A delicious, and nutritious dish with loads of flavor that's easy to make. Plus- it's vegetarian too!

8 ounces soba noodles cooked per package directions (drained, rinsed and chilled)
1/2 cup julienne carrots
1/2 cup julienne purple cabbage
1/2 cup edamame
1/2 cup chopped cucumber
1 avocado chopped (plus additional if you want to garnish with sliced)
1/2 cup creamy peanut butter
1/4 cup toasted sesame oil
1/4 cup soy sauce
1 tbsp fresh ground ginger (or two teaspoons dried)
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons brown sugar

Steps:

  • Boil your soba noodles according to package directions. Drain in colander, rinse with cold water and chill while you prepare the remaining ingredients.
  • Add chopped vegetables, and combine with chilled soba noodles.
  • Soften peanut butter in microwave for 30 seconds. In small bowl, combine with remaining dressing ingredients. Whisk well.
  • Pour sauce over chilled noodles and toss well. Garnish with sliced avocado and sesame seeds, and serve. Enjoy!

8 ounces soba noodles (buckwheat noodles)
1 teaspoon sesame oil
5 tablespoons sesame seeds
1 inch fresh ginger
1 garlic clove
2 green onions
2 tablespoons sesame oil
2 tablespoons soy sauce
1 tablespoon rice vinegar
1/2 teaspoon hot chili oil
1 tablespoon sugar
1/3 cup peanut butter
1/3 cup warm water

Steps:

  • Cook noodles in 4 quarts rapidly boiling water for 3 to 4 minutes, or until just tender.
  • Refresh under cold water and drain.
  • Toss with 1 teaspoon sesame oil.
  • Lightly toast sesame seeds in a dry skillet over medium heat.
  • Transfer seeds to a bowl.
  • Mince ginger and garlic.
  • Finely chop green part of green onions and mince the rest.
  • Combine half the sesame seeds, ginger, garlic, white part of onions, sesame oil, peanut butter, warm water, soy sauce, rice vinegar, hot pepper oil and sugar.
  • Correct seasoning, adding soy sauce or vinegar to taste. (May be prepared ahead to this stage.)
  • Just before serving, toss noodles with sauce.
  • Sprinkle with reserved green onions and sesame seeds and serve.

These cold noodles are the perfect thing to pack for a work lunch. They're vegetarian, but still full of protein, thanks to the soba noodles and peanut butter. Go ahead and double the recipe to cover lunch for another day.

2 ounces soba (buckwheat) noodles
1 tablespoon plus 1 1/2 teaspoons smooth peanut butter
1 teaspoon hoisin sauce
1/2 teaspoon chili-garlic sauce
1 tablespoon plus 1 teaspoon lime juice (from about 1 lime)
1 teaspoon toasted sesame oil
1/2 cup prepared coleslaw mix or thinly sliced green cabbage
2 tablespoons fresh cilantro leaves
1 scallion, thinly sliced
1/2 orange, red or yellow bell pepper, cut into thin strips
1/2 Persian cucumber, halved and cut into thin strips
2 sheets roasted seaweed snacks, cut into thin strips

Steps:

  • Bring a small pot of salted water to a boil. Add the soba noodles and cook according to the package instructions. Reserve 2 tablespoons of the cooking water, then drain the noodles and cool.
  • Whisk together the peanut butter, hoisin, chili-garlic sauce, 1 tablespoon of the lime juice, 1/2 teaspoon of the sesame oil, the reserved 2 tablespoons noodle water and a large pinch salt in a medium bowl. Add the soba noodles to the sauce and toss to coat. Transfer the tossed noodles to a 32-ounce resealable plastic container or glass jar.
  • Whisk together the remaining 1 teaspoon lime juice, 1/2 teaspoon sesame oil, a pinch salt and a few grinds of black pepper in the same bowl. Add the coleslaw mix, cilantro, scallion, bell pepper and cucumber and toss to coat. Transfer to the container on top of the noodles. Pack the seaweed snacks separately.
  • When ready to eat, top with the seaweed snack strips and eat right out of the container (or transfer to a bowl).

1 pound soba noodles
1/2 seedless cucumber (usually plastic-wrapped)

1 tablespoon Asian sesame oil
2 teaspoons Chinese chile garlic paste (preferably Lan Chi) or Sriracha (Southeast Asian chile sauce) plus additional for serving
1/4 cup chopped scallions

an adjustable-blade slicer with 1/4-inch julienne blade

Steps:

  • Cut chicken into 1/2-inch-wide strips, then cook in a 5- to 6-quart pot of boiling salted water , stirring occasionally, until just cooked through, 1 to 2 minutes. Transfer chicken with a slotted spoon to a bowl (drain any excess liquid), reserving water in pot.
  • Return water to a boil, then cook noodles, stirring occasionally, until just tender, 4 to 8 minutes. Reserve 3/4 cup noodle-cooking water and drain noodles in a colander. Rinse noodles under cold water to stop cooking, then drain well.
  • While noodles cook, cut cucumber lengthwise into julienne strips, slicing until you reach core, then rotating cucumber a quarter turn, continuing to slice and rotate until left with nothing but core. Pat dry.
  • Whisk together peanut butter, soy sauce, sesame oil, chile paste, and reserved cooking water until smooth.
  • Divide noodles among large serving bowls. Spoon about 1/4 cup peanut sauce over noodles in each bowl, then divide chicken, cucumber, and scallions among bowls. Serve immediately with remaining sauce and additional chile paste. Stir noodles just before eating.

  • Toast the sesame seeds in a dry pan over a high heat until they look golden brown, and tip them into a bowl.

1 ½ tablespoons canola oil
1 onion, diced
3 cloves garlic, minced

2 tablespoons creamy peanut butter
1 tablespoon sesame oil

Steps:
