Time 1h20m

Yield 8 to 10 servings

Number Of Ingredients 11

One 16-ounce bag stuffing cubes
6 tablespoons unsalted butter, plus more for greasing the pan and topping
1 pound fresh sage sausage, casings removed
1 medium onion, chopped
2 cooking apples, such as Gravenstein, Rome, or Golden Delicious, peeled, cored, and chopped
1 to 2 ribs celery with leaves, chopped
Kosher salt
3 cups chicken broth, homemade or low-sodium canned

1/2 cup walnut pieces, toasted (see Cook's Note)
2 large eggs, beaten

  • Preheat the oven to 325 degrees F.
  • Put the stuffing cubes in a large bowl and set aside. Butter a 3-quart casserole dish.

Cook until the top is crisp and golden, about 20 minutes more.

HOMEMADE PORK AND APPLE SAUSAGES

Homemade Pork and Apple Sausages image

Make and share this Homemade Pork and Apple Sausages recipe from Food.com.

Provided by Phyllis Elias

Categories     Pork

Time 50m

Yield 12 large sausages, 4-6 serving(s)

Number Of Ingredients 11

1 kg pork belly
1 large onion
1 large cooking apple
2 teaspoons marjoram
2 teaspoons dried sage
2 teaspoons dried herbs
grated nutmeg (about an eigth of a nut)
ground black pepper
ground sea salt
100 g white breadcrumbs
sausage, skin (my friendly butcher lets me buy some from them)

Steps:

  • First make the breadcrumbs in a food processor, so they are fine.
  • Mince (or grind) the pork, then add the onion to the grinder, and finally the apple (peeled and cored). Add all the herbs and nutmeg and salt and pepper to taste.
  • Fill your sausage filler (either machine or hand operated one) and put the skins over the end of the nozzle.
  • Fill slowly so that the skins do not burst, and twist the finished sausages into the required size.
  • Since nothing has been pre-frozen, these will freeze well.
  • Various adaptations can be made, by adding either sun-dried tomato puree, or garlic puree for instance.
  • Prior to cooking, pierce the skins to prevent bursting.

SMOKED SAUSAGE AND APPLES

Smoked Sausage and Apples image

This is a real easy way to fix smoked sausage. I do it in the microwave and usually serve it with a green veggie and corn bread.

Provided by MsSally

Categories     One Dish Meal

Time 10m

Yield 4 serving(s)

Number Of Ingredients 5

1 (16 ounce) package smoked sausage (I use turkey sausage)
3 -4 cups granny smith apples (sliced)
1 cup onion (roughly chopped)
1/4 cup brown sugar
1/4 cup water

Steps:

  • Slice smoked sausage into 1 inch coins, and place in a microwavable bowl with a lid.
  • Add apples and onions.
  • Sprinkle brown sugar over all. Add water. Cover.
  • Microwave on high for about 5 mins or till apples are tender. (I use my fresh vegetable button for hard veggies).
  • May season with salt and pepper if care to. We normally don't.
  • Note: If you do not have a bowl with lid that will go into microwave, you may use plastic wrap, just be sure to vent it, by folding in one corner of wrap to make a little hole.

LENTIL SOUP WITH SMOKED SAUSAGE AND APPLES

Lentil Soup With Smoked Sausage and Apples image

Flavored with apple, sausage and mustard, this slightly creamy lentil soup strikes a nice balance between delicate and hearty. Small green lentils, or French lentils or lentils du Puy, are khaki-colored legumes that have a peppery flavor and keep their shape when cooked instead, which gives this soup an appealing texture. You can also use black lentils or easier-to-find brown lentils, but keep in mind that brown lentils will fall apart as they cook, creating a thicker stew. This soup takes only a few minutes to throw together, and most of the time is spent in hands-off simmering time, putting it within reach for a weeknight. It's never necessary to soak lentils, as they cook relatively quickly. (You can find a slow cooker version of this recipe here.)

