CREAM CHEESE BROWNIES

These brownies offer a small taste of heaven. You have to follow the directions, otherwise they won't be so heavenly.

Number Of Ingredients 15

4 ounces cream cheese, at room temperature
1 egg yolk, at room temperature
1 teaspoon vanilla
2 tablespoons sugar
1 tablespoon flour
5 tablespoons sweet butter
5 ounces semisweet chocolate or 5 ounces bittersweet chocolate
2 eggs, at room temperature
3/4 cup sugar
1/2 cup flour
1 teaspoon vanilla
1/2 teaspoon baking powder
1/4 teaspoon kosher salt
1/2-1 cup semi-sweet chocolate chips
1/2 cup coarsely chopped nuts

Steps:

  • Preheat the oven to 325°F.
  • Lightly grease a square 8X8-inch pan.
  • To make the cream cheese layer, put the cream cheese in a mixer bowl and mix with the paddle attachment until it's smooth.
  • Add the rest of the cream cheese layer ingredients, beating well and scraping down and of the batter that dares try to escape up the sides of the bowl.
  • To make the brownie layer, melt the butter and the chocolate together until smoothly melted.
  • Put aside and let come to room temperature.
  • Be patient, it's worth it.
  • In a separate bowl from the cream cheese mixture, mix the eggs and the sugar until it's thick and a gorgeous lemon color.
  • Add the chocolate mixture and mix well until combined.
  • Again, scrape down the sides of the bowl.
  • Add the flour, vanilla, baking powder, salt and the chocolate chips, mix well until combined.
  • Pour half the chocolate mixture into the prepared pan.
  • Dollop the cream cheese mixture over that.
  • Don't worry if it doesn't cover the chocolate. It won't.
  • Add the remaining chocolate mixture.
  • Take a knife and gently draw it through the batters, from left to right and from top to bottom, making a checkerboard pattern.
  • Don't allow the mixtures to combine, be careful.
  • Sprinkle with the nuts.
  • Bake in the oven until the sides, but not the tops, begin to brown, about 25 to 30 minutes.
  • Don't wait until a tester comes out clean, if you do then you have overbaked and basically murdered the brownies.
  • Set aside to cool for about 10 minutes, cut into 12 or 16 brownies, cover and refrigerate.

2 cups semisweet chocolate chips
One 14-ounce can sweetened condensed milk
1/2 cup peanut butter
1/2 cup kettle-cooked chips, lightly crushed
1/2 cup thin pretzel sticks, lightly crushed

Steps:

  • Line an 8-inch square baking pan with aluminum foil. Coat the foil with cooking spray.
  • In a medium saucepan over low heat, combine the chocolate chips and sweetened condensed milk. Cook, stirring, until melted and smooth, 6 to 8 minutes. Pour the mixture into the prepared baking pan and spread to even out the surface. Top with spoonfuls of the peanut butter. Using a skewer or butter knife, swirl the peanut butter into the chocolate mixture. Sprinkle over the crushed chips and pretzels. Let the fudge cool for 30 minutes on the counter, then lightly cover and refrigerate for 1 hour.
  • Lift the foil out of the pan and peel it from the fudge. Cut into small squares to serve.

3 large eggs

Steps:

  • Make the cheesecake layer: Preheat the oven to 350˚. Line a 9-by-13-inch baking pan with foil, leaving a 2-inch overhang on the two short sides; coat with cooking spray. Beat the cream cheese, sugar and egg in a medium bowl with a mixer on medium speed until smooth and fluffy, 2 to 3 minutes. Transfer 1/3 cup of the batter to a small bowl and stir in the cocoa powder and red food coloring until smooth; stir in the buttermilk. Set aside the two batters.
  • Make the brownie layer: Melt the butter in a medium saucepan over medium heat. Remove from the heat and let cool slightly. Stir in the sugar, eggs and vanilla until well combined. Stir in the flour, cocoa powder, salt and baking powder until smooth.
  • Spread the brownie batter in the prepared pan. Top with small spoonfuls of the plain cheesecake batter so most of the brownie is covered. Spoon the red cheesecake batter all over and gently swirl the cheesecake batters together with a skewer.
  • Bake until a toothpick inserted into the center of the brownies comes out clean, 35 to 40 minutes. Transfer to a rack and let cool completely in the pan. Lift out of the pan using the foil overhang. Cut into pieces.

Steps:

  • For the banana cake: Preheat the oven to 350 degrees F. Grease and flour a 9-inch round cake pan.
  • In the bowl of an electric mixer, combine the butter, brown sugar and granulated sugar. Mix on medium-high speed until light and fluffy, about 5 minutes.
  • Meanwhile, sift the flour, baking soda, baking powder, cinnamon and salt into a medium bowl. Set aside.
  • Add the bananas to the butter mixture and mix until combined. Let the mixer do the work of mashing for you. Add the eggs one at a time and mix until well combined. Mix in the yogurt and vanilla. Turn the mixer to low and add the dry ingredients until just combined. Do not overmix.

