PURPLE CABBAGE SALAD
This recipe is my mother's, and it's great for a delightful side dish! Hope you enjoy!

Steps:
- Lightly toss red cabbage, mandarin orange segments, green onion, and cranberries together in a salad bowl.
- Toast pine nuts in a small skillet over medium heat, stirring constantly, until fragrant and lightly browned, about 2 minutes. Remove immediately to a bowl and let cool.
- Whisk canola oil, vinegar, sugar, and salt in a bowl until sugar and salt have dissolved.
- Stir toasted pine nuts into salad and pour dressing over the top. Toss again to coat salad with dressing.

SHAVED PURPLE CAULIFLOWER SALAD

Steps:
- Thinly slice the cauliflower on a mandoline or with a heavy sharp knife. Place in a large bowl and set aside.
- Heat the oil in a small skillet over medium heat. Add the lemon slices, garlic, fennel seeds and coriander seeds and cook, stirring occasionally, until fragrant and the garlic begins to brown, about 4 minutes.
- Remove from the heat and stir in the lemon juice. Pour the dressing over the cauliflower. Season with salt and pepper, sprinkle with parsley and chives and toss.
NORTHWOODS INN PURPLE CABBAGE SALAD
The restaurant Northwoods Inn or Clearmans serves this slaw. I normally do not like cabbage, but this salad is delish!

- Combine oil, vinegar, sugar, salt, seasoned salt, pepper and onion powder in a bowl. Pour over cabbage; chill for at least 2 hours or overnight.
MOM'S PURPLE CABBAGE SALAD
Got this from my Mom in 1989. I suspect she got it out of a magazine (BHG?) or the newspaper.... We've been eating it regularly since. Be sure to make it up a day ahead so the flavors mix well. This recipe makes enough for a small army so this is a good one to take to a pot luck or (large) family picnic etc. If the salad is kept in the fridge it lasts 4 - 5 days if tightly covered. (BTW - we've used Hellmans, Hellman's light, Miracle Whip and MW light for the salad dressing. It is truly best with the full fat Hellman's...)

Steps:
- Fry, drain and crumble the bacon.
- Get out the biggest bowl you have in the house.
- Chop or shred the cabbage, cauliflower, broccoli and onion. Mix in the veggies (incl peas) and the bacon. Set salad aside.
- Mix the dressing by combining the mayo, cheese, sugar, S&P.
- Toss the salad with the dressing the night before your event. Shake up the salad once or twice to make sure the dressing mixes.

- In a large bowl, toss the cauliflower and cabbage with the dressing until fully coated. Sprinkle with the sunflower seeds. Serve immediately or refrigerate up to overnight.
- Put the oil, vinegar, honey, mustard, 1/2 teaspoon salt, 1/4 teaspoon pepper and 1 large egg in a blender and blend until smooth. Use a spatula to stir in the poppyseeds, then season with more salt and pepper if needed. Refrigerate until ready to serve.

- 1. Cut cabbage head in halves along the stem, and each half in halves, again along the stem. Place a quarter cabbage on the cutting board. Cut perpendicular to the stem in slices 1/2-1 inch thick. Each slice is to be laid on the board and cut in 1/2-1 inch thick slices. Get a Borner mandoline slicer if you want to make this job effortless.
- 2. Place shredded cabbage into the strainer, pour boiling water over it, and immediately pour cold water. Squeeze the water out of cabbage. (This makes it softer and easier to eat.)
