 15 minutes, stirring occasionally. Season with salt and pepper. Keep warm until the pork chops and barley is done.
  • Serve pork chops with gravy over the top and the barley on the side.

Salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil, plus a drizzle
2 thick slices smoky bacon from deli counter, diced 1/4-inch
1 medium onion, diced 1/4-inch
1 rounded tablespoon all-purpose flour
1 bottle amber to dark German beer
1/2 cup stock
Chopped parsley, for garnish

Steps:

  • Season the chops liberally with salt and pepper. Heat the extra-virgin olive oil in a skillet over medium-high heat. When the oil smokes, add the chops and cook, turning once, until caramelized and the meat is just turning firm, about 10 to 12 minutes. Remove to a platter and cover with foil, reserve.
  • Add a drizzle more oil to the pan, add bacon and brown for 2 to 3 minutes. Stir in the onions and saute over medium heat with the bacon until soft, 6 to 7 minutes. Sprinkle in flour, stir for 1 minute, then add the beer. Cook until reduced by half, 1 to 2 minutes more, then whisk in the stock. Remove from the heat and season with pepper. Pour the gravy over the chops, sprinkle with parsley and serve immediately.

3 teaspoons kosher salt
2 teaspoons freshly cracked black pepper

2 tablespoons all-purpose flour
