Categories     appetizer

Time 40m

Yield 6 servings

Number Of Ingredients 14

6 slices whole-wheat sandwich bread
2 (15-ounce) cans salmon, drained, skin and bones removed
2 eggs, lightly beaten
5 scallions
1/2 cup finely chopped canned water chestnuts
1/4 cup finely chopped fresh cilantro leaves
1/2 teaspoon freshly ground black pepper
3 teaspoons olive oil, divided
Creamy Ginger-Sesame Sauce, recipe follows
1/2 cup nonfat plain yogurt, or 6 tablespoons nonfat Greek-style yogurt
2 tablespoons mayonnaise
1 1/2 tablespoons freshly grated ginger
1 teaspoon toasted sesame oil
1 teaspoon low-sodium soy sauce

Steps:

  • Remove crusts from the bread, break into pieces, and process in a food processor until you get a fine bread crumb. In a large bowl, flake apart the salmon with a fork. Add the egg and mix well. Finely chop 4 of the scallions and add to the bowl. Add the water chestnuts, cilantro, pepper, and the bread crumbs and mix well. Shape the mixture into 12 patties.
  • In a large nonstick skillet, heat 1 1/2 teaspoons of olive oil over a medium heat. Add 6 patties and cook for 5 minutes on each side. Transfer the cooked patties to a plate and cover with foil to keep warm. Add the remaining 1 1/2 teaspoons olive oil to the pan, and cook the rest of the salmon cakes, 5 minutes on each side.
  • Chop the remaining 1 scallion. Serve salmon cakes with the sauce and garnish with scallion.
  • If using regular yogurt place the yogurt in a strainer lined with a paper towel. Put the strainer over a bowl and place in the refrigerator to drain and thicken for 30 minutes.
  • Place drained yogurt or Greek-style yogurt into a small bowl. Add mayonnaise, ginger, sesame oil, and soy sauce. Whisk until smooth.

SALMON CAKES WITH GINGER-SESAME SAUCE

Salmon Cakes With Ginger-Sesame Sauce image

By FN chef Ellie Krieger published in the USA Weekend magazine. This recipe relies, pretty much, on pantry ingredients. If I did not have fresh ginger for the sauce, I would mix mayonnaise with Thai chili sauce or sriracha.

Time 45m

Yield 6 serving(s)

Number Of Ingredients 13

6 slices whole wheat sandwich bread
2 (15 ounce) cans salmon, drained and picked over for skin and bones
2 large eggs, slightly beaten

1/2 teaspoon ground black pepper
3 teaspoons olive oil
6 tablespoons greek-style plain fat-free yogurt
2 tablespoons mayonnaise
1 1/2 tablespoons grated fresh ginger
1 teaspoon toasted sesame oil
1 teaspoon low sodium soy sauce

Steps:

  • Remove the crusts from the bread tear into pieces and process in a food processor until you get fine bread crumbs. (I just put in a bowl and processed with my hand blender, worked just fine). You will have about 3 cups of soft crumbs.
  • In a large bowl, flake apart the salmon with a fork. Add the eggs and mix well.
  • Finely chop 4 of the scallions (white and green parts) and add to the bowl.
  • Add the water chestnuts, cilantro pepper and the bread crumbs and mix well.
  • Shape into 12 patties.

  • Repeat with remaining oil and salmon patties.
  • Sauce: if you do not have Greek-style yogurt, use 1/2 cup regular non-fat yogurt but drain it in a coffee filter for 30 minutes.
  • Place all ingredients in a small bowl and whisk until smooth.
  • Serve the patties with the sauce on the side, and garnished with the remaining chopped scallion.

GINGER SALMON WITH SESAME CUCUMBERS - DELISH

From delish.com
  • Make sesame cucumbers: Put the sesame seeds in a small dry skillet over medium heat. Cook, tossing, for 2 to 3 minutes, until toasted. Let cool. In a medium bowl, combine the cucumber, jalapeño, lemon juice, oil, and salt. Stir in dill and sesame seeds.Put the whole salmon fillet in a large ziptop plastic bag. In a small bowl, combine the soy sauce, honey, orange juice, and ginger. Reserve 3 tablespoons of the mixture and set aside. Pour the remaining mixture over the salmon. Squeeze out the air and seal the bag. Refrigerate for 15 minutes to let marinate (flip the salmon over halfway through so both sides marinate evenly).
  • Preheat the broiler (with the oven rack about 4 inches from the top). Line a rimmed sheet pan with aluminum foil. Place the salmon on the prepared pan and discard the marinade. Broil for about 5 minutes, or until the top of the salmon begins to char. Pull the pan out and spoon half of the reserved soy sauce mixture over the salmon. Broil for 1 minute, then add the remaining soy mixture and broil for 1 minute more. The top should be nice and charred but not burned.
  • You can check for doneness by inserting the tip of a paring knife into the thickest part of the salmon. If the salmon flakes easily but still has a slightly darker orange center (medium-rare to medium), then it’s done. If not, or if you like your salmon cooked more, then broil 1 to 2 minutes more. Cut into 4 pieces and serve with the sesame cucumbers.
