4 tomatoes, diced
2 onions, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 orange bell pepper, diced
3 jalapeno peppers, diced
1 lime, juiced
¼ teaspoon garlic powder, or to taste
salt and ground black pepper to taste
1 bunch fresh cilantro, finely chopped

Steps:

  • Preheat a smoker grill to 250 degrees F (120 degrees C). Add wood chips according to manufacturer's directions.
  • Combine tomatoes, onions, bell peppers, and jalapeno peppers in an aluminum grill pan. Place on the grate of the preheated smoker grill; smoke for 3 hours.
  • Remove vegetables from the smoker and place in a blender. Blend to desired consistency. Mix in lime juice, garlic powder, salt, and pepper. Add fresh cilantro for decoration.

This salsa has a slight twist to it! Why Smoking? Besides the heat from the hot peppers you have a smokey flavor going from the chipotle peppers. Then optional for those that like it real hot use ghost chilies. This makes nice little gifts, just pack a basket with it and some chips, avocados, cheese, beer or margarita mix etc.

10 cups meaty tomatoes, diced seeded and peeled (I don`t peel more vitamins and easier)
2 cups bell peppers (red or green)
2 cups onions, diced
4 jalapenos, seeded and deveined veins can stay in if you like it hot
2 -4 chipotle chiles in adobo
6 garlic cloves
1 -3 teaspoon salt, to taste
1 (12 ounce) can tomato paste
1 (4 1/2 ounce) can diced green chilies (for extra heat) or 2 fresh ghost bell peppers (for extra heat)
2 tablespoons sugar, use to taste if tomatoes are sweet can skip
1 fresh lime, zest and meat
1 cup vinegar, 5% acidity
1 cup packed cilantro, chopped

Steps:

  • In a food processor, process with the metal blade the meat of lime, jalapenos, garlic, and chipotle peppers and ghost chilies if using till minced fine.
  • Combine all ingredients in a large saucepan stir to mix well and cook for 10-15 minutes.
  • Ladle into hot jars leaving 1/2 headspace.
  • Remove any air bubbles.
  • Clean rims and adjust lids.
  • Process in a boiling water canner for 15 minutes.
  • Remove from bath and cool in a wind free area.
  • Label and store in a cool, dark, dry place.

15 Roma tomatoes, halved
One 7-ounce can chipotles in adobo sauce
1 1/2 tablespoons salt
1 tablespoon ground pepper
20 cloves (1 1/2 cups) roasted garlic
2 bunches fresh cilantro
2 jalapenos, stems removed and cut into fours
Juice of 2 limes

Steps:

  • For the smoked tomatoes: Preheat a smoker for cooking at 225 degrees F. Place tomatoes in a pan in the smoker and let smoke, 2 hours.
  • For the salsa: Add the smoked tomatoes, chipotles, salt, pepper, roasted garlic, cilantro, jalapenos, lime juice and 1 cup water to a food processor. Pulse until ingredients are combined and salsa is chunky.

SIMPLE SMOKED SALSA

This salsa is so easy to throw together on days when you already have the smoker going. Tweak it to your preferred heat level by leaving some or all of the jalapeno seeds in for a spicier salsa! The longer you let the salsa sit, the better it becomes. I like to use hickory wood, but fruit woods also work great.

  • Preheat the smoker to 225 degrees F (110 degrees C). Add wood chips according to manufacturer's directions.
  • Place tomatoes, onion, jalapeno pepper, and garlic inside a disposable foil pan and place on the smoker rack. Smoke vegetables for 90 minutes.
  • Transfer vegetables into the bowl of a food processor or blender. Add cilantro, lime juice, and salt. Pulse several times until vegetables are finely chopped; do not over-process. Serve at room temperature or refrigerate to let flavors meld.

My son John likes a smooth salsa and he and my Husband like it extra HOT. So this is made smooth and spicy, But I take it over the top and raise the HEAT in 3 of the jars by adding more pureed Chipotle in adobo sauce. You can skip this step by just filling the jars as the recipe calls for,

2 cups red bell peppers, seeds and stem removed and rough chopped
2 cups onions, rough chopper
4 -6 chipotle chiles in adobo, taste before you add more
1 -3 teaspoon salt, to taste
1 (12 ounce) can tomato paste
2 tablespoons sugar, use to taste if tomatoes are sweet can skip
2 fresh limes, zest and meat (white pith and seeds removed)
1/2 cup packed cilantro, chopped and or 1/2 cup chopped basil
6 garlic cloves
1 tablespoon cumin
10 cups fresh pureed organic tomatoes (seeds removed and leave skins for on extra benefits before blending)

Steps:

