Roasted cornish hens make a simple yet elegant meal... Be it holiday dinner for small family or a winter weeknight comfort dinner, these mini birds fit perfectly for a quick, effortless yet festive meal. For a twist on classic, I flavored these birds with Indian spice - Garam Masala and sweetness of honey. Roasted to perfection and a perfect combination of heat and sweet, this recipe is sure to please even the hard core turkey lovers. ;-)You know, whenever I roast a bird, I always make sure to put good use of flavor-explosion happening in roasting pan. In other words, I have to have a scrumptious side cooking on the side with roasted hens. :) Yes, you guessed it right! I'm talking about some baby potatoes and Brussels sprouts cooking in "cornish hen - garam masala" flavor bath.... without even need of lifting a spoon! I mean, by the time hens roast to perfection, the potatoes are tender and packed with ton of flavor.Just like you, I'm very busy during the weekdays and often prefer something for dinner which needs minimum effort and is still has bold flavor. The cornish hens cook so fast and with very little marination, come out moist and juicy.... perfect for a easy dinner any weekday. In morning, just mix the garam masala marinade and apply on thawed and fully dried Cornish hens and then refrigerate for the evening. Just an hour before dinner, roast hens in oven with some baby potatoes. By the time everyone ready for dinner, golden roasted sweet and spicy cornish hens will be also be ready to carve!! How easy does that sound?A normal weeknight meal feels like a holiday special meal and in so so less time!!Look at the gorgeous color of Garam Masala and Honey Glaze!! Aren't these looking perfect for any special dinner? holiday or weekday!!Cornish Hen Marinade:The marinade for hens is very simple yet packed with big punch of flavor. This marinade is true example of my fusion-kitchen. Indian Garam Masala is mixture of some warm ground spices and is very popular in Indian Cuisine. I was surprised when I learned that how popular Garam Masala is globally. This roasted hen marinade is kinda cousin of tandoori chicken minus the color. Not only it adds a nice aromatic flavor to meat.... kinda like five spice. A little goes a long way. However, I highly recommend massaging the birds with marinade and lit it marinate for one hour or at least good 20 minutes. This will add lots of flavor skin-deep and really improves the taste of roast...... take it from fab to fabulous. The honey glaze on the hens is just a touch...... I wanted a kiss of sweetness to compliment the spices... but not overly sweet glaze. I have just glazed the hens once after first 25 minutes of cooking. If you like a darker and sweeter glaze, go ahead and brush honey-lemon on hens twice or three times.I'm sure you all set to have great holidays. 1 tbsp Garam Masala
2 Game Hen, Cornish Hens, dried thoroughly
1 Lemon, zest and juice divided
2 tbsp Olive Oil
1 tsp Paprika, mild
1/2 tbsp Salt
1 tbsp Honey
1/2 tsp Lemon Pepper Seasoning
1 lbs Potatoes, baby potatoes, sliced half, or use half Brussels Sprouts
3-4 tbsp Parsley, fresh parsley, small chopped
1 tbsp Olive Oil
Salt and Black Pepper

Steps:

  • Preheat oven at 425 degrees Fahrenheit. In a small mixing bowl, stir together salt, lemon pepper, garam masala, oil, paprika, and lemon zest. Set aside. Also, mix honey and lemon juice together and set aside.
  • I thawed Tyson Cornish Hens overnight in refrigerator. Once ready to use, in a rimed sheet, remove hens from lamination.
  • Discard any water collect in the sheet and pat dry hens completely with paper towel. A well dried bird roast beautifully.
  • Rub marinade all over the hens and also within the skin to infuse more flavor.
  • Place diced potatoes (and Brussels sprouts,if using) in the bottom of a baking sheet or wide dutch oven pan. Dress potatoes in 1 tablespoon oil and sprinkle with salt and pepper.
  • Place hens on the potatoes and roast the hens in the preheated oven for about 1 hour to 1 hour 5 minutes at 425 degrees Fahrenheit.
  • After first 25 minutes, brush the top with lemon-honey and return the pan back to oven to complete cooking.
  • Once roasted, an instant-read thermometer inserted into the thickest part of the thigh registers 180 degrees Fahrenheit and the juices run clear.
  • Remove the hens from the oven, loosely cover with foil and let rest 10 minutes before carving. Cut hens in half lengthwise. Garnish with chopped parsley and serve!