Provided by Sarah DiGregorio

Categories     dinner, soups and stews, main course

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 16

2 tablespoons unsalted butter
1 large yellow or red onion, finely chopped
Kosher salt and black pepper
2 tart-firm apples, such as Honeycrisp, peeled and diced
3 celery stalks, chopped into 1/2-inch pieces
6 garlic cloves, finely chopped
1 fresh sage sprig, leaves chopped, or 1/2 teaspoon dried sage
1 fresh thyme sprig, leaves chopped, or 1/2 teaspoon dried thyme
1 1/2 cups/12 ounces dry hard cider
3/4 pound smoked sausage, such as kielbasa or Andouille, sliced into 1/2-inch-thick coins
1 1/2 cups/10 ounces dried small green lentils (also called French lentils or lentils du Puy)
1/4 teaspoon ground nutmeg
2 teaspoons cider vinegar
1/4 cup sour cream
2 teaspoons Dijon mustard
4 to 6 scallions, thinly sliced for garnish

Steps:

  • Melt the butter in a large Dutch oven over medium-high heat. Add the onion, season with salt, and cook, stirring, until the onion is translucent, about 5 minutes. Add the half the chopped apples, and cook, stirring until softened, adjusting the heat as necessary to avoid scorching, about 5 minutes.
  • Add the celery, garlic, sage and thyme, and stir to combine. Pour in the cider and let it come to a bubble. Add the sausage, lentils, nutmeg and 4 cups water to the pot. Season with 1 teaspoon salt and a generous amount of pepper. Let the soup come to a boil, then decrease the heat to maintain a low simmer. Cover the pot and cook until the lentils are tender, 35 to 40 minutes.
  • Just before you are ready to eat, add the vinegar. Stir together the sour cream and mustard, then stir the mixture into the soup. Taste and add more salt and pepper if necessary. Serve in bowls topped with the scallions and remaining chopped apples.

SHEET-PAN SAUSAGES WITH CARAMELIZED SHALLOTS AND APPLES

Sheet-Pan Sausages With Caramelized Shallots and Apples image

In this rustic sheet-pan dinner, apples and shallots roast slowly alongside pork sausage, becoming fragrant and caramelized in the process. A quick toss with whole-grain mustard and apple cider vinegar adds a savory edge, making the apple and shallot mixture almost reminiscent of chutney. This recipe works equally well with both sweet and hot pork sausage, as well as any crisp apples, though a mix of red and green apples looks particularly nice. Serve with French green lentils and a green salad, with plenty of Dijon mustard on the side.

Provided by Lidey Heuck

Categories     dinner, easy, weekday, sausages, main course

Time 50m

Yield 4 servings

Number Of Ingredients 9

6 shallots, trimmed on both ends and peeled (about 6 ounces)
2 crisp apples (preferably one tart, like Granny Smith, and one sweet, like Fuji)
1 tablespoon olive oil, plus more as needed
Kosher salt and black pepper
1 pound sweet or hot Italian sausages
3 fresh rosemary sprigs
1 teaspoon whole-grain mustard
1 to 2 teaspoons apple cider vinegar, to taste
Chopped fresh parsley, for serving (optional)

Steps:

  • Heat the oven to 425 degrees. Cut the shallots lengthwise into 1/2-inch-thick wedges. Core the apples and cut into 1/2-inch-thick wedges. Place the shallots and apples on a sheet pan, drizzle with the 1 tablespoon olive oil, sprinkle with salt and pepper, and toss to coat. Roast the mixture for 10 to 15 minutes, until the shallots are just starting to brown at the edges.
  • Meanwhile, place the sausages on a plate. Using a fork, prick a few holes in each sausage. Drizzle the sausages with olive oil and toss to coat.
  • Add the rosemary and mustard to the pan with the apples and shallots, and toss, spreading everything out into one even layer. Arrange the sausages on the pan, evenly distributed, and roast for 25 to 30 minutes, flipping the sausages and tossing the apples and shallots with the juices released from the sausages halfway through, until the sausages are browned and cooked to 160 degrees and the shallots are tender and caramelized.
  • Transfer the sausages to a serving platter and discard the rosemary sprigs. Pour the vinegar over the apples and shallots, and toss well, scraping up any browned bits from the pan. Transfer to the serving platter with the sausages, sprinkle with parsley, if using, and serve immediately.

