ITALIAN RICE BALLS

Rice symbolizes prosperity and wealth, so rice balls are good for New Year's and wedding celebrations. I love these tasty little morsels, and they go well with many different kinds of food! I've served them with various meats and seafood, and they're always welcome at my table. :) Prep time includes chilling.

2 eggs
1/3 cup grated parmesan cheese
1 tablespoon dried basil or 1 tablespoon dried parsley
1/4 teaspoon fresh ground black pepper
1/2 teaspoon salt, to taste (recipe originally called for 1 tsp)
2 1/4 cups low sodium chicken broth or 2 1/4 cups water
1 cup uncooked white rice
1 1/2 cups dried breadcrumbs
2 cups olive oil or 2 cups vegetable oil
1/2 cup mozzarella cheese, in cubes (optional)

Steps:

  • In a bowl whisk together the eggs, Parmesan cheese, basil or parsley (I prefer basil), pepper, and salt; cover and refrigerate.
  • Pour the chicken broth (or water and a 1/2 teaspoon of salt) into a large saucepan and bring to a boil; stir in the rice, cover and reduce the heat to low.
  • Cook the rice until liquid is almost absorbed, about 15 to 17 minutes.
  • Remove from heat and gradually pour in egg mixture, continually stirring rapidly to coat the surface of the rice and prevent the egg from scrambling; allow rice mixture to cool in the refrigerator for 1 hour.
  • Pour bread crumbs into a shallow dish.
  • Dampen your hands with water and create 1-inch balls from the rice mixture, then coat each one with bread crumbs.
  • In a small, deep skillet, heat enough oil to cover the rice balls to an adequate frying temperature (350 degrees F) so that a piece of rice from the mixture actively sizzles when dropped in; alternately, a deep fryer may be used.
  • Fry the rice balls 4 to 6 at a time, turning as needed to ensure even browning.
  • Drain on paper towels, then serve warm as is or with a bit of marinara sauce.
  • Another nice touch you can use with these is to put a small cube of mozzarella cheese in the middle of each rice ball!

SWEET POTATO BALLS

Only a few simple ingredients used in these gluten free Sweet Potato Balls deep fried to golden perfection. They make a tasty tea time or snack time treat.(Makes 30 sweet potato balls)

1 lb sweet potatoes ((450g))
½ cup glutinous rice flour ((60g))
¾ to 1 cup white rice flour ((98g to 130g))
¼ cup sugar ((55g))
1 tsp baking powder
Vegetable oil (for deep frying)

Steps:

  • Peel and cube sweet potatoes. Place in a steamer and steam for 10 minutes until soft. Transfer to a large bowl and mash with a potato masher.
  • Add glutinous rice flour, white rice flour, granulated sugar, and baking powder to the mashed sweet potatoes. Mix with a spatula until a soft dough forms. If dough is still a little wet, mix in some additional white rice flour. Dough should be soft but not sticky.
  • Pinch a little dough from the bowl and roll between palms to form a 1-inch diameter ball. Repeat until all dough is used up.
  • Fill a medium sized saucepan with 1 inch vegetable oil over medium low heat. Gently drop a few sweet potato balls into the hot oil. Fry for 3 to 4 minutes until golden brown. Sweet potato balls should float when cooked. Remove with tongs and drain on a metal strainer. Repeat until all sweet potato balls are cooked.
  • Serve immediately.

Sweet potato is enhanced with cashews and nutritional yeast to make a super savory (almost cheesy) flavor. Then it's wrapped in risotto and rolled in bread crumbs before baking. Yum!

1/2 cup raw cashews
1 tablespoon nutritional yeast
1 tablespoon Braggs liquid aminos or 1 tablespoon soy sauce
1 teaspoon olive oil
1 teaspoon onion powder
1/2 teaspoon garlic powder
1 large sweet potato (12-16 oz)
1/4 chopped onion
2 garlic cloves
2 cups arborio rice (dry)
1 cup white wine
6 cups vegetable broth
1 cup seasoned bread crumbs

Steps:

  • Filling:.
  • Peel, chop and cook sweet potato in microwave until soft. About 6 minutes. Mash until creamy.
  • Meanwhile, combine all other filling ingredients in a food processor until smooth.
  • Stir together well.
  • Using your hands, form into 24 1-inch sized balls and place on cookie sheet lined with parchment paper.
  • Place in freezer to cool to make them easier to handle.
  • Risotto:.
  • Saute onion in large saucepan until tender. Add garlic.
  • Add the dry rice and stir constantly for 2 minutes.
  • Add the white wine stir until absorbed.
  • Add the broth 1/2 cup at a time. Waiting until fully absorbed between each addition. The entire process takes about 15-20 minutes. Season as desired.
  • Assembly:.
  • Take a frozen filling ball and wrap the risotto around it by rolling in your hands. Then roll in breadcrumbs and place on parchment lined cookie sheet.
  • Can be frozen at this point.
  • Otherwise spritz with olive oil and bake at 400F for about 30 minutes.
  • Serve with marinara sauce.

