This recipe uses a lower-fat version of a Chinese cooking technique called dry sauteeing.

1 pound asparagus
2 tablespoons peanut oil
2 tablespoons minced shallots
1 tablespoon sesame seeds
2 teaspoons soy sauce (low sodium, if desired)
Dash of toasted sesame oil
Freshly ground black pepper

Steps:

  • Trim tough ends from asparagus spears. Set spears aside.
  • Heat a 10-inch cast-iron skillet for about 2 minutes over medium-high heat. Add 1 tablespoon peanut oil and half of the asparagus in a single layer.
  • Cook for 3 to 4 minutes without turning. Shake pan occasionally. Turn, and cook 3 minutes more. Asparagus should be bright green with brown spots.
  • Add 1 tablespoon shallots and half the sesame seeds, and cook, shaking the pan to toss asparagus, for 1 to 2 minutes or until shallots are transparent. Do not let them burn.
  • Add half the soy sauce, sesame oil, and pepper, and cook 30 seconds. Transfer to a plate, and keep warm. Repeat with remaining asparagus. Keep warm until ready to serve.

Steps:

  • Fill a large saucepan with 1/2 inch of water and bring to a boil. Cook asparagus until tender-crisp, about 5 minutes. Drain, then rinse with cold water. Return pan to the stove over medium heat, pour in oil, and swirl around pan. Shake excess water off of the asparagus, and toss in oil with sesame seeds, and salt to reheat.

  • Prepare asparagus by snapping off tough ends and peeling if stalks are very thick.
  • Place asparagus in baking dish or pan sprayed with oil or lined with foil.
  • Sprinkle with sesame oil and salt to taste.
  • Place under preheated broiler for 10 minutes or until tender.
  • Sprinkle with sesame seeds 2-3 minutes before done to prevent them from burning.

1/2 lb fresh asparagus
3 tablespoons red wine vinegar
1 tablespoon dark sesame oil
1 tablespoon sesame seeds, Toasted (watch them carefully so they don't burn)

Steps:

  • Snap off tough ends of Asparagus. Remove scales if desired.
  • Cover & cook Asparagus in a small amount of boiling water for 2 minutes or until crisp-tender.
  • Drain & rinse with cold water (I throw some ice cubes on top of them to stop the cooking).
  • Combine Vinegar, Sesame Oil, & Sesame Seeds in large Zip-Lock bag.
  • Add Asparagus.
  • Chill 2 hours, turining occasionally.
  • I double the recipe with 1 lb of Asparagus. Sometimes I cut back on the Red Wine Vinegar if I cooked the Asparagus too long.

SESAME GRILLED ASPARAGUS

1 pound asparagus
2 tablespoons dark sesame oil
1 tablespoon soy sauce
1 clove garlic, minced
2 tablespoons sesame seeds
Salt and black pepper

Steps:

  • In a shallow pan, soak skewers in cold water for 1 hour, then drain and set aside.
  • Preheat grill to high. Snap off the woody bases of the asparagus and discard. Skewer 4 or 5 asparagus spears together, using the toothpicks or 2 bamboo skewers, forming a raft shape.
  • In a small bowl, combine the sesame oil, soy sauce, and garlic and stir with a fork to mix. Brush this mixture on the asparagus rafts on both sides. Season the asparagus with a little salt and lots of pepper.
  • When ready to cook, place the asparagus rafts on the hot grate and grill until nicely browned on both sides, 2 to 4 minutes. Sprinkle with the sesame seeds as they grill. You can serve the asparagus as rafts or unskewered.