3/4 cup sifted all-purpose flour

1 cup chopped walnuts

Steps:

  • Butter and flour an (8-inch square) baking pan and preheat the oven to 350 degrees F.
  • In a small heavy saucepan melt the chocolate and butter over low heat, stirring until the mixture is smooth, and let the mixture cool completely. Into a bowl sift together the flour, baking powder, and salt. In a large bowl, using an electric mixer, beat the eggs. While still beating, add the sugar, a little at a time, and beat the mixture at high speed for 3 minutes, or until thick and pale.
  • Add in the chocolate mixture and the vanilla, and then add in the flour mixture, stirring until the mixture is blended well. Stir in the walnuts. Pour the batter into the baking pan, smoothing the top. Bake the brownies in the middle of the oven for 25 to 30 minutes, or until the brownie pulls away slightly from the sides of the pan, and a cake tester, inserted in the center, comes out with crumbs adhering to it. Let the brownies cool completely in the pan before cutting them into squares.

MISS BROWN'S PEANUT-PISTACHIO CARAMEL CORN

I add a mixture of nuts and sesame seeds (known as benne seeds in Gullah and Low Country cooking) to the buttery, sweet caramel corn.

Nonstick cooking spray, for the baking pans
15 cups popped popcorn (from 1/2 to 2/3 cup unpopped; see Cook's Note)
1 cup salted red-skinned peanuts
1 cup shelled pistachios
2 tablespoons sesame seeds
3/4 cup (1 1/2 sticks) unsalted butter
1 1/2 cups firmly packed light brown sugar
6 tablespoons light corn syrup
1 tablespoon creamy peanut butter
1 1/4 teaspoons fine sea salt
1 teaspoon vanilla extract
3/4 teaspoon baking soda

Steps:

  • Preheat the oven to 200 degrees F. Grease or butter two large, rimmed baking pans. Combine the popcorn, peanuts, pistachios and sesame seeds in a very large bowl or roasting pan.
  • Melt the butter in a medium saucepan over medium heat. Add the brown sugar, corn syrup, peanut butter and salt. Bring to a boil, stirring constantly, then cook until the mixture is completely emulsified and there is no visible melted butter around the edge of the pan, 1 to 2 minutes. Remove from the heat and stir in the vanilla and baking soda. (The mixture will puff up.)
  • Pour the mixture evenly over the popcorn mixture and toss well to coat. Divide the popcorn between the two prepared pans, spreading in an even layer. Bake the popcorn for 1 hour, stirring every 15 minutes and rotating the pans so it cooks evenly. Let cool in the pans, about 20 minutes. Break into pieces to serve.

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9- by 13-inch baking dish with 1 tablespoon of the butter.
  • For the batter: Heat a double boiler over medium heat. Add the butter and chocolate and stir until the chocolate has melted. Take off the heat and let cool slightly. Whisk in the brown sugar and eggs. Fold in the flour, walnuts and salt with a wooden spoon.
  • For the goat cheese mixture: Blend together the goat cheese, sugar and egg in a large bowl using an electric beater on low speed. Pour the brownie mixture into the baking dish, and then evenly disperse spoonfuls of the cheese mixture over the batter. With a knife, score the surface into a pattern. 4 ounces cream cheese, room-temperature

Steps:

  • Preheat oven to 350 degrees. Brush a 9-inch square baking pan with butter. Line bottom and two sides with a strip of parchment paper, leaving a 2-inch overhang on the two sides. Butter paper, and set pan aside. In a small bowl, whisk 1 cup flour, cocoa, baking powder, and salt; set aside.
  • Place 8 tablespoons (1 stick) butter and chocolate in a large heat-proof bowl set over (not in) a saucepan of gently simmering water. Heat, stirring occasionally, until smooth, 2 to 3 minutes; remove bowl from pan. Add 1 1/4 cups sugar; mix to combine. Add 3 eggs, and mix to combine. Add flour and cocoa mixture; mix just until moistened (do not overmix).
  • Prepare cream-cheese mixture: Whisk cream cheese with 2 tablespoons room-temperature butter. Whisk in 1/4 cup sugar, 1 egg, and 2 tablespoons all-purpose flour. Alternately spoon chocolate batter and cream-cheese mixture into pan; with the tip of a paring knife, swirl to marble.
  • Bake until a toothpick inserted in center comes out with a few moist crumbs attached, 50 to 60 minutes. Cool in pan for 30 minutes. Using paper overhang, lift brownies out of pan; transfer to a rack to cool completely (still on paper). On a cutting board, using a dampened serrated knife, cut into 16 squares.

SALTY PEANUT CHEWS

These sticky, chewy candies are positively addictive. They'll keep, covered in the refrigerator, for 1 week. They remind me of a candy I had, growing up in Canada, called 'eatmores' or something like that (a LONG time ago). If anyone remembers the name of this candy/confection, I'd love to know it. 3/4 cup smooth natural-style peanut butter
10 ounces milk chocolate chips
1 teaspoon pure vanilla extract

1 1/2 cups salted peanuts (skinless)

Steps:

  • Butter a large baking dish.
  • In a medium saucepan, combine the corn syrup, peanut butter and chocolate chips.

