1 cup chopped onion
1 jar (24 ounces) meatless pasta sauce
3-1/2 cups water
1 package (16 ounces) frozen mixed vegetables
1 can (10 ounces) diced tomatoes and green chiles
1 cup sliced celery
1 teaspoon beef bouillon granules
1 teaspoon pepper

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink, 5-10 minutes, breaking meat into crumbles; drain. , Transfer to a 5-qt. slow cooker. Stir in the remaining ingredients. Cover and cook on low for 8 hours or until the vegetables are tender.

1 pound ground beef
1 cup chopped onion
1 (30 ounce) jar meatless spaghetti sauce
3 ½ cups water
1 (16 ounce) package frozen mixed vegetables
1 (10 ounce) can diced tomatoes with green chile peppers
1 cup sliced celery
1 teaspoon beef bouillon granules
1 teaspoon ground black pepper

Steps:

  • Heat a large skillet over medium-high heat and stir in ground beef and onions. Cook and stir until beef is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease.
  • Transfer beef mixture to a slow cooker. Stir in spaghetti sauce, water, mixed vegetables, diced tomatoes, celery, beef bouillon, and pepper. Cover and cook on Low until vegetables are tender, about 8 hours.

1 tablespoon vegetable oil
1 tablespoon butter
3 pounds beef stew meat or chopped chuck roast
1 tablespoon ground cumin
2 teaspoons ground chili powder
5 cloves garlic, minced
Kosher salt and freshly ground black pepper
4 cups low-sodium beef broth, plus more if needed
One 7-ounce can chipotle peppers in adobo sauce
2 green onions, thinly sliced
Pimiento Cheese and Bacon Grits, recipe follows, for serving, optional
5 slices thick-cut bacon
1 1/2 cups stone-ground grits
2 teaspoons kosher salt
1 cup half-and-half
Two 4-ounce jars diced pimientos, drained
4 ounces cream cheese, softened
2 cups grated sharp Cheddar cheese
1 tablespoon Dijon mustard
2 teaspoons freshly ground black pepper

Steps:

  • In a large pot over high heat, heat the oil and butter. Working in 2 batches, cook the beef until browned on all sides, 1 to 2 minutes. Add the cumin, chili powder, garlic and some salt and pepper and cook for 1 to 2 minutes to deepen the flavors.
  • Add the beef broth and chipotle peppers with adobo sauce, stir and bring to a boil. Reduce the heat to low, cover and simmer until the meat is fall-apart tender and the liquid is thick, 2 1/2 to 3 hours. Check occasionally and add more beef broth if the sauce becomes too thick or dry.
  • Serve immediately and garnish with the green onions, or allow to cool, cover with foil and refrigerate. To reheat, cook at 350 degrees F for 30 minutes. Garnish with the green onions before serving.
  • If serving with the Pimiento Cheese and Bacon Grits, spoon the hot stew over the warm grits in a 9-by-13-inch baking dish and serve immediately or cover with foil and refrigerate. To reheat, cook at 350 degrees F for 30 minutes. Garnish with the green onions before serving.
  • In a skillet over medium heat, cook the bacon until crisp, 10 to 12 minutes. Remove it to a paper towel-lined plate.
  • Meanwhile, bring 4 cups of water to a boil in a medium saucepan. Whisk in the grits and salt. Reduce the heat to low, cover and cook, stirring occasionally, for 30 minutes.
  • Stir in the half-and-half and cook until the grits are tender and creamy, about 20 more minutes.
  • Add the pimientos, cream cheese, Cheddar and mustard and stir until melted together and combined. Chop the bacon into small pieces and add to the grits. Stir in the pepper and serve.

1/2 cup chopped onion
2 garlic cloves, smashed
1 (16 ounce) can tomatoes, cut up
1 (10 1/2 ounce) can condensed fat-free reduced-sodium beef broth
1 tablespoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon dried basil, crushed
4 large carrots
1 (10 ounce) package frozen chopped broccoli (or fresh)
1 tablespoon cornstarch

Steps:

  • Trim fat from meat.
  • Cut meat into 3/4 inch cubes.
  • Spray a large saucepan with veggie spray.
  • Heat saucepan, add meat, onion and garlic, cook over medium high heat 'til meat is brown and onion is tender.
  • Drain off fat.
  • Stir in undrained tomatoes, broth, chili powder, cumin, basil and 2 cups water.
  • Bring to boil, reduce heat, cover and simmer for 1 1/2 hours or'til meat is tender.
  • Cut carrots into thin match like strips.
  • Stir carrots and broccoli into meat mixture.
  • Cover and simmer 8 to 10 minutes more or 'til tender crisp.
  • Stir together cornstarch and 2 tablespoon cold water.
  • Stir into stew, cook and stir until bubbly, cook and stir for 2 minutes more.

