12 slices applewood smoked bacon or other thick-cut bacon
12 (U-10 size) sea scallops
2 tablespoons Essence, recipe follows
1/2 teaspoon salt
12 (6-inch) bamboo skewers, soaked in warm water for about 30 minutes
Freshly ground black pepper
2 tablespoons unsalted butter, at room temperature
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  • Place the bacon strips on the parchment paper and bake until just beginning to get golden around the edges but still very pliable, 12 to 15 minutes. Remove from the oven and set aside until cool enough to handle.
  • Preheat a grill to medium-high heat.
  • Season the scallops on all sides with the Essence and salt. Wrap each scallop in 1 piece of the bacon, securing it through the center with a bamboo skewer. Repeat with the remaining scallops.
  • When the grill is hot, brush the grates lightly with oil, then place the scallops on the grill and cook, turning frequently, until just cooked through about 7 minutes total. Transfer to a platter and sprinkle with freshly ground black pepper to taste. Garnish each scallop with a dab of the butter and serve immediately.

¾ cup maple syrup
¼ cup low sodium soy sauce
1 tablespoon Dijon mustard
12 large sea scallops, halved
12 slices smoked bacon, halved
24 toothpicks
2 tablespoons brown sugar

Steps:

  • Stir together maple syrup, soy sauce, and Dijon mustard in a bowl until smooth. Add the scallops, and toss to coat. Cover bowl with plastic wrap, and marinate at least one hour.
  • Preheat oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with a sheet of aluminum foil.
  • Arrange bacon pieces on baking sheet so they do not overlap. Bake in preheated oven until some of the grease has rendered out of the bacon; the bacon should still be very soft and pliable, about 8 minutes. Remove bacon from the baking sheet and pat with paper towels to remove excess grease. Drain or wipe grease from the baking sheet.
  • Wrap each scallop piece with a piece of bacon, and secure with a toothpick. Place onto baking sheet. Sprinkle the scallops with brown sugar.
  • Bake in preheated oven until the scallops are opaque and the bacon is crisp, 10 to 15 minutes, turning once.

5 cloves garlic, minced, divided
18 large sea scallops (1-1/2 lb.), cleaned
9 slices OSCAR MAYER Bacon, cut in half
2 large onions, thinly sliced
1 tub (8 oz.) PHILADELPHIA Cream Cheese Spread
1 tsp. paprika
1 Tbsp. hot pepper sauce
2 Tbsp. milk

Steps:

  • Mix lime juice, dill weed, pepper, oil and 1 Tbsp. garlic until blended. Pour over scallops in shallow glass dish; stir gently to evenly coat scallops with lime juice mixture. Refrigerate 30 min.
  • Heat grill to medium heat. Wrap 1 bacon piece around each scallop; secure with wooden toothpick.
  • Cook onions in large skillet on medium heat 20 min. or until caramelized. Meanwhile grill scallops 15 min. or until scallops are opaque and bacon is crisp, turning frequently. Remove and discard toothpicks.
  • Cook and stir cream cheese spread, remaining garlic, paprika, milk and hot pepper sauce in saucepan on medium heat 3 to 5 min. or until heated through.

  • Place bacon in a single layer on an ungreased rimmed baking sheet.
  • Bake at 350 degrees F for 7-10 minutes or until partially cooked and lightly browned.

12 scallops (fresh or frozen)
12 strips bacon
12 toothpicks
chives ( for garnish)
1 tbsp olive oil
1/2 med onion (finely chopped)
3-4 cloves garlic
2 tomatoes (chopped)
2 Tbsp cajun seasoning
1/4 cup cream cheese
1/2 cup shredded parmesan cheese ((not grated like the Kraft kind))
1/4 - 1/2 cup chicken stock (or veggie stock)
3 - 4 tbsp heavy cream (optional)
salt and pepper to taste

Steps:

  • Heat oil in a small pot. When its hot, throw in the onions and sauté for a few minutes. Then add the garlic and the tomatoes. Cook these for a bit until the tomatoes just melt into a sauce.
  • Turn the heat down to low. Add the cajun seasoning and the cream cheese and stir till the cheese melts. Add 1/4 cup of the chicken or veg stock. Then add the parmesan cheese and stir till it melts. It might get stringy, but just keep cooking it. It will melt into the sauce.
  • Puree the sauce with a hand held blender or in your blender until its very smooth and put it back into the pot. Add a bit more stock until the sauce reaches your desired consistency. Salt and Pepper to taste and keep covered and warm until your scallops are ready.
  • If your scallops are frozen, thaw them by putting the package in cold water. They will thaw pretty quickly. Make sure to remove the beard or little muscle on each scallop if there is one. Read the post above to learn how.
  • In the meantime, heat up a skillet and cook the strips of bacon only part way done. You can do this in the oven too if you like.
  • Heat your oven to 450 degrees.
  • To assemble, wrap a piece of bacon around each scallop and secure with a toothpick. Place on a parchment lined baking tray.
  • Drizzle with olive oil if desired and place in the hot oven for 3 - 4 mins and then flip them and cook for another 3 - 4 mins depending on the size of the scallop.
  • Remove from the oven and arrange on a serving platter with the sauce.

10 slices bacon
20 large sea scallops
1 cup whipping cream
2 tablespoons maple syrup
1 tablespoon Dijon mustard
finely chopped fresh chives

Steps:

  • Preheat oven to 350 degrees. Place bacon slices individually onto a baking sheet. Bake until a pale golden brown, about 8 minutes. It should still be flexible, not crisp. Cut slices in half crosswise and let cool.
  • Wrap one slice of bacon around the sides of each scallop and secure it with a toothpick. (They can be prepared 6 to 8 hours ahead. Just cover and refrigerate.).
  • Preheat oven to 400 degrees Place the scallops on a baking sheet and bake until cooked through, about 8 minutes.
  • While the scallops are cooking, boil the cream in a large skillet until it is reduced to about 3/4 of a cup, approximately 3 minutes. Keep an eye on the heat and lower to medium maintaining a steady reduction. Add mustard and maple syrup then boil for approximately another 4 minutes. Season with salt and pepper to taste.
  • Spoon sauce on a serving platter. Arrange scallops on the platter, sprinkle with chives and serve.

1/2 Tbsp butter
1 cup heavy cream
1/2 cup Parmesan, freshly grated
1/2 tsp olive oil
6 large scallops
Salt & pepper
Chopped chives for garnish

Steps:

  • In a medium skillet, cook chopped bacon over medium-high heat until crisp. Remove the bacon with a slotted spoon to a paper towel-lined plate to drain.
  • Add butter, cream, and Parmesan to the skillet with the bacon grease. Reduce the sauce over medium heat by half. Stir in the cooked bacon. Season with salt and pepper to taste. Keep warm over low heat.
  • In a separate skillet, heat 1/2 tsp olive oil over medium-high heat. Season scallops with salt and pepper. Once the pan is hot (make sure it's really hot!), add the scallops to the pan. Sear until golden brown on one side, approximately 1 minute, and turn over. Sear on the other side for 1 minute until golden brown. Remove to a paper towel-lined plate to drain.

  • To prepare the scallops, check for any firm muscle band still attached to the sides of the meat. It’s like a little tag that you can peel off. It’s safe to eat but becomes rubbery when cooked. Sometimes your fishmonger will have those already removed.