1 tablespoon dried basil
1 tablespoon poultry seasoning

6 Cornish game hens, about 1 1/2 pounds each, rinsed and dried thoroughly
1 green bell pepper, large dice
2 stalks celery, large dice
1 onion, large dice

Steps:

  • Preheat oven to 375 degrees F.
  • In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. 2 Cornish game hens (20 to 24 ounces each)
1 can (8 ounces) crushed pineapple
3 cups cubed day-old bread (1/2-inch cubes), crusts removed
1 celery rib, chopped
1/2 cup sweetened shredded coconut
2/3 cup butter, melted, divided
1/4 teaspoon poultry seasoning
2 tablespoons steak sauce
2 tablespoons cornstarch

  • Sprinkle 1/4 teaspoon salt inside hens; set aside. Drain pineapple, reserving juice. In a large bowl, combine the pineapple, bread cubes, celery and coconut. Add 1/3 cup butter; toss to coat. Loosely stuff hens with mixture., Tuck wings under hens; tie legs together. Place on a rack in a greased shallow roasting pan. 2 -4 Cornish hens (thawed, if frozen)
2 tablespoons soy sauce
1 cup undiluted frozen orange juice concentrate
1/4 cup sesame oil
1/4 cup honey
2 teaspoons curry powder (or a little less)
1/4 cup water

Steps:

  • Preheat oven to 425 degrees.
  • Rinse hens under cold water until water runs clear and pat dry with paper towels.
  • Place hens in either a baking dish or small roasting pan just large enough to hold the hens.
  • In a small bowl, whisk soy sauce with undiluted orange juice concentrate, sesame oil, honey and curry powder until the honey dissolves.
  • Gently place your thumb between skin and breast, lifting the skin. Tilt bird upward and pour about 2 tablespoons of the mixture under the skin. Drizzle about 1/2 tablespoon in cavity. Repeat on the second hen, third hen and fourth hen.
  • Pour remainder of the soy mixture over the hens and rub evenly over skins. Tightly cover dish or pan with aluminum foil or lid. Roast in center of preheated oven for 40 minutes.
  • Remove from oven and baste hens with liquid from the pan. To prevent sauce from burning, stir water into pan juices.
  • Reduce oven temperature to 350 degrees. Return hens to oven and continue to roast, UNCOVERED, for about 20 minutes, basting every 10 minutes with pan-liquid, until a rich glaze forms on top and an instant-read thermometer inserted into thigh reads 170 degrees.
  • Remove pan from oven and allow to stand 5 minutes before serving. Place hens on individual plates, then spoon pan juices overtop. Serve with Stove Top chicken stuffing and mashed potatoes, or your favorite roasted veggies, or maple squash over bok choy.

1/3 cup salt
2 tablespoons butter
salt and pepper
basil
1/2 cup peach preserves (can use Apricot)
1/2 cup butter

Steps:

  • Cut the hens down the backbone (split).
  • Brine the hens: dissolve the salt in water,put hens& salted water into large bowl.
  • (I usually put them into a large plactic bag) refrigerate 2 to 3 hours.
  • Remove hens, Rinse thoroughly, pat dry, prick the skin allover the breast and legs with point of paring knife.
  • Melt the butter in small pan& mix with preserves.
  • Add salt, pepper& basil.
  • Preheat oven to 400 degrees.
  • Place hens in shallow pan (I usually line pan with foil for easy clean-up).
  • Rub hens with butter.
  • Spoon butter& preserve mixture over hens.
  • Bake 35 to 45 minutes.