  • Continue stirring constantly while boiling for 2 minutes.
  • Remove from heat and stir in vanilla extract, salt, oats and peanuts.

7 tablespoons cocoa (not quite 1/2 c)
4 eggs
1 cup flour
1 teaspoon baking powder

1 egg
4 ounces cream cheese, softened
2 tablespoons sugar
2 tablespoons flour

Steps:

  • Preheat oven to 350.
  • Combine butter, sugar, and cocoa in large mixing bowl.
  • Add eggs, one at a time. Blend after each addition.
  • Add remaining ingredients and mix until just combined.
  • In another bowl, combine ingredients for cream cheese layer. Mix until smooth.
  • In 9 x 13 greased baking dish, pour half of brownie batter. Smooth to even.
  • Spoon the cream cheese layer into the baking dish. This shouldn't be an easily spreadable layer--we just dollop and try to smooth it out for a more even distribution.
  • Use butter knife to slightly marble into bottom layer.
  • Top with remaining brownie mixture. Spread as evenly as you can, then tap pan lightly on counter to level batter.
  • Bake 20-25 minutes (some ovens require a full 30 to completely bake), until the top is firm to the touch. Baking too long will result in dry brownies.
  • Allow to stand 15 minutes before cutting.

8 ounces softened cream cheese
3 cups powdered sugar (may need 1/4 cup more)
1 teaspoon vanilla extract
1 cup peanut butter
1/2 teaspoon salt
1 1/2 cups semi-sweet chocolate chips
peanuts (optional,for decoration)

Steps:

  • Prepare a baking sheet by lining it with aluminum foil, set aside.
  • Combine the softened cream cheese, 3 cups powdered sugar, peanut butter, vanilla, and salt in the large bowl of an electric mixer.
  • Mix the candy on medium speed for several minutes until the mixture is well-combined and homogenous.
  • If the dough appears to be too sticky, add the extra powdered sugar and mix until it is somewhat stiff but still pliable and not dry.
  • Using a teaspoon or a candy scoop, form the candy into small balls (about 1inch diameter or less) and place them on the prepared baking sheet.
  • Place the candy in the freezer or refrigerator to chill until set, about 20 minutes in the freezer or 1 hour in the refrigerator.
  • Once you are ready to dip the balls, melt or temper the chocolate according to your preference.
  • Make sure to melt the chocolate in short intervals in the microwave or over a double burner, so that it does not overheat.
  • Dip the peanut butter balls into the melted chocolate using dipping tools or two forks.
  • Return the dipped balls to the baking sheet, and while the chocolate is still wet, top each ball with a peanut half.

1/2 cup oil
1/4 cup water
1/2 cup chopped salted peanuts

1/3 cup salted peanuts
knotts berry farm red raspberry flavored syrup
whipped cream (optional)

Steps:

  • Preheat oven to 350°F
  • Butter a 9" round cake pan.
  • In mixing bowl, stir together the first 5 ingredients.
  • Beat for 50 strokes to blend.
  • Pour into prepared baking dish and bake for 35-40 minutes or until knife inserted in middle comes out clean.

1 lb cream cheese, softened
1/3 cup sugar
1 large egg yolk
1 1/2 teaspoons vanilla extract
1 1/3 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon salt
16 tablespoons unsalted butter, cut into pieces
8 ounces unsweetened chocolate, chopped
1 cup raspberry jam
2 1/2 cups sugar
5 large eggs
1 tablespoon vanilla extract

Steps:

  • PREPARE FILLING Adjust oven rack to middle position and heat oven to 350°F Line 13- by 9-inch baking pan with foil, allowing excess to hang over pan edges. Grease foil. Process cream cheese, sugar, egg yolk, and vanilla in food processor until smooth.
  • MIX BATTER Combine flour, baking powder, and salt in bowl. Microwave butter and chocolate in large bowl, stirring occasionally, until smooth, 1 to 2 minutes. Whisk in ½ cup jam; let cool slightly. Add sugar, eggs, and vanilla to chocolate mixture, stirring until combined. Whisk in flour mixture until incorporated.
  • LAYER FILLING Microwave remaining jam until warm, about 30 seconds; stir until smooth. Scrape half of batter into prepared pan. Dollop filling over batter and spread into even layer. Dollop warm jam over filling and, using toothpick, swirl jam through filling. Spread remaining batter evenly over filling.
  • BAKE BROWNIES Bake until toothpick inserted in center comes out with few wet crumbs attached, 50 to 60 minutes. Cool in pan on wire rack for at least 2 hours. Using foil overhang, lift brownies from pan and cut into 1½-inch squares. Serve. (Brownies can be refrigerated in airtight container for 2 days.).
