RACH'S CRAB FRA DIAVOLO + SPAGHETTI CAN BE MADE WITH CHICKEN TOO

Rach's Crab Fra Diavolo + Spaghetti Can Be Made With Chicken Too image

The spicy sauce of this recipe -"fra diavolo" means "brother devil" in Italian-is just as delicious with scallops, shrimp or even chicken.

Provided by Rachael Ray

Number Of Ingredients 26

1 pound picked crab meat (Rach used king crab leg meat but lump or claw meat is great as well)
½ lemon
2 teaspoons Old Bay seasoning
2 tablespoons extra-virgin olive oil (EVOO)
2 tablespoons butter
2 large shallots
finely chopped
1 small rib celery
finely chopped
4 cloves garlic
chopped
1 large bay leaf
1 tablespoon Calabrian chili paste
or 1½ teaspoons chili flakes
1 teaspoon fennel pollen or chopped fennel seed
½ cup dry sherry
dry vermouth or white wine
One 14-ounce can crushed tomatoes or Italian cherry tomatoes
2 cups passata or one 14-ounce can tomato puree
Salt and pepper
to taste
12 to 16 ounces egg spaghetti or linguine
½ cup chopped fresh herb mixture: chives
dill and parsley
¼ cup drained hot pickled chili peppers
chopped (optional)

Steps:

  • Run your hands through the crabmeat and pick through it carefully for bits of shell or cartilage and toss with lemon juice and Old Bay
  • Heat a pot of water for pasta and bring to a boil
  • Heat a large skillet over medium heat with EVOO, add butter and melt to bubble, add shallots, celery, garlic, bay, chili paste or flakes, and fennel pollen or fennel seed, and stir 2 to 3 minutes, add sherry, vermouth or wine, and add tomatoes and passata, crush tomatoes if using cherry tomatoes
  • Salt water and cook pasta 1 minute less than package directions
  • Add crab to sauce (or seared scallops or seared shrimp or mussels or a mixture of seafood rather than crab)
  • (If using mussels, place the mussels in the bubbling sauce and cover
  • Steam until the mussels open and toss any that do not)
  • Reserve ½ cup of salty cooking water from pasta, drain pasta and toss with sauce and crab or seafood, add a little starchy water if necessary to keep loose, adjust seasoning and top with herbs and chopped pickled chilies

HEALTHY PASTA WITH SPICY CRAB

Healthy Pasta with Spicy Crab image

"I was training for a marathon when I created this recipe. Crab is high in protein but low in fat, so it's a great balance to the carbs."

Provided by Bobby Flay

Time 30m

Yield 6 servings

Number Of Ingredients 13

Kosher salt
1 pound spaghetti
2 tablespoons canola oil
2 Fresno chile peppers, finely chopped
2 cloves garlic, minced
1 cup dry white wine
1 pound jumbo lump crabmeat, picked over
2 tablespoons finely chopped fresh flat-leaf parsley
1 tablespoon finely chopped fresh dill
1 tablespoon finely chopped fresh mint
2 teaspoons finely grated lemon zest
Extra-virgin olive oil, for drizzling
Freshly ground pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook as the label directs until al dente. Reserve 1 cup cooking water, then drain the pasta.
  • Meanwhile, heat the canola oil in a large high-sided saute pan over medium heat. Add the chiles and garlic and cook until soft and the garlic is pale golden brown, about 3 minutes. Add the wine and cook until reduced by half, about 5 minutes. Add the crab and cook until just heated through, about 1 minute.
  • Add the pasta and some of the cooking water to the pan and cook for another minute. Stir in the parsley, dill, mint and lemon zest. Drizzle with olive oil and season with salt and pepper.

SPAGHETTI WITH CRAB SAUCE

Spaghetti with Crab Sauce image

This recipe is a two-step process: Making the sauce base and then the sauce itself. You can make the base a day ahead if you'd like. Any crab will do here, but I use a combination of red crabs, rock crabs and Dungeness crabs. The only tricky ingredient here is ouzo, which is a Greek anise-flavored liquor. Most liquor stores have it, but you can sub in sambuca, raki, Pastis, Pernod or any other anise-flavored liqueur. Still can't find it? Go with brandy; that's what my brother-in-law does.

Provided by Hank Shaw

Categories     Main Course     Pasta

Time 2h15m

Number Of Ingredients 19

3 tablespoons olive oil
1 cup chopped onion
Shells from 2 or 3 Dungeness crabs (or 4 to 6 large rock crabs, or 8 blue crabs)
2 garlic cloves, (crushed)
Tops from 1 fennel bulb, (chopped)
3-4 bay leaves
1/2 cup ouzo
2 tablespoons olive oil
1/2 cup chopped onion
1/2 cup chopped fennel bulb
3 garlic cloves, (minced)
1 heaping tablespoon tomato paste
1/4 cup ouzo
A 28-ounce can of crushed tomatoes
2 cups of the crab sauce base
Tabasco garlic-pepper sauce to taste, (or other hot sauce)
1 cup cooked crabmeat
1-2 pounds dried spaghetti
Chives, (green onions or parsley to garnish)

Steps:

  • To make the sauce base, put the onions and olive oil in a stockpot and cook, stirring occasionally, over medium heat until the onions are soft and translucent, about 6-8 minutes. Add the crab shells and the garlic and stir to combine. Use a potato masher to smash the crab shells into small pieces. Cook, stirring often, for 5 minutes.
  • Add the bay leaves, the tops from the fennel bulb, ouzo and a healthy pinch of salt. Add enough water to cover everything by 1 inch. Bring to a simmer and cook for 1 hour. Turn off the heat and pick out as much of the solids as possible, making sure you save the liquid. Strain the liquid through a paper towel set in a colander. Reserve.
  • To finish the sauce, heat the olive oil in a Dutch oven or other large, wide pot over medium-high heat. Saute the onions and chopped fennel until they are soft and translucent, about 6-8 minutes. Add the garlic and cook another minute.
  • Mix in the tomato paste and cook for 3-4 minutes, stirring often, until it darkens and turns the color of brick. Add the ouzo, the tomatoes and 2 cups of the crab sauce base. Stir well and bring to a simmer. Taste for salt and add the Tabasco to taste. Simmer uncovered for 30 minutes, stirring from time to time.
  • Boil your pasta. Once the pasta is ready, add the crabmeat to the sauce and stir gently. Mix the pasta with a little of the sauce, then portion it out. Top with more sauce, and garnish with chives or parsley.

SPAGHETTI WITH CRABS

Spaghetti With Crabs image

This delightful recipe is adapted from one in Frank Castronovo and Frank Falcinelli's "The Frankies Spuntino Kitchen Companion and Cooking Manual," written with Peter Meehan. It's for a fantastic dish of spaghetti and crabs that was taught to them by Tony Durazzo, a Carroll Gardens raconteur and friend of the Spuntino, in which crabs are simmered in tomato sauce and then served to the side of a platter of spaghetti covered in that same sauce, now infused with the flavor of the crustaceans. You really ought to cook it right now. Then make a mess, eating it.

Provided by Sam Sifton

Categories     dinner, easy, main course

Time 1h

Yield Serves 4

Number Of Ingredients 10

3 tablespoons extra-virgin olive oil, plus more for serving
3 cloves garlic, peeled, smashed and minced
1 28-ounce can peeled tomatoes, preferably San Marzano
2 tablespoons chopped flat-leaf parsley
1/2 teaspoon red-pepper flakes, or to taste
4 large blue crabs
Kosher salt
1 pound dry spaghetti
1/2 cup fresh basil leaves
Freshly ground black pepper to taste

Steps:

  • Heat the oil in a large pot over medium-high heat. When it begins to shimmer, add garlic and cook for 1 minute or until it is fragrant. Add the tomatoes, crushing them by hand as you do so, as well as the parsley and red-pepper flakes. Stir and allow to come to a simmer.
  • Turn the heat up to high and add the crabs. When the sauce starts to boil, lower the heat to a gentle simmer and cook for 30 minutes or so. Remove the crabs to a serving bowl and cover to keep warm.
  • Meanwhile, bring a large pot of well-salted water to a boil. Add the pasta and cook until it is firm - really al dente. Drain.
  • Place the pasta in a large serving bowl or platter and drizzle with olive oil. Pour the crab sauce over the pasta, scatter the basil leaves over the top and season aggressively with black pepper. Serve with crabs on the side and lots of bread.

GARLICKY CRAB WITH PASTA

Garlicky Crab With Pasta image

This recipe calls for king crab legs but Dungeness also works really well. It's best to use frozen crab so that you can defrost it on your own schedule. Also, add in other stuff, such as sliced green onions or fresh basil leaves or even sliced jalapeno peppers if you like. This is a Chicago Tribune recipe.

Provided by Hey Jude

Categories     Crab

Time 35m

Yield 4 serving(s)

Number Of Ingredients 5

1 1/2-2 lbs frozen king crab legs
1 lb spaghetti
1/4 cup butter
5 garlic cloves, minced
1/4 cup chopped fresh parsley

Steps:

  • heat a large stockpot of salted water to a boil over high heat; add crab legs; cover. Cook until crab is cooked through, 6 minutes; transfer crab to a colander but don't drain the water out of the pot, keep it boiling.
  • Add spaghetti to the crab water; cook according to package directions. Drain; keep warm. Meanwhile, crack crab legs into smaller, more manageable pieces.
  • Melt 3 T. of the butter in a large skillet or wok. Add garlic; cook, stirring, until garlic is slightly browned and aromatic, about 2 minutes. Add crab legs and parsley to skillet; toss to coat the shells and the meat with the hot butter and garlic. Transfer to a plate and set aside.
  • Melt remaining 1 T. butter in the skillet over medium heat. Add cooked pasta, tossing until well coated. Transfer pasta to a platter; top with reserved crab.

  • Over high heat, heat the oil in a large pan. Add the garlic and turn the heat down to medium. Add the cherry tomatoes and mix well. Add the sun-dried tomato paste and sun-dried tomatoes, and then remove from the heat. Add the lump crabmeat and season with salt and pepper. Add the cooked spaghetti and toss to coat.
