2 tablespoons vegetable oil, like soy or peanut
2 boneless, skinless chicken breast halves, about 6 ounces each
Kosher salt and freshly ground black pepper
Juice of 1/2 lime (about 1 tablespoon)
3 tablespoons chicken broth, homemade or low-sodium canned
2 teaspoons finely grated ginger
1/4 cup packed fresh basil leaves, torn
2 tablespoons packed fresh mint leaves, torn

Steps:

  • Heat the oil in a medium skillet over medium-high heat until shimmering. Season both sides of the chicken breasts with salt and pepper, and place them skin side down in the pan. Cook, turning once, until firm to the touch, about 5 minutes per side. Transfer the chicken breasts to a plate.
  • Add the lime juice to the skillet, and scrape up any browned bits that cling to the pan with a wooden spoon. Add the chicken broth and ginger, and bring to a boil. Off the heat, add the basil and mint to the pan and swirl the pan to combine.
  • Divide the chicken between the 2 plates and spoon the herb sauce over the chicken. Serve.

2 tablespoon olive oil
1 tablespoon butter
1 3-pound chicken
Salt and freshly ground black pepper
1 medium carrot, peeled and minced into ¼-inch cubes
2 large shallots, peeled and minced
2-inch piece of ginger, peeled and minced
4 large shiitake mushrooms, tops only (use the stems for stock or discard), roughly chopped
1 small piece licorice stick, roughly chopped then ground to a powder
¼ tablespoon amchur (sour mango powder) or 1 teaspoon lemon juice
6 baby carrots, peeled, or 1 medium carrot, peeled and cut into strips
¾ cup white port or sweet white wine
1 cup rich chicken stock
Lemon juice to taste.

Steps:

  • Preheat the oven to 500. Place the oil and butter in a Dutch oven or heavy casserole, and turn the heat to high. Season the chicken on both sides with salt and pepper.
  • When the butter foam subsides, add the chicken, skin-side down, and brown well on both sides, for about 8 to 10 minutes, turning once.
  • When the chicken is browned, tuck the minced vegetables and ginger and chopped mushrooms underneath the pieces, and dust the tops with 1/2 teaspoon licorice powder and the amchur powder or lemon juice. Top with the baby carrots or carrot strips.
  • Add the port or wine, and cook 1 minute, then add the stock and transfer the casserole to the oven. Roast 5 minutes, then remove the breast and wing-breast pieces; place them on a warm platter. Roast another 10 minutes, then remove the casserole from the oven and place on top of the stove; return the set-aside white meat to the pot.
  • Cook 1 minute over high heat, then taste and add more salt and pepper if necessary. Sprinkle with enough lemon juice to balance the sweetness of the licorice, about a tablespoon, and serve.

1 teaspoon finely grated (with a rasp) peeled fresh ginger
1/2 teaspoon finely grated (with a rasp) garlic

Steps:

  • Set a steamer rack inside a wide 6- to 8-quart pot and fill bottom with water (not above rack), then bring to a boil.
  • Arrange chicken in 1 layer in a shallow heatproof bowl small enough to fit just inside pot.
  • Steam chicken in bowl on rack, covered with lid, until just cooked through, about 25 minutes. Remove bowl from pot using tongs. When chicken is cool enough to handle, coarsely shred, discarding skin and bones. Reserve liquid in bowl.

3 tablespoons vegetable oil, divided
2 cups broccoli florets
1 cup julienned carrots
1 cup sliced fresh mushrooms

4 boneless skinless chicken breast halves, 8 ounces each
kosher salt
fresh ground black pepper
1 piece fresh gingerroot, peeled (5-inch-long)
8 fat garlic cloves
4 jalapeno peppers
1 quart chicken broth
3 tablespoons soy sauce
2 tablespoons dark brown sugar
2 teaspoons fish sauce
cooked rice, for serving
sesame oil, for drizzling
1 bunch roughly chopped basil, for serving
1 bunch roughly chopped cilantro, for serving
1 bunch thinly sliced scallion, for serving
1 English cucumber, thinly sliced, for serving

Steps:

  • Cut each chicken breast in half crosswise and season with salt and pepper.
  • Slice about an inch of ginger root into thin rounds and place in a large pot. Coarsely chop remaining ginger and place in a blender. Thinly slice 2 garlic cloves and add to pot.   • In a small bowl, stir together the soy sauce and brown sugar until sugar mostly dissolves. Set aside. To the mixture in blender add fish sauce and lime juice along with 1/4 cup broth from pot. Puree, if necessary adding a little more broth to help mixture move in blender. Taste and add a pinch of salt and more lime if needed.
  • When chicken is done, transfer to a cutting board and slice. Remove garlic and pepper from broth and discard, if you like. To serve, heap rice in 4 shallow bowls and top with chicken slices. Spoon several tablespoons broth over chicken and rice, then drizzle with sweet soy sauce and sesame oil. Sprinkle on the herbs, scallions and cucumber. Serve garlic-chili-ginger sauce on the side; have additional sesame oil and sweet soy sauce on table for more drizzling.