4 small red potatoes (cubed)
1 onion (sliced)
6 garlic cloves (whole)
1/2 cup baby carrots
1 jalapeno (sliced)
1/2 cup frozen peas
1/2 cup red wine
1/2 cup beef broth
4 ounces tomato paste
1/4 cup water
1 teaspoon paprika
1 teaspoon cayenne pepper
1/2 teaspoon allspice
salt and pepper

Steps:

  • Mix the wine, beef broth, tomato paste water, paprika, cayenne pepper salt, pepper and allspice together in a large bowl. Stir in the uncooked beef chunks. Cover and let marinate in the refrigerator overnight.
  • Put potatoes, onion, garlic, baby carrots and jalepeno into the crock pot.
  • Pour beef mixture over the vegetables and stir well with a wooden spoon.
  • Set on low heat. Let cook for at least 8 hours. The meat should be tender and falling apart.
  • Stir in frozen peas approximately 30 minutes before you plan on serving the stew.
  • Serve over yellow rice.

Number Of Ingredients 12

3 ½ tbsp vegetable oil
1kg stewing beef , cut into chunks
1 onion , sliced
2 garlic cloves , sliced
1 tbsp plain flour
1 tbsp black treacle
1 tsp cumin
400g can chopped tomato
600ml beef stock (from a cube is fine)
2 red peppers , deseeded and sliced
400g can cannellini bean , drained and rinsed
soured cream and coriander, to serve

Steps:

  • Heat 1 tbsp of oil in a large saucepan with a lid. Season meat, then cook about one-third over a high heat for 10 mins until browned. Tip onto a plate and repeat with 2 tbsp of oil and rest of the meat.
  • Add a splash of water and scrape pan to remove bits. Add ½ tbsp oil. Turn heat down, fry onion and garlic until softened. Return meat to the pan, add flour and stir for 1 min. Add treacle, cumin, tomatoes and stock. Bring to boil, reduce heat, cover and simmer for 1 hr 45 mins. Stir occasionally and check that the meat is covered with liquid.
  • Add peppers and beans, and cook for a further 15 mins. The stew can now be cooled and kept in the fridge for 2 days, or frozen for 1 month. Serve in bowls, with sour cream, coriander and cornbread.

1 tbsp rapeseed oil
2 large onions , thinly sliced
1 tbsp finely chopped ginger
3 garlic cloves , chopped
1 large red chilli , deseeded and thinly sliced
1 tbsp thyme leaves
1 tsp cinnamon
1 tsp smoked paprika
2 tsp ground coriander
2 tsp cumin seeds
2 x 400g cans chopped tomatoes
800ml vegetable bouillon made with 4 tsp vegetable bouillon powder
2 green peppers , seeded and cubed
1 sweet potato , seeded and cubed
2 plantains , peeled and sliced
160g brown basmati rice
2 x 400g cans red kidney beans , drained
handful fresh coriander , chopped, plus extra for sprinkling
140g thick, unsweetened coconut yogurt

Steps:

  • Heat the oil in a large non-stick pan and fry the onions for 8 mins until softened and golden. Add the ginger, garlic, chilli and thyme and cook, stirring, for 1 min. Add the spices, stir briefly over the heat, then pour in the tomatoes and bouillon, and stir in the peppers, sweet potato and plantains. Cover and leave to simmer for 30 mins.
  • Meanwhile, boil the rice according to pack instructions. Stir the beans into the stew with the coriander and cook gently for 10 mins until the peppers are tender.
  • Spoon half the rice and stew into two bowls, top each with 2 tbsp yogurt and scatter with coriander, to serve. Cool the remaining stew and rice, then cover and chill to eat on another night with the remaining yogurt. To serve again, gently reheat the stew in a pan with a splash of water until bubbling. The rice can be reheated in the microwave.
