1 medium red pepper (finely diced)
2 stalks celery (finely diced)
¼ medium red onion (finely diced)
¼ cup cilantro (chopped)
2 tablespoons toasted sesame seeds
¼ cup roasted peanuts (can sub almonds or cashews)
2 tablespoons sesame oil
1 tablespoon lemon juice
1 tablespoon honey
2 teaspoons soy sauce (gluten-free if needed)
1 teaspoon grated ginger
1 small garlic clove (grated (preferably with a Microplane))
A pinch of sea salt

Steps:

  • Combine all the sesame dressing ingredients in a small jar and shake it well.
  • Add the Asian salad ingredients to a medium-sized bowl.
  • Pour the dressing over the top and toss to coat.

1 pound young carrots (greens trimmed to 1-inch, scrubbed and pat dry)
2 tablespoons olive oil
Sea salt
1 tablespoon toasted sesame seeds
1 tablespoon tahini
1/2 cup extra virgin olive oil
1/4 cup rice vinegar
1/4 cup orange juice (I used lemon)
2 tablespoons coconut aminos
2 garlic cloves (minced)
2 tablespoons peeled and minced ginger (about 2 inches)
1 teaspoon toasted sesame oil

Steps:

  • Preheat the oven to 425 degrees F with the rack in the middle position. Place your carrots in a single layer on a parchment-lined baking sheet.
  • Drizzle the olive oil on the carrots and sprinkle the salt on them.
  • Roast in the oven for 30 minutes or until the carrots are tender.
  • Meanwhile, make the sauce: combine all the ingredients in a small food processor or blender and puree until smooth. Taste for seasoning and add more salt as necessary.
  • Spoon the ginger-sesame sauce over the carrots and top with the sesame seeds.

1 lb (4) chicken thighs, bone in, skin on
Kosher salt and black pepper
2 tablespoons sesame oil, divided
1 lb rainbow carrots, washed and chopped into 3 sections
2 tablespoons organic soy sauce
2 tablespoons sriracha hot sauce
2 tablespoons rice vinegar, unseasoned
1 tablespoon raw honey
1 tablespoon minced ginger
2-3 scallions, chopped
1 tablespoon sesame seeds (for topping)

Steps:

  • Start by preheating your oven to 425°F. Heat a 12-inch cast iron skillet over medium heat.
  • Season chicken thighs with salt and better on both sides, then rub with 1 tbsp sesame oil.
  • Once the skillet is hot, place chicken thigh skin side down in the skillet and cook undisturbed until the fat has rendered out, about 6 minutes. Flip thighs and cook the reverse side for 2-3 minutes, then transfer chicken to a plate. Pour out excess oil and fat and leave just enough to coat the skillet. Return the skillet to the stove top and turn heat to medium-high.
  • Place chopped carrots in the skillet and cook until a char forms for about 5 minutes, then flip carrots and season with some salt. Cook reverse side for 2 minutes, then turn the stove off and transfer hot skillet (use oven mitts!) to the oven. Roast carrots for 10 minutes. While your carrots are in the oven, combine soy sauce, sriracha, rice vinegar, honey and ginger in a small bowl and whisk until mixed.
  • When carrots are ready, remove the skillet from the oven, but keep the oven on. Return chicken to skillet and pour soy ginger mixture over the chicken and carrots. Return the skillet to the oven and roast for 15-18 minutes. When ready, top with sesame seeds and scallions. Serve hot.

2 bunches baby carrots, peeled
2 tablespoons olive oil
2 tablespoons honey
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon soy sauce
2 teaspoons black sesame seeds
1 tablespoon chopped parsley

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with foil and put in the oven to heat.
  • Spread the carrots in a single layer on the hot baking sheet. Combine the olive oil and 1 tablespoon of honey in small bowl and pour over the carrots. Sprinkle with the salt and pepper. Roast the carrots start until they start to blister, 10 minutes.
  • Mix together the remaining 1 tablespoon honey and the soy sauce. Drizzle the mixture over the hot carrots and toss to coat. Sprinkle with the sesame seeds and chopped parsley and serve.

1 ½ cup basmati or white rice
3 cup water
1 lb(s) (450 g) flank or sirloin steak
¾ cup cornstarch
½ cup water
2 eggs
2 medium carrots
1 green onion chopped green onions
¼ cup finely chopped or shredded fresh ginger (or have a jar of shredded on hand)
4 tsp prepared garlic or (4 garlic cloves, chopped)
1 tbsp canola oil
3 tbsp soy sauce
2 tbsp wine, red or white
2 tbsp white vinegar
1 tbsp sesame oil
½ cup sugar
crushed chili flakes

Steps:

  • Combine rice and water in a large microwave-safe pot or casserole. Cover and microwave at high 10 minutes, then medium 10 minutes.
  • Slice partially frozen steak across the grain into narrow strips.
  • Place cornstarch in a large mixing bowl. Add water gradually while you are whisking. Beat eggs into cornstarch mixture. Toss in beef and stir to coat.
  • Pour 1 inch of oil into wok, heat to boiling hot, but not smoking. Add a quarter of the beef to the oil at a time. Separate with a fork and cook, stirring frequently, until crispy. Remove, drain on parchment and set aside. (This much can be done in advance.)
  • Shred carrots. Chop green onions and grate fresh ginger.
  • Put oil in wok. Add carrots, onion, ginger and garlic in that order. Stir briefly over high heat.
  • Combine soy sauce, wine, vinegar, sesame oil, sugar and chili flakes. Add to vegetable mixture and bring to a boil.
  • Add beef, mix well. Serve over rice.