4 garlic cloves, peeled and rough chopped
2 tablespoons Dijon mustard
2 tablespoons white wine
2 teaspoons fresh rosemary leaves
2 teaspoons fresh thyme leaves

1 teaspoon fresh ground black pepper

Steps:

  • Preheat the oven to 400 degrees.
  • Rinse and dry the hens.
  • In the bowl of a mini food processor, add the mustard, wine, rosemary, thyme, oil, salt and pepper.
  • Pulse until all is a smooth paste. It will be more of a liquid form than a paste.
  • Place the hens in a little roasting pan and shmear the mixture all over the birds, under the skin, around the breasts, and into the cavity.
  • Roast, breast side down for 25 minutes then flip and roast for another 25-35 minutes, or until done.
  • Remove from the oven and let rest at least 10 minutes.
  • Cut each hen in half, down the breastbone, and serve with some sauce on top.

2 cornish hens (about 1.5 pounds each)
3 tablespoons olive oil (divided)
½ teaspoon kosher salt (or to taste)
¼ teaspoon black pepper
½ teaspoon dried rosemary (crushed)
½ teaspoon lemon zest
¼ teaspoon thyme leaves
¼ teaspoon garlic powder
1 pound potatoes (chopped)
2 carrots (chopped)
1 onion (chopped)

Steps:

  • Preheat oven to 450°F.
  • Toss vegetables with 1 tablespoon olive oil and season with salt & pepper to taste (add extra herbs if you'd like).
  • Combine the remaining 2 tablespoons olive oil and herbs in a small bowl. Brush hens with olive oil mixture. Twist wings to tuck under the bird.
  • Place hens in a large casserole dish or on a rimmed baking sheet. Arrange the prepared vegetables around the hens and place in the oven. Reduce heat to 400°F.
  • Bake 55-65 minutes or just until hens reach 165°F with a thermometer and vegetables are tender. (Ensure the thermometer does not touch the bone.)
  • Remove from the oven and loosely tent with foil for 10 minutes before cutting.
  • Cut hens in half using kitchen scissors and serve.

1 Cornish hen (1 1/2-pound)
1 1/2 tablespoons olive oil
1 tablespoon dijon-style mustard
2 tablespoons mustard seeds
1/2 teaspoon crumbled dried rosemary
1 -2 garlic clove, minced
1/4 cup dry white wine
1/4 cup chicken broth

Steps:

  • Remove the backbone from the hen with poultry shears or a sharp knife, place the hen, skin side up, on a work surface, and press down the breastbone to flatten the hen.
  • In an ovenproof skillet roast the hen, skin side up, in a preheated 450°F oven for 10 minutes.
  • While the hen is roasting, in a small bowl whisk together the oil, the mustard, rosemary, the garlic, and salt and pepper to taste.
  • Remove the hen from the oven, spread the mustard mixture over the skin, and roast the hen for 15 minutes.
  • Transfer the hen to a preheated broiler and broil it about 4 inches from the heat for 2-3 minutes. Now put the mustard seed in with the mustard mixture and broil for 2-3 more minutes(this is so the mustard seeds won't burn).
  • Transfer the hen to a platter and keep it warm.
  • To the skillet add the wine and boil the mixture over high heat until it is reduced by half. Add the broth, boil the mixture for 1 minute, scraping up and brown bits, and add any juices that have accumulated on the platter. Strain the sauce through a fine sieve onto 2 plates. Cut the hen in half with a sharp knife, and arrange each half on top of the sauce.
  • Serve and enjoy!