2 lbs mashed potatoes (hot)
2 eggs (lightly beaten)
4 teaspoons cornstarch
2 tablespoons olive oil
1 lb ground beef
4 tablespoons sofrito sauce
4 tablespoons tomato sauce
2 teaspoons dried oregano
1 teaspoon salt
vegetable oil (for deep frying)

Steps:

  • Mix together the hot mashed potatoes, eggs, butter and 2 teaspoons of cornstarch. Set aside and let cool.
  • In a frying pan, heat the olive oil. Add the ground beef and cook until no longer pink. Stir to break up the meat.
  • Add the sofrito, tomato sauce, oregano and salt to the cooked ground beef. Mix thoroughly. Turn the heat to low and simmer for 30 minutes. Remove from heat and allow to cool.
  • Spread a spoonful of the potato dough mix in the palm of your hand. Make an indentation in the middle and stuff it with the meat mixture.
  • Cover the filling with more potato dough. Shape into a ball. Dust the ball lightly with the remaining cornstarch.
  • Repeat until mix is used up.
  • Deep fry the stuffed potato balls until golden (about 2 minutes).
  • Remove and drain on paper towels.
  • Servings: Makes 12 to 16 potato balls.

1/2 cup short grain brown rice or 1 cup leftover cooked rice
nonstick cooking spray
3 teaspoons olive oil
1/4 lb boneless skinless chicken cutlet
1 1/4 teaspoons salt
1/8 teaspoon black pepper
1/2 cup pureed sweet potato
1/4 cup shredded reduced-fat cheddar cheese
1/4 cup low-fat buttermilk
1 large egg, beaten
1/2 cup broccoli, puree or 1/2 cup butternut squash puree
1 1/2 cups whole wheat cracker crumbs or 1 1/2 cups whole wheat breadcrumbs

Steps:

  • If needed, cook the rice according to package directions.
  • Season the chicken with salt and pepper. Spray a nonstick pan with cooking spray, heat, then add 1 tsp olive oil. Cook the chicken until no longer pink, 4-5 minutes.
  • Cut the chicken into pieces, then place into a food processor. Add the sweet potato puree, cheddar cheese, buttermilk, and blend until smooth.
  • Transfer the mixture to a bowl, then add the rice. Roll into 1 inche balls and place them on a tray lined with waxed paper or aluminum foil.
  • Combine the egg with vegetable puree in a shallow bowl. Then put the breadcrumbs into a second bowl.
  • Roll the rice balls into the egg mixture, then the breadcrumbs.
  • Use the remaining 2 tsp of oil in the non stick pan. Cook the rice balls over medium heat until crispy. 5-7 minutes total. Serve warm.

⅓ cup grated Parmesan cheese
1 tablespoon dried parsley
¼ teaspoon freshly ground black pepper
1 teaspoon salt
1 quart water

1 ½ cups dried bread crumbs
2 cups olive oil

Steps:

  • In a medium bowl, whisk together eggs, cheese, parsley, pepper, and 1 teaspoon salt. Cover and refrigerate.
  • Pour water and 1 teaspoon salt into a large saucepan and bring to a boil. Stir in rice and reduce heat to low. Cook rice until water is almost absorbed, stirring frequently. Remove from heat and slowly pour in egg mixture, stirring rapidly to prevent egg from scrambling. Allow rice mixture to cool for 1 hour.

It's the end of the week and you have leftover Mashed potatoes and leftover rice! Combine them into these tasty treats.Made in the oven with just a touch of olive oil spray to keep the fat down. I didn't add any seasonings because the mashed potatoes and rice was well seasoned along with using seasoned bread crumbs. But do add some if your left overs were bland. This will work with any mashed potato form russets, sweet potato, to red potatoes and try leftover arborio, jasmine, basmati to brown rice. This makes a great side or make mini ones for appetizers.

