1 long skinny baguette (sliced into ¼- to ½-inch slices)
¼ cup extra virgin olive oil
1 (5.2 oz) pkg Boursin Garlic and Herb cheese
8 slices prosciutto de parma (~3 oz) (cut or torn into quarters)
4 Roma tomatoes (sliced into ¼-inch slices)
2 tsp coarse sea salt
2 tsp Herbs de Provence

Steps:

  • Heat the oven broiler.
  • Brush both sides of each bread slice generously with olive oil and place on bake sheet. Broil ~1-2 minutes per side until toasted on both sides, flipping once.
  • Spread ~1 tsp layer Boursin on each crostini. Top each with prosciutto and a slice of tomato.
  • Sprinkle sea salt and Herbs de Provence on top of each crostini. Yields 30-32 appetizers.

1 baguette, sliced diagonally into 1/4-inch slices (about 40 slices)
8 ounces Brie cheese
2 tablespoons honey
4 ounces thinly sliced prosciutto, cut crosswise into 1/3-inch-wide ribbons (about 6 slices),
Finely chopped fresh thyme leaves, for serving (optional)

Steps:

  • Preheat the broiler. Line a baking sheet with foil.
  • Arrange the baguette slices on the prepared baking sheet. Cut the Brie into 1/4-inch-thick slices and put 1 slice on each piece of baguette. Broil until the cheese is melted, 1 to 2 minutes.
  • Drizzle the toasts with the honey and then top with some prosciutto and a sprinkle of thyme leaves if using.

1 French baguette, cut into diagonal 1/2 inch slices
¼ cup olive oil
¼ cup butter or margarine
2 cloves garlic, minced
salt and pepper to taste
¼ cup grated Parmesan cheese

Steps:

  • Set the oven to broil at 425 degrees F (220 degrees C).
  • In a small saucepan, combine the olive oil, butter and garlic. Set over medium heat, and cook until butter has melted and the mixture starts to bubble. Season with salt and pepper. Remove from the heat.
  • Dip each slice of bread into the garlic mixture, turning to coat each side. Place Parmesan cheese on a plate. Press one side of each piece of bread into the cheese, and place cheese side up on a baking sheet.
  • Broil on the middle rack of the preheated oven for about 8 minutes, or until golden brown.

1 rustic baguette
prosciutto, 1 per slice bread
1 fairly good quality fresh mozzarella ball (ovolini)
fresh sage leaf
1/4 cup butter
salt and pepper

Steps:

  • Slice bread on the diagonal (eg. ///) approximately ½" thick. Place sliced bread in an even layer on a baking sheet.
  • Brown ¼ cup of butter in a pan - when putting the butter in the pan add sage leaves (the number of bread slices you have), add salt and pepper to taste while allowing all ingredients to brown together in the butter. Remember, the prosciutto is a cured ham, thus there is salt already in the meat, do not add too much into your butter.
  • Place one slice of prosciutto on each slice of bread - making sure the prosciutto is not hanging over a lot on the bread (kind of clump it, making little waves in the meat).
  • Slice the mozzarella in ¼" thick slices (the number of bread slices you have), and place on top of the prosciutto.
  • At 350°, bake the bread in the oven until the mozzarella is melted and just barely turning golden.
  • Take the bread out of the oven, and spoon your browned butter over top of each slice of bread, don't over use the butter or everything will be mushy.
  • Place one sage leave on top of each slice, and now you're ready to serve!

  • Prepare a medium-hot fire in a grill or preheat a skillet over medium-high heat. Place the fig halves cut side down on the grill or in the skillet and grill for a few minutes, until the cut sides start to carmelize. Meanwhile, grill or toast the bread. I have made this for a girls luncheon, an appetizer before a heavy lasagna meal and even for snacks for a sporting event. I came up with this as a way to use up leftover ricotta cheese when making lasagna.

1/2 cup whole milk ricotta cheese
2 sprigs fresh rosemary, diced
1 lemon
4 ounces shredded parmesan cheese
4 ounces prosciutto, de parma
1 half loaf crusty Italian bread
3 leaves basil
4 roma tomatoes
1 tablespoon extra virgin olive oil
1 tablespoon balsamic vinegar
salt
pepper

Steps:

  • Preheat oven to 375 degrees.
  • Slice bread into 1/4 inch rounds on a diagonal.
  • Lightly coat bread with extra virgin olive oil.
  • In a glass or plastic bowl add the zest of entire lemon & mix ricotta cheese, rosemary, the parmesan cheese and add the juice of the half the lemon. Add salt and pepper to taste.
  • Spoon Ricotta mixture onto bread.
  • Cut prosciutto into half.
  • Place the prosciutto slices onto top of the Ricotta mixture.
  • Slice the Roma tomatoes into small rounds.
  • Place 1 slice of tomato on top of the crostini.
  • Bake at 375 degrees for 15-20 minutes or until bread is golden brown and mixture is set.
  • Right before serving garnish sprinkle with the cut fresh basil leaves Lightly Drizzle with Extra Virgin Olive Oil & Balsamic.
