All bread makers are different, so be sure to follow the instructions for yours on adding ingredients, cycles, browning, etc. I use whole grain spelt flour, but you can substitute white spelt flour, if preferred.

1¼ cups dairy-free milk beverage
2 tablespoons sugar (or your sweetener of choice)
2 tablespoons grapeseed oil or your favorite baking oil
1 teaspoon salt
4 cups spelt flour
2½ teaspoons bread machine yeast
¼ cup ground or whole flaxseed or seven grain mix (optional)

Steps:

  • Place all ingredients in the pan of your bread maker in the order recommended by the manufacturer.
  • Select the cycle for a 2 pound loaf and press Start.

This was the first recipe I used in a bread machine and I'm pretty pleased with the results. The original recipe comes from a local organic flour mill and called for 1 beaten egg, which I replaced with Ener-g.

3/4 cup water, warm
1 beaten egg (won't accept ener-g as a recognized ingredient, but that's what I used with success)
2 teaspoons lemon juice
1 1/2 tablespoons olive oil
3/4 tablespoon honey
1 1/2 tablespoons molasses
1 teaspoon sea salt
3 cups light spelt flour (white)
2 teaspoons bread machine yeast

Steps:

  • Add ingredients to machine's mixing pan in the order listed.
  • Use 2 lb loaf setting, for whole wheat. Altho, I find the basic setting on mine works well with the light spelt. My machine also comes close to burning the bottom so I set the browning to light. You know your settings best.
  • Let the loaf rest on a cooling rack for 15 minutes before slicing.

Originally from "300 Best Canadian Bread Machine Recipes", I changed this recipe to suit our love of seeds and a recent interest in spelt. I also wanted to increase the whole grains and reduce or eliminate the white flour. What I ended up with was a delicious, hearty bread, that while dense, still doubled in volume. Feel free to change the non-spelt flour to whatever you'd like, for a total of 1 1/2 cups; there's no need for the gluten if using white bread flour for the entire amount. For the seeds, use any combination you like, for a total of 3/4 cup.

1 cup water
1 teaspoon sea salt
1 tablespoon olive oil
2 tablespoons honey or 2 tablespoons molasses
1/2 teaspoon gluten
3/4 cup whole wheat bread flour
3/4 cup oat flour
1 1/2 cups spelt flour
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
2 tablespoons flax seeds
2 tablespoons poppy seeds
1 1/4 teaspoons instant yeast

Steps:

  • Measure all ingredients into the baking pan of your ABM, in the order recommended by the manufacturer. Set it for Basic Cycle, or for Basic Dough, and when the dough completes, shape, and place in a loaf pan. Set in a warm place, and allow to rise for 45 minutes, or until doubled in volume. Set oven for 350, and bake for 35 minutes, or until the loaf sounds hollow when you knock on the bottom.
  • Enjoy!

Utterly Simple Spelt Bread made without yeast, so you won't have to wait all day to enjoy fresh bread.

8 cups spelt flour
½ cup sesame seeds
½ teaspoon salt, or to taste
1 tablespoon blackstrap molasses
2 teaspoons baking soda
4 ¼ cups milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pans.
  • In a large bowl, mix together the spelt flour, sesame seeds, salt, molasses, baking soda and milk until well blended. Divide the batter evenly between the prepared pans.
  • Bake for 1 hour and 10 minutes in the preheated oven, or until golden. Placing a tin of the same size over the top of the loaf while baking gives it a lovely crust.