ROASTED CORNISH GAME HENS MARINATED IN HONEY AND MUSTARD

1/4 cup honey
1/3 cup grainy mustard
2 cloves garlic, chopped
5 tablespoons vegetable oil
1 teaspoon dried thyme or 1 tablespoon chopped fresh thyme
1 1/2 teaspoons ground cinnamon
2 Cornish game hens
Salt and freshly ground black pepper
1 lemon

Steps:

  • Mix the honey, mustard, garlic, 3 tablespoons oil, thyme and cinnamon together in a bowl and set aside. Remove the wing tips from the hens. Roll the hens in the marinade and marinate overnight.
  • Preheat the oven to 450 degrees F.
  • Season the birds inside and out with salt and pepper. Cut the lemon in half and squeeze over each bird. Put a used lemon half in the cavity of each bird. Truss the birds.
  • Set a rack in a roasting pan and brush the rack with several tablespoons vegetable oil. Place the birds, breast side down on the oiled rack. Roast for 30 minutes. Turn the birds breast side up, reduce the heat to 350 degrees and roast an additional 15 to 20 minutes or until the hens are cooked through and the skin is brown. Allow the hens to rest 10 minutes before serving.

Rub the five-spice mixture onto the hens. Place the birds, breast side up, in a shallow roasting pan. Pour the white wine into the pan. Bake for 45 minutes to 1 hour, until the juices run clear when the hen is pierced in the thickest part of the thigh. Remove from the oven and serve with the pan juices spooned over the hens.   • ROASTED GAME HENS STUFFED UNDER THE SKIN WITH HERBED RICOTTA: Preheat oven to 350 degrees. Place the ricotta in a fine sieve and drain for 30 minutes. In a medium bowl, combine the drained ricotta, Parmesan, egg yolk, herbs and lemon zest. Put the garlic clove through a garlic press and into the ricotta. Mix well, adding salt and pepper to taste. Rinse the game hens and pat them dry. Season the cavities with salt and pepper and place a quarter lemon and a quarter onion in each cavity. Loosen the skin on the breasts by sliding your fingers under the skin, being careful not to pierce it. Spoon the ricotta mixture under the skin (about 4 tablespoons of stuffing per bird.) Truss the birds. Place the birds, breast side up, in a shallow roasting pan. Pour the white wine into the pan. Bake for 1 hour, or until the juices run clear when the hen is pierced in the thickest part of the thigh. Remove from the oven and serve with the pan juices spooned over the hens. Yield: 6 servings

I found this easy recipe for Cornish hens and prepare it often for my family. The glaze keeps the hens tender and moist, and the skin roasts to a golden glow. It's tasty, too. When the children are gone for the weekend, my husband and I enjoy this meal-perfect for two.

1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 Cornish game hens (20 to 24 ounces each)
2 tablespoons butter, melted, divided
1/4 cup apricot preserves
1 tablespoon honey
1 tablespoon grated onion
1/8 teaspoon ground nutmeg

Steps:

  • Combine the salt and cayenne. Rub a third of the mixture inside hens. Brush 1 tablespoon butter over hens; sprinkle with remaining seasoning mixture. Place on a rack in a shallow baking pan. Bake, uncovered, at 350° for 30 minutes., Meanwhile, in a saucepan, combine the preserves, honey, onion, nutmeg and remaining butter. Cook and stir until preserves are melted. Brush over hens. Bake 35-40 minutes longer or until golden brown and a thermometer reads 180°. Cover and let stand for 5-10 minutes before serving.

2 Cornish game hens (about 1 1/2 lbs each)
1 teaspoon fresh orange peel (grated)
1/4 cup orange juice concentrate (thawed, undiluted)
3 tablespoons lemon juice
2 tablespoons soy sauce
2 cloves garlic (crushed and minced)
1 tablespoon honey
1/2 teaspoon onion powder
1/4 teaspoon dried thyme
2 tsp. oil or non-stick cooking spray
1/2 cup onion (chopped)
Optional Garnish: fresh orange wedges
1 teaspoon cornstarch mixed with 1 teaspoon water (cold)

Steps:

  • Gather the ingredients. Preheat oven to 350 F.
  • Place game hens breast-side down ​on a cutting board and cut in half along the backbone. Remove skin and trim excess fat.
  • In a small microwave-safe dish, combine orange peel, lemon juice, orange juice concentrate, soy sauce, honey, garlic, onion powder, and thyme. Bring to boiling point in a microwave oven; set aside.
  • Lightly grease a baking dish or spray with cooking spray.
  • Divide chopped onion into 4 portions in baking dish; place hens bone-side down on onions.
  • Pour orange juice mixture over hens.
  • Bake hens in preheated oven for 45 minutes, basting every 10 to 15 minutes with cooking juices. If they brown too quickly, cover them loosely with aluminum foil.
  • When hens are done, remove from baking dish, onions and all, to warm dinner plates.
  • If desired, garnish with orange slices. Skim fat off juices in baking dish. If desired, thicken pan juices with a teaspoon of cornstarch mixed with 1 teaspoon of cold water. Serve juices on the side.
  • Serve with hot cooked rice and a green vegetable. Enjoy!

2 tablespoons (1/4 stick) butter, melted
1 8-ounce can crushed pineapple in juice, drained
1/2 cup pure maple syrup
1/4 cup fresh lemon juice
3 tablespoons Dijon mustard
1 tablespoon soy sauce
Chopped fresh parsley

Steps:

  • Preheat oven to 350°F. Arrange game hens, breast side up, in 13x9x2-inch metal baking pan. Brush hens with butter and sprinkle with salt and pepper. Bake uncovered 25 minutes.
  • Meanwhile, whisk crushed pineapple, maple syrup, lemon juice, mustard and soy sauce in medium saucepan to combine. Baste hens with some of pineapple mixture. Continue roasting until meat thermometer inserted into thickest part of thigh registers 180°F, basting occasionally with more pineapple mixture, about 45 minutes.
  • Transfer roasted game hens to serving platter. Tent with aluminum foil to keep warm. Scrape pan juices into remaining pineapple mixture. Bring to boil. Reduce heat to medium and simmer until pineapple sauce is reduced to 2/3 cup, stirring occasionally, about 8 minutes. Sprinkle hens with chopped fresh parsley. Serve hens warm, passing pineapple sauce separately.

Juice, from 1 can pineapple slices
1/4 teaspoon curry powder
1 teaspoon vinegar (any type)
2 tablespoons olive oil
2 cornish game hens, about 1 1/2 pounds each
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • For the glaze, cook pineapple juice over medium heat until it has reduced to 2 tablespoons. Stir in 2 tablespoons olive oil and curry powder and cook for 1 minute more. Take off heat and stir in vinegar. Preheat the broiler. Cut the hens in half, using either a cleaver or poultry shears, cutting around and discarding the backbones. Use the palm of your hand to flatten the halves slightly. Brush hens with 2 tablespoons of olive oil and season with salt and pepper. Place the hen halves, skin side down, on a broiler pan and broil for about 5 inches from the heat source for 10 minutes. Brush the hens with the glaze. Turn skin side up and broil for 5 minutes. Brush liberally with glaze and continue to broil for about 5 minutes longer, until the thigh meat juices run clear when pierced with a knife and the skin is nicely browned.

2 - 8 cornish game hens
1/2 c liquid honey
1/2 c dijon mustard
1/4 c fresh lemon juice
1 tsp dry thyme
1 tsp salt
1/2 tsp pepper

Steps:

  • 1. Thoroughly wash Cornish game hens. Combine the rest of the ingredients. Place the clean hens in a extra large Ziploc storage bag and pour combined ingredients over the hens. Seal bag and gently massage the bag to ensure that the marinade is well distrubed. Place the bag in a 9 x 13 in pan and place in the refridgerator for 12 - 24 hours. Occasionally turn the bag during the marinading time.
  • 2. Turn marinated cornish hens onto a very large rimmed cookie sheet. For easier clean up you may line the cookie sheet with parchment paper. Evenly arrange the hens. Place in a preheated 400 degree oven for 15 minutes. Then turn down the oven to 350 degrees. Continue to roast the hens for approximately l hour.
  • 3. Glaze the roasted hens with the following: 1/3 c. liquid honey 1/4 c. melted margarine/butter 1/3 c. dijon mustard Combine all the above very well and spread on top of the roasted hens. Sprinkle with salt and pepper. Roast for another 10 - 15 minutes.
  • 4. Cover the roasted cornish hens with aluminum foil and allow to rest for 10 min. Arrange on serving platter. You make tuck around the hens sprigs of curley parsley and thin lemon wedges. Enjoy!

