6 sweet potatoes, peeled and cubed
¾ cup milk
½ cup butter
¾ cup maple syrup

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender, 20 to 30 minutes.
  • With an electric mixer on low, blend potatoes, slowly adding milk, about 1/2 a cup at a time. Use more or less to achieve desired texture. Add butter and maple syrup to taste. Blend until smooth. Serve warm.

2 1/2 pounds sweet potatoes (about 8 sweet potatoes)
1 to 2 sticks unsalted butter, at room temperature, plus more to taste
Kosher salt and black or white pepper
Flaky sea salt, for serving (optional)

  • Heat the oven to 350 degrees. Bake the sweet potatoes for 1 to 1 1/2 hours, or until thoroughly fork tender. (If you're making these for Thanksgiving, you can tuck the potatoes into corners of the oven at any time during the roasting of the turkey.)

2 1/2 lbs sweet potatoes, unpeeled
3 garlic cloves, unpeeled
2 tablespoons honey
1/3 ounce unsalted butter
2 fluid ounces low-fat evaporated milk

Steps:

  • Preheat the oven to 180ºC/350ºF/gas 4.
  • Prick the sweet potatoes with a fork and place on an oven tray with the unpeeled cloves of garlic, and bake for 1 hour or until tender. Remove from the oven and set aside for 15 minutes, or until cool enough to handle.

depending on size) peeled and cut into 1 to 1 1/2-inch chunks
1 1/2 cups (3 sticks or 3/4 pound) butter, cut into cubes
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 tablespoons pure maple syrup
1/4 to 1/2 cup cream, as needed to achieve desired consistency
Salt and freshly ground black pepper

Steps:

  • These potatoes can be steamed to preserve more of the flavor and vitamins (or boiled if you wish), until tender. (To steam them, you can place them in a single layer on a rack placed over a large shallow pan of water with a large pot lid to cover. Replenish water in pan if it boils off before they are tender.)
  • Place the tender potatoes in a large bowl and mash by hand with a masher or fork. Then, using a beater, whip in butter, brown sugar, cinnamon, nutmeg, maple syrup, and enough cream to achieve your desired consistency. Season, to taste, with salt and pepper.

400 g sweet potatoes, peeled
1 red bell pepper, halved and deseeded
1 green chili pepper, deseeded and chopped
4 garlic cloves, peeled
1/2 tablespoon olive oil
2 -4 tablespoons fat free cream cheese
2 -4 tablespoons nonfat milk
2 -3 tablespoons chopped coriander leaves
salt & freshly ground black pepper

Steps:

  • Roast the red pepper in a hot (220C) oven for approximately 30-minutes until skin is blackened.
  • Cool for a few minutes, peel and chop flesh into small dice.
  • Meanwhile, chop the sweet potatoes into large chunks and boil with the garlic cloves for approximately 15-20 minutes until tender.
  • Heat olive oil in a small pan and fry chili for 3-4 minutes over a low heat. Stir in chopped red pepper.
  • Drain sweet potato and garlic and mash with 2 tbsp cream cheese and milk, adding more if needed.
  • Stir red pepper, chili and coriander into mash. Add salt and black pepper to taste.

1 head roasted garlic
2 large sweet potatoes
2 large potatoes (whatever you have on hand)
2 tablespoons butter
1/4 cup milk (or whatever dairy you have on hand)
salt and pepper

Steps:

  • Roasted Garlic: To roast a head of garlic, first slice off top of head, (about 1/4 inch off top), place on a square of tinfoil that will cover whole head, drizzle top with olive oil, or whatever oil you have on hand, sprinkle with salt and wrap tightly. Place on/in oven proof pan/dish and bake at 350 deg. for 45 min - 1 hours Remove from oven, let cool.
  • Mash: Peel and cube Sweet potatoes and potatoes, (about 3/4 - 1 inch cubes). place in pot and cover with water. Salt water generously. Bring to a boil and reduce heat. Once you can pierce cubes with fork easily, they are done, (15 min approx). Drain water and mash cubes. Add butter, milk and salt and pepper. Add roaster garlic by either removing each clove and adding it to pot, or, if head is cool enough, squeeze head into pot and cloves should squish right out. mash and stir once more. Texture should be smooth. Add more milk if you like it creamier.
