This recipe was attached to some fresh chives I purchased at Publix (our local supermarket). Haven't made it yet, but it looks to be a light and refreshing main dish to make on a summer evening -- when all the kids come over I'm going to try it (with my husband as "grill master"). I like the fact that much of it can be pre-prepped. For our family, it will be a meal-in-one. All we'll need to add is a dessert. (Note: cooking time includes the time for cooling the steak.)

12 ounces beef top sirloin steaks, 1-inch thick
2 cups cherry tomatoes or 2 cups grape tomatoes, halved
1 medium red onion, peeled and very thinly sliced
1 medium red bell pepper, julienned
1 cup sliced mushrooms
1/4 cup chopped fresh chives
3 tablespoons chopped fresh parsley
1/4 cup Italian salad dressing
6 cups lettuce (or amount you want, iceberg, romaine, or your favorite lettuce.)

Steps:

  • Preheat grill to medium heat. Season steak with salt and pepper.
  • Grill steak to desired doneness (14-18 minutes for medium rare; 18-22 minutes for medium, depending on the thickness of your steak). Turn once and cool 10 minutes before slicing for the salad.
  • Thinly slice steak on the diagonal. Combine steak, tomatoes, onion, bell pepper, mushrooms, chives and parsley. Drizzle with dressing; toss to coat. Serve on the lettuce of your choice.

1 ¾ pounds beef sirloin steak
⅓ cup olive oil
3 tablespoons red wine vinegar
2 tablespoons lemon juice
1 clove garlic, minced
½ teaspoon salt
⅛ teaspoon ground black pepper
1 teaspoon Worcestershire sauce
¾ cup crumbled blue cheese
8 cups romaine lettuce - rinsed, dried, and torn into bite-size pieces
2 tomatoes, sliced
1 small green bell pepper, sliced
1 carrot, sliced
½ cup sliced red onion
¼ cup sliced pimento-stuffed green olives

Steps:

  • Preheat grill for high heat.
  • Lightly oil grate. Place steak on grill and cook for 3 to 5 minutes per side or until desired doneness is reached. Remove from heat and let sit until cool enough to handle. Slice steak into bite size pieces.
  • In a small bowl, whisk together the olive oil, vinegar, lemon juice, garlic, salt, pepper and Worcestershire sauce. Mix in the cheese. Cover and place dressing in refrigerator.
  • Onto chilled plates arrange the lettuce, tomato, pepper, onion and olives. Top with steak and drizzle with dressing. Serve with crusty grilled French bread. Enjoy!

1 (5-ounce) container prewashed fresh herbs and greens lettuce mix (about 8 cups)
1 ripe mango, sliced
1 small ripe avocado, sliced
1/2 cup shredded carrot
1/2 cup diced red and/or yellow bell pepper
1/2 teaspoon coarse sea salt
2 tablespoons dry roasted peanuts, chopped (optional)
Lime wedges
Dressing:
3 tablespoons agave nectar or honey
2 tablespoons creamy or chunky natural peanut butter
2 tablespoons hot water
1 tablespoon reduced-sodium soy sauce
1 tablespoon rice or white vinegar
1 teaspoon sesame oil

Steps:

  • 1) Place beef steak on grid over medium, ash-covered coals. Grill, covered, 11 to 15 minutes (over medium heat on preheated gas grill, 13 to 16 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally. 2) Meanwhile, whisk all Dressing ingredients in medium bowl until smooth; set aside. Arrange lettuce on serving platter; arrange mango, avocado, carrot and bell pepper over lettuce. 3) Carve steak into slices; season with salt. Arrange beef over salad. Drizzle with dressing. 1 lb small red potato, halved
1 lemon
3/4 cup bottled caesar-style vinaigrette dressing
1 teaspoon McCormick's Montreal Brand steak seasoning
2 lbs sirloin steaks, 1-inch thick
2 red bell peppers or 2 green bell peppers, cut into 1/2 inch thick rings
1 medium red onion, cut into 1/2-inch thick rings
8 cups romaine lettuce leaves, torn
parmesan cheese, shavings (optional)

Steps:

  • Prepare grill for direct-heat cooking.
  • In pot, combine potatoes with enough salted water to cover.
  • Over high heat, bring to boil.
  • Cook until tender, 10-12 minutes, drain.
  • Grate 3/4 t zest and squeeze 1 1/2 t juice from lemon; combine with dressing and seasoning.
  • Brush 2 T mixture over steak.
  • Grill 6-8 minutes per side for medium-rare.
  • Let stand 10 minutes, slice.
  • Toss peppers and onion with 1 T lemon mixture; grill until just softened, about 5 minutes, turning once; cool 5 minutes.
  • Toss lettuce, steak, potatoes, pepper and onion with remaining lemon mixture.
  • If desired, garnish with cheese.

  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Blend soy sauce, vinegar, brown sugar, sesame oil, garlic, and ginger together in a blender or food processor until dressing is smooth.
  • Press peppercorns into both sides of steak and season with salt.
  • Place steak, scallions, and red bell pepper on the preheated grill and cook for 4 minutes. Flip and cook until vegetables are charred and steak is cooked to desired doneness, about 4 minutes more. Let steak rest on a work surface for 5 minutes before thinly slicing along the grain. 1 cup creamy Caesar salad dressing
1/4 cup Dijon mustard
1/4 cup lemon juice
6 slices French bread (1 inch thick)
12 cups torn romaine
1 medium tomato, chopped

Steps:

  • Place steak in a shallow dish. In a bowl, combine the salad dressing, mustard and lemon juice; set aside 3/4 cup. Pour remaining dressing mixture over the steak. Cover and refrigerate for 1 hour, turning occasionally. , Brush both sides of bread with 1/4 cup of the reserved dressing mixture. Grill bread, uncovered, over medium heat for 1-2 minutes on each side or until lightly toasted. Wrap in foil and set aside. , Drain and discard marinade.