ASPARAGUS SPEARS WITH SESAME

3 tablespoons sesame oil
2 tablespoons white wine vinegar
2 tablespoons soy sauce
2 teaspoons sugar
Kosher salt
1 pound fairly thin pencil asparagus, ends trimmed, cut into 2-inch pieces
4 tablespoons sesame seeds

Steps:

  • Bring a large pot of water to a rolling boil. In a medium bowl, whisk together the sesame oil, white wine vinegar, soy sauce, and sugar. Set aside.
  • Prepare an ice bath: Fill a large bowl halfway with ice cubes and add some cold water. Place a colander squarely inside the ice bath. The colander will keep you from having to pick the asparagus out from amongst the ice cubes in the ice bath.
  • Add salt until the boiling water tastes like seawater. Add the asparagus to the boiling water and cook for 1 1/2 to 2 minutes - you want them to be crunchy. If the asparagus are thin, cook for only 1 minute. Remove the asparagus from the water with a strainer and transfer them to the colander inside the ice bath. Allow them to cool completely for a few minutes and then place them on a kitchen towel to drain any excess moisture.
  • Toss the asparagus, sesame seeds, and the sauce together and refrigerate for 1 hour, or until ready to serve.

1/2 teaspoon baking soda
3 large cloves garlic, crushed plus 2 tablespoons chopped
1 egg white
1/4 teaspoon salt
1 tablespoon sesame seeds
5 teaspoons sugar
1 teaspoon peanut oil plus 4 cups, for deep-frying
3/4 teaspoon cornstarch
2 tablespoons thin soy sauce
2 tablespoons Shao Hsing (Chinese rice wine) or dry sherry
2 teaspoons Chinese dark vinegar* or balsamic vinegar
2 teaspoons sesame oil
1 teaspoon Chinese sesame paste*
1/4 pound pencil-thin asparagus tips (4 inches)
1/2 small red bell pepper, very thinly sliced (about 1/3 cup)
4 dried red chili peppers
3 scallions, chopped
2 tablespoons chopped ginger
Serving suggestion: Rice

Steps:

  • Slice steak into broad 1/8-inch thick strips, about 1 inch wide and 6 inches long. In a small bowl combine steak strips with baking soda, crushed garlic cloves and 1/4 cup cold water. Mix well and soak 5 hours.
  • Rinse steak slices and dry well on paper towels. In a small bowl mix together egg white and salt, stirring vigorously until egg white foams. Stir in sesame seeds, 1 teaspoon sugar, 1 teaspoon peanut oil and cornstarch. Add steak and toss to coat. Marinate 1/2 hour at room temperature. In another small bowl, combine thin soy sauce, Shao Hsing, remaining 4 teaspoons sugar, vinegar, sesame oil and sesame paste; set aside.
  • In a wok heat remaining 4 cups peanut oil over high heat to 375 degrees. Drain beef, pat dry then deep-fry 45 seconds, turning pieces several times with a metal spoon. Using a slotted spoon, remove beef and drain on paper towels. When oil returns to 375 degrees, deep-fry 15 seconds more, remove beef, and drain. Repeat deep-frying, 15 seconds, a third time. Remove beef and drain on clean paper towels. When oil returns to 375 degrees, deep-fry asparagus and red bell pepper 30 seconds. Drain on paper towels.
  • Drain off all but 1 tablespoon oil from wok and increase heat to high. Add chili peppers, scallions, chopped garlic and chopped ginger; stir-fry 1 minute. Add asparagus and red pepper; stir-fry 10 seconds and add beef. Stir in soy sauce mixture, bring to a boil and serve immediately with rice.

  • Preheat oven to 450 degrees. Trim ends from asparagus; cut stalks into 2-inch lengths. Place asparagus in a roasting pan; drizzle with olive oil, and season with salt. Toss to combine.
  • Spread asparagus evenly. Roast 10 minutes, turning asparagus halfway through. Add sesame seeds, and continue roasting until asparagus is lightly browned in spots and tender, about 5 minutes more.