1 1/2 cups Mashed Potatoes, recipe follows, cold
1/4 cup all-purpose flour
1 large egg
1 tablespoon chopped fresh parsley, plus more for garnish
1/4 cup grated Parmesan, plus more for garnish
1/2 cup shredded mozzarella
1/4 teaspoon freshly ground black pepper
3/4 cup dried breadcrumbs
Vegetable oil, for frying
Kosher salt
5 pounds russet or Yukon gold potatoes
3/4 cup (1 1/2 sticks) salted butter, plus more for topping
One 8-ounce package cream cheese, softened
1/2 cup half-and-half, or more if desired
1/2 teaspoon seasoned salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste

Steps:

  • Mix together the Mashed Potatoes, flour, egg, parsley, Parmesan, mozzarella and black pepper in a bowl. Place the breadcrumbs on a large plate.
  • Form the potato mix into 12 golf-ball-sized balls. The mixture will be a little sticky, so wet your hands a little as you go. Place the balls directly on the breadcrumbs and roll each ball in the breadcrumbs, pressing to make sure they stick well. Put the breadcrumbed balls on a plate.
  • Heat 2 inches of oil in a deep skillet or Dutch oven to 375 degrees F, or until the mixture bubbles when a breadcrumb is added.
  • Add the balls to the oil and fry until golden brown on all sides, 3 to 5 minutes total. Remove to a paper towel-lined plate and sprinkle immediately with salt.
  • Garnish with more Parmesan and parsley.
  • Peel and cut the potatoes into pieces of approximately the same size. Bring a large pot of water to a simmer and add the potatoes. Bring to a boil and cook until a fork easily slides into the potatoes with no resistance and the potatoes almost, but not totally, fall apart, 30 to 35 minutes.
  • Preheat the oven to 350 degrees F.
  • Drain the potatoes in a large colander. Place them back into the dry pot and put the pot on the stove. Mash the potatoes over a low heat, allowing all the steam to escape.
  • Turn off the stove and add the butter, cream cheese and half-and-half. Mash, mash, mash! Add the seasoned salt and black pepper.
  • Stir well and place in a medium baking dish. Throw a few pats of butter over the top of the potatoes and place bake until the butter has melted and the potatoes are warmed through, a few minutes.

OLD-FASHIONED RICED POTATOES

2 cups overcooked, moist, mushy rice, cooled and dried out slightly (see Cook's Note)
1 cup grated Gruyere cheese
1 cup 1/4-inch-diced smoked ham

Steps:

  • Fill a saucepan halfway with vegetable oil and heat until a deep-fry thermometer inserted in the oil registers 350 degrees F.
  • Put some flour in a shallow bowl and season with salt and pepper. Put the eggs and panko in separate shallow bowls.
  • Form the rice into 1 1/2-inch balls. Push some of the cheese and ham into the center of each ball and press the rice around the filling. Dredge the rice balls in the seasoned flour, shaking off the excess, then in the egg followed by the panko.
  • Place a few of the balls in the hot oil and cook until golden brown all over, about 3 minutes. Repeat with the remaining rice balls. Drain slightly on paper towels and serve.

  • Cook potato and rice: Place potatoes in a medium pot. Fill with 3 cups water; cover and boil for 10-12 minutes or until potatoes are fully cooked. Remove from water and set aside. Cook rice according to manufacturer instructions. set aside as well to cool.
  • Cook Meat Filling: While the potatoes and rice are cooking, prepare the meat filling. Heat a large pan on medium/high heat. Add ground beef and cook for 5 minutes or until the water is absorbed. Add onions and garlic and cook for 5-8 minutes or until onions are soft. Next, add the spices (salt, pepper, cumin, coriander, chili powder, cinnamon) and cook for 5 minutes. Turn off heat, add the cilantro and set meat mixture aside to cool.
  • Prepare shell mixture: Place cool 2 cups cooked rice, 2 cooked (cut in 4th) potatoes, 1/4 cup cornstarch and salt in a large bowl of a food processor or electric mixture. Processor for about 1 minutes or until the mixture comes together. Do NOT over processor or mixture will turn into a paste. (If you do not have a food processor or mixer this can be also done by hand, vigorously combine and mash all the ingredients with your hand until fully combined).

  • Steam the sweet potatoes over rapidly boiling water for 10-20 minutes or until tender when pierced with a fork. Mash the cooked potatoes, then measure about 1 ½ cups of the mashed sweet potatoes. (You may have some left over.) Mix the mashed potatoes with the rice flour. Pour the coconut milk or water, 1 tablespoon at a time into the potato and flour mixture, and knead until a smooth, pliable dough forms.
  • Scoop out about 1 tablespoon of the dough, and shape it into a small ball, creating a well or hollow space in the center using your thumbs. Place about ¾ to 1 teaspoon of shaved palm sugar in the center of the well. Fold the edges of the dough up over the sugar, and reshape into a ball. Make sure that the sugar does not leak out on any side. Repeat until all the dough is used up. Set aside.
  • Fill a medium saucepan about halfway with the water. Bring the water to a boil over medium heat, then gently drop the balls into the water, working in batches. Cook for about 3 minutes, or until the balls begin to float to the surface. Scoop the floating rice balls out of the boiling water with a strainer, and shake off the excess water, then roll in the flaked coconut.