SAUSAGE AND APPLES, NORMANDY-STYLE

Sausage and Apples, Normandy-Style image

Calvados is the famous apple brandy from Normandy. A well-stocked liquor store will generally have it on hand, but you can substitute applejack brandy (or even a good fresh apple cider.) "I can buy boudin blanc in many places in New York," Joseph says, "but depending on where you live, it may not be so easy for you. If I had to substitute, I suppose I would use bockwurst, which is a similarly, delicately flavored German veal sausage. Potatoes mashed with butter and cream is what we always eat with this."

Provided by Food Network

Categories     appetizer

Time 1h25m

Yield 4 servings

Number Of Ingredients 6

3 or 4 links (about 1 pound) fresh French white sausage (boudin blanc) or bockwurst, cut into 3/4-inch slices
4 small Granny Smith or other firm, tart apples, about 1 1/2 pounds, peeled, cored, halved, and cut into 1/4-inch crosswise slices
Ground cinnamon
1/4 cup Calvados, applejack or good apple cider
1/4 cup heavy cream
Chopped fresh parsley leaves, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large cold skillet, arrange the sausage slices in 1 layer. Set over medium-high heat, and cook, turning the slices once or twice until they are crisp and nicely browned on both sides, about 10 minutes. Remove from the heat and set aside.
  • In a 2-quart casserole, arrange a layer of about 1/4 of the sausage slices. Cover the sausage with a layer of about 1/4 of the apple slices. Sprinkle lightly with cinnamon. Continue in this manner to make 4 layers, ending with the apple slices.
  • Stir the Calvados into the skillet in which the sausage was browned, scraping up any crusty, brown bits that cling to the bottom of the pan. Stir in the cream until well blended, Pour this mixture evenly over the casserole.
  • Cover, and bake for 1 hour until the apples have cooked down and the mixture is bubbling. Sprinkle with parsley before serving.

SAUSAGE AND APPLE PIE

Sausage and Apple Pie image

Provided by Jason Black

Categories     Main course     Main Dish

Yield 1 (One) 9-inch deep-dish pie

Number Of Ingredients 11

1 recipe double Cheddar Cheese Crust (See Recipe Notes for links to a traditional and a gluten-free version)
1 pound (454 grams) ground pork sausage (cooked and drained)
2-3 tart apples (such as Granny Smiths) (cored and sliced or roughly chopped)
2-3 sweet apples (cored and sliced or roughly chopped)
1/4 teaspoon (a pinch) salt
1 cup (248 grams) apple juice or cider
1/3 cup (73 grams) brown sugar, packed
1/2 teaspoon dried thyme
1/4 teaspoon fresh diced rosemary
1/4 teaspoon allspice
1 egg (plus 2 tablespoons (30 grams) water, fork beaten)

Steps:

  • Cook the sausage and set it aside.
  • Place the apples, salt, juice or cider, brown sugar, thyme, rosemary, and allspice in a sauté or fry pan and cook on medium-low heat until you can just start to put a fork into the apples. Remove the pan from the heat and set it aside. Reserve the juice.
  • Pour the juice into a small saucepan. If you have less than a cup, add more juice or cider to make 1 cup, then turn the heat to low and cook until the juice has reduced in amount to about one quarter its amount and has nearly caramelized. Be careful not to let it burn. This will take about 10 to 12 minutes.
  • Spoon the sausage into the apple mixture, pour over the reduced cider, and mix well.
  • Adjust the salt to taste and let the filling cool.
  • Preheat the oven to 400°F (205°C). Roll out the bottom crust and place in your pie pan. Add the filling.
  • Roll out the upper crust and place it on top. Seal the edges, crimp, and vent.
  • Brush the pie with egg wash.
  • Bake for 40 minutes. Give the pie two more egg washes at 10-minute intervals during the first 20 minutes of the bake.
  • Let the pie cool for 15 minutes or more before serving.