BOURBON GLAZED CORNISH HENS

These Bourbon Glazed Cornish Hens are so easy to make, but look like they took all day! Perfect for a smaller holidays or special occasion dinner!

2 Cornish Hens (typically about 2 - 2 1/2 pounds each)
Olive oil
Kosher salt, fresh black pepper
1 tablespoon poultry seasoning, divided
1 tablespoon garlic powder, divided
1/4 cup bourbon
1/2 cup sweet chili sauce
2 tablespoons soy sauce

Steps:

  • Preheat the oven to 450 degrees.
  • Place the Cornish hens on a baking sheet that's been lined with aluminum foil. Tie or truss the Cornish hens by wrapping a pieces of kitchen twine around the breast to tuck in the wings and another piece around the legs to tuck them in close the the body of the chicken. Refer to the photos in the post for a visual of how the hen looks when it's trussed. Season the hens generously with salt and black pepper and then divide the poultry seasoning and garlic powder between the two birds. Rub just a little bit of olive oil onto each bird and then place into the oven.
  • Roast the Cornish hens for 15 minutes, then remove them from the oven and reduce the heat to 400 degrees.
  • While the chickens are in the oven, combine the ingredients for the glaze in a small saucepan and bring to a boil. Reduce the heat to a simmer and cook for 7-8 minutes until the glaze haas thickened.
  • After the hens have roasted for 15 minutes, glaze them generously with the bourbon glaze and then place them back into the oven for another 10 minutes until the temperature on the thighs reach 165 degrees.
  • Remove the Cornish hens from the oven, tent loosely with foil and let rest for 10 minutes.
  • Serve the chicken whole or cut down the center in half and serve.

3 tablespoons olive oil
1 large clove garlic (minced)
1 1/2 teaspoons fresh thyme leaves or about 1/2 teaspoon dried leaf thyme
1 medium onion (quartered and sliced)
1 pound small red or gold potatoes (scrubbed and cut in 1- to 2-inch chunks)
3 medium carrots (sliced crosswise then lengthwise into strips about 3 inches long and 1/2 inch wide)
Salt (to taste)
Pepper (to taste)
2 Cornish game hens
Optional: 2 teaspoons fresh chopped chives or parsley
Optional: 1 lemon (cut up)
Optional: 1 small onion (cut into chunks)
Optional: Sprigs of fresh herbs

Steps:

  • Gather the ingredients.
  • Preheat the oven to 375 F.
  • Melt butter with olive oil in a large, heavy skillet over low heat. Add the minced garlic and herbs. Remove about 1 1/2 to 2 tablespoons of the mixture and set aside.
  • Add the onion slices , potatoes, and carrots to the skillet. Sprinkle with salt and pepper. Toss well to coat the vegetables with the butter, oil, and herbs; cook, stirring, for about 2 minutes.
  • Sprinkle the cavities of the game hens with salt and pepper.
  • Rub the reserved herb mixture all over the hens. If desired, put pieces of lemon and onion and some herb sprigs in the cavities.
  • If the skillet is not oven safe, move the vegetable mixture to a baking dish or pan.
  • Arrange the hens on the vegetables, and place in the oven. Roast for about 1 hour and 15 minutes, or until the hens register at least 165 F in the meatiest part of the thigh, not touching bone.
  • If the hens are browning too quickly, cover loosely with foil near the end of the cooking time. If they don't brown enough, turn the broiler on for 2 to 3 minutes before you take them out of the oven.
  • Serve and enjoy!
