- Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch baking dish.
- Place potatoes in bottom of prepared dish.
- Combine the 1/2 cup butter, condensed soup, cheese, sour cream, salt and onion; mix well and pour over potatoes. Top with crushed corn flakes and drizzle with 1/2 cup melted butter.
- Bake uncovered at 350 degrees F (175 degrees C) for 45 minutes.

POTATOES O'BRIEN
This recipe for crisp, panfried potatoes with peppers and onions originated in the early 1900s at a Manhattan restaurant known as Jack's. You can vary the recipe by substituting any of your favorite pepper varieties. Serve the potatoes with scrambled eggs, burgers or short ribs. This recipe comes from Casual Cusines of the World.

- In a large frying pan over medium-high heat, melt 1/2 tablespoon of the butter with 1/2 tablespoon of the olive oil.
- Add the onion and saute, stirring occasionally, until golden brown and just beginning to caramelize, 5-7 minutes.
- Do not allow the onion to scorch.
- Add the red and green peppers and saute until beginning to soften, 3-5 minutes longer.
- Transfer to a serving bowl and set aside.
- Add 1/2 tablespoon each of the remaining butter and olive oil to the same pan.
- Add half of the cubed potatoes and cook, turning to brown all sides, 5-7 minutes.
- If the potatoes are too dry, add a little more butter or oil.
- Transfer the browned potatoes to the bowl holding the pepper mixture.
- Repeat with the remaining butter, olive oil and potatoes.
- Return the mixture to the pan.
- Raise the heat to high so that it quickly warms through.
- Remove from the heat and season to taste with salt and pepper.
- Add the parsley and stir to combine.
- Return to the serving bowl and serve immediately.

STRIKER'S POTATOES O'BRIEN
I'm tired of buying this at the store, so I decided to make my own. In my opinion, this is the best way to prepare potatoes for a typical breakfast. This recipe lasts a long time in the freezer. Just pull the bag out of the freezer and toss as much as you want onto a hot pan or griddle. Add more vegetable oil when cooking if needed. Enjoy.

- Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer 10 minutes. Drain, then set aside until cool. Once cool, cut into 1/2-inch dice.
- Combine the potatoes, green bell pepper, red bell pepper, and onion in a mixing bowl. Drizzle in the vegetable oil, and gently stir until evenly coated. Spoon the mixture into resealable freezer bags. Store the mixture in the freezer.

Everything is better with bacon! A good down-South breakfast side dish. Don't eat these potatoes everyday for breakfast or you will have a short life! I make these for my family on special occasions like a birthday brunch--and you have to use a cast iron skillet to get these perfect.

- Cut potatoes in half lengthwise and then slice into 1/8-inch half moons. Place slices in a bowl of ice water to prevent them from browning while you cook the bacon.
- Cook bacon in a cast iron skillet over medium-low heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle. Reserve bacon grease in the skillet.
- Drain potatoes and pat dry with a paper towel. Sprinkle with Cajun seasoning and garlic powder and toss to coat.
- Add potatoes to the bacon grease and cook over medium-low hear, stirring occasionally to make sure they aren't burning, until nicely browned with crispy edges and soft insides, 30 to 35 minutes. Cover the pan as needed to speed up the process.
- Remove potatoes from the pan. Drizzle with ranch dressing and garnish with bacon crumbles.

These are soooo yummy. It is automatically expected that I will be bringing this dish to every holiday with my family. I even have to triple the recipe to have enough. - Preheat the oven to 375°F. Lightly butter a 9x13-inch baking dish. In a large mixing bowl, whisk the eggs and milk until fully blended and season with a large pinch of salt and a few grinds of black pepper. Set aside.
- In a skillet, cook the bacon over medium heat until the fat has rendered and the bacon is crispy. Use a slotted spoon to transfer it to a paper towel-lined plate. Remove all but about 2 tbsp of the drippings from the pan. Add the onions and green chiles to the skillet and cook, stirring often, until the onions are softened and translucent, about 3 minutes. Add two of the chopped tomatoes and cook 1 minute, tossing everything together. Remove from the heat and let cool several minutes.
- Add the potatoes and cooked bacon to the eggs, stirring until evenly distributed. Add the sautéed vegetables to the eggs, stirring, then add 2 cups of the cheese, stirring until fully blended.