  • Place all the ingredients except for the pureed tomatoes in a blender and blend till smooth making sure all the garlic in broken down. Depending on you blender you may have to do in batches.
  • Place all the ingredients in a heavy bottom pot bring to a boil then simmer 15 minutes stirring occasionally.
  • Ladle into hot jars leaving 1/2 inch headspace. Wipe jars and adjust lids and process in water canner for 15 minutes. Cool over night, label and store out of sunlight.
  • FYI: An extra step is not necessary but for my family it is! I saved 3 cups to kick up the heat for my son and husband by adding 3 more pureed chipotles in adobo sauce.
  • I did add 2 more tablespoons bottled lemon juice to the remaining three cups. and brought back up to a boil then simmered while the other jars were in the water bath, This is extra hot so no need to do unless you have family members like mine that request it hotter!

This recipe uses the Cameron Stovetop Smoker. I have no idea how it will turn out using another device. Proportions are approximate. Please adapt them to your love of chiles and fondness of garlic and cilantro. This would work well with any fresh pepper or chile.

3 cups roma tomatoes, halved
10 garlic cloves
2 jalapenos, halved
1/2 onion, chopped
4 tablespoons wood chips
2 tablespoons fresh cilantro (optional)
1 lime, juice of (optional)
1/2 teaspoon kosher salt
1 jalapeno, chopped (optional)
2 tablespoons chopped green onions (optional)

Steps:

  • Make an aluminum foil "basket" to hold the food and fit in your smoker. You should have clearance on all four sides and the top.
  • Place the tomatoes, garlic, jalepenos, and onion into the foil basket. If you like hotter salsa, leave the seeds in the jalepenos. Otherwise, take them out.
  • Load your smoker with 2 to 4 tablespoons of wood chips. I use apple, but that's me.
  • Assemble your smoker according to factory directions. The foil basket goes on top of the wire rack.
  • Start the smoker on high, close up and turn to medium low. Same as always for the Cameron smoker.
  • Cook for about 45 minutes. The tomatoes should soften, but not be mushy. It takes somewhere between 30 and 45 minutes to do this.
  • Turn the smoker off and leave it closed. Allow to cool for at least 15 minutes.
  • Pour the liquid that accumulated in the foil basket into a small work bowl. Reserve for later. (Don't throw it out, the flavor is too good to toss.).
  • Remove the garlic. If you didn't peel it, squeeze the garlic paste out of the peel. Mash.
  • Reserve 1 tomato, all the chiles, and 1/4 cup onion. The chile flavor has infused into the tomatoes, so proceed with caution.
  • Process the garlic, most of tomatoes and SOME of the onion until it reaches the desired texture (use food processor, batches in the blender, or immersion blender depending on what you have). If the mixture seems stiff, use some of the reserved cooking liquid to thin it down.
  • TASTE. Add the smoked chiles in small batches to reach the desired heat level.
  • TASTE. Add cilantro, lime juice and salt to taste. This is personal, and it will vary from batch to batch depending on how ripe the veggies were.
  • Take the reserved vegetables and chop them finely. Add them to the processed salsa. This gives you 2 textures. If you want only one, then blend away.
  • Add additional fresh chopped jalepeno and chopped green onions to taste. Or, leave them out.
  • If the salsa turned out too hot, add about 1/2 tsp sugar. This will make it less hot tasting.
  • Serve hot or cold with crispy tortilla chips and a cooling beverage.

1 1/2 pounds plum tomatoes, halved lengthwise
4 large fresh Anaheim chilies,* halved lengthwise, seeded
1 large onion, quartered lengthwise
1 large yellow bell pepper, quartered
1 head of garlic, top 1/3 cut off, head left intact
1/4 cup corn oil
2 cups hickory-wood chips, soaked in water 1 hour, drained
1 9-inch-diameter disposable aluminum foil pie pan
1/3 cup chopped fresh cilantro
1/4 teaspoon cayenne pepper

Steps:

  • Combine first 5 ingredients in large bowl. Add oil; toss gently to coat. Sprinkle generously with salt and pepper.
  • Prepare barbecue (medium-high heat). Arrange hickory chips in foil pie pan; place directly atop coals. Allow chips to begin smoking, about 10 minutes. Grill vegetables until tender, turning frequently, about 10 minutes for tomatoes, 20 minutes for chilies, onion, and bell pepper, and 35 minutes for garlic. Transfer vegetables to cutting board. Cool. Remove any loosened peel from tomatoes, chilies, and bell pepper. Peel garlic. Coarsely chop all vegetables; transfer to medium bowl. Mix in cilantro and cayenne pepper. Season with salt and pepper. (Can be made 8 hours ahead. Cover; chill. Bring to room temperature before serving.)