16-20 asparagus spears, about 500g/1lb 2oz
2 tbsp sesame oil
1 tbsp soy sauce
1 garlic clove , crushed
2 tbsp sesame seeds

Steps:

  • With one hand, hold an asparagus stalk at its base. Bend the stalk over with your other hand - the asparagus will break where the woody part ends and the tender part begins. Discard the base. Place 4 or 5 asparagus stalks next to one another. Skewer them crosswise in two places - just below the tips and 3cm from the bottom - with slender bamboo skewers. You will end up with something that looks like a raft.
  • In a small bowl, combine the sesame oil, soy sauce, garlic and sesame seeds and stir with a fork to mix. Brush this mixture on the asparagus rafts on both sides. Season the asparagus with a little salt and lots of pepper.
  • Grill the asparagus on a barbecue or in a griddle pan for 4-5 mins per side, turning with tongs. Sprinkle with sesame mix as they grill.

This is one of my favorite dishes at a local restaurant called Cracker's. This is THE best asparagus I have ever tasted!

1 bunch asparagus
1 tablespoon black sesame seed
1/2 fresh lemon
1 tablespoon butter
1 pinch kosher salt
1 pinch black pepper

Steps:

  • Trim bottom 1/4 of asparagus off, or the whitish colored part,and discard.
  • Wash before cooking.
  • Sauté the asparagus in butter, with salt, pepper and black sesame, over medium heat.
  • Continue until the asparagus"gives" a little.
  • This all depends on the thickness of the asparagus.
  • Some water can be added if the asparagus starts to brown.
  • Squeeze juice from 1/2 lemon over asparagus, and serve.

1 tablespoon toasted sesame oil
1 tablespoon soy sauce
3 cloves garlic, minced
1 teaspoon brown sugar
1 ½ pounds fresh asparagus, trimmed
2 tablespoons toasted sesame seeds

Steps:

  • Preheat grill for high heat.
  • In a bowl, mix sesame oil, soy sauce, garlic, and brown sugar. Place asparagus in the bowl, and toss to coat.
  • Lightly oil a fine-mesh grill grate. Place asparagus on grate, and cook 8 minutes, until tender but firm. Garnish with sesame seeds to serve.

1 1/2 tablespoons toasted sesame seeds
10 ounces top sirloin, thinly sliced across grain
2 tablespoons vegetable oil
3/4 cup sliced red onion
8 ounces slender asparagus, trimmed, cut into 1 1/2-inch pieces (about 2 cups)
1/3 cup water
2 tablespoons hoisin sauce
2 teaspoons oriental sesame oil

Steps:

  • Spread sesame seeds on large plate. Sprinkle beef with salt and pepper; coat with sesame seeds.
  • Heat vegetable oil in heavy large skillet over high heat. Add onion; stir-fry 1 minute. Add asparagus; stir-fry until crisp-tender, about 2 minutes. Add beef; stir-fry until brown, about 2 minutes. Reduce heat to medium. Add 1/3 cup water and hoisin sauce. Cook until sauce is bubbling and coats beef and vegetables, stirring often, about 2 minutes. Stir in sesame oil. Season with salt and pepper.

1 lb asparagus
2 tablespoons teriyaki sauce or 2 tablespoons hoisin sauce
1/2 teaspoon bottled chopped ginger or 1/4 teaspoon grated fresh ginger
1/4 teaspoon hot chili-garlic sauce
2 teaspoons toasted sesame seeds

Steps:

  • Snap tough ends from asparagus and discard.
  • Boil water over high heat in a large frying pan.
  • Add Asparagus to boiling water (or alternatively, you can steam the asparagus, which I prefer to do as it stays crunchy).
  • Boil for 3 minutes, drain immediately and set aside.
  • While asparagus cooks or steams, stir teriyaki with ginger and chili-garlic sauce in a small bowl.
  • Return pan with asparagus to burner and reduce heat to medium.
  • Add teriyaki mixture.
  • Stir often until asparagus is tender-crisp and evenly coated with sauce, 1 to 3 minutes.
  • Sprinkle with sesame seeds.
