4 sirloins steaks sliced to 1/2-inch
Butter
1 medium yellow onion diced
4 ounces sliced button mushrooms
1 pint English pale ale (recommended: Bass)
1 teaspoon dried thyme
1 teaspoon dried parsley
1/4 teaspoon nutmeg
1 stick butter
2 tablespoons all-purpose flour

Steps:

  • Season steaks on both sides with salt, pepper and butter. Put onto a hot grill and brown on both sides.
  • In a Dutch oven or cast iron fry pan, add 1/2 stick of butter, onions, mushrooms and salt. Place lid on top and allow them to sweat.
  • Add beer and place steaks in pan. Allow to stew until tender.
  • Combine the thyme, parsley, nutmeg, remaining butter and flour together. Use this to thicken the sauce so as to be able to coat the back of a spoon.

This great summer party spread takes surprisingly little time to put together and gives guests plenty of ways to personalize their tacos. Chicken thighs and skirt steak get flavor from a chipotle marinade and cook in under 10 minutes. The corn for the relish, a spoonable version of the popular Mexican street food elote, also gets a quick char on the grill; the other toppings need no cooking.

1 to 2 chipotles in adobo sauce, plus 1 to 2 tablespoons of the sauce
1/2 cup fresh orange juice
1/4 cup cider vinegar
1/4 cup dark brown sugar
1/4 cup vegetable oil
Kosher salt
1 pound boneless skinless chicken thighs (4 to 5 pieces)
1 pound skirt steak
2 tablespoons vegetable oil, plus more for oiling the grill grates
4 ears corn, shucked
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1/4 cup mayonnaise
2 teaspoons grated lime zest
2 tablespoons fresh lime juice
2 tablespoons grated Parmesan
1/4 cup loosely-packed cilantro leaves
24 soft corn tortillas
2 cups shredded Monterey Jack
2 avocados, diced
2 limes, cut into 8 wedges each
1 cup thinly-sliced red radishes
2 cups prepared pico de gallo or salsa

Steps:

  • For the marinade: Pulse the chipotles and adobo sauce, orange juice, cider vinegar, dark brown sugar, oil and 1/2 teaspoon salt in a mini-food processor or blender until smooth and emulsified. Reserve 1/3 cup of the marinade and set aside. Place the chicken and steak in separate large resealable plastic bags, divide the remaining marinade between the bags and toss the meats to coat. Seal the bags and refrigerate for 1 hour.
  • For the corn salsa: Prepare a grill for medium-high heat. Lightly oil the grill grates. Brush the corn cobs evenly with 2 tablespoons vegetable oil and sprinkle ears with 1/2 teaspoon salt and a few grinds of pepper. Grill, turning occasionally, until the kernels are cooked through and charred in spots, 10 to 15 minutes. Set aside to cool slightly; keep the grill heat at medium-high.
  • Whisk the mayonnaise, lime zest, lime juice, and Parmesan in a large bowl until combined. Cut off the corn kernels with a paring knife and stir into the mayonnaise mixture. Mix in the cilantro and set aside.
  • For the taco bar: Transfer the chicken and steak to a rimmed baking sheet and sprinkle with 1 teaspoon salt . Wrap the tortillas in foil and set to the side on the heated grill to warm while you cook the meat.
  • Arrange the chicken and steak on the grill, brush the tops with some of the reserved marinade and cook 5 minutes. Flip, and cook until the chicken is cooked through and the steak is medium-rare, another 5 minutes for thinner pieces, and 7 to 8 for thicker. Right before you take the chicken and steak off the grill, brush with the reserved marinade, flip, and cook to caramelize the marinade, about 1 more minute. Transfer the chicken and steak to a cutting board and let rest 5 minutes before slicing. Roughly chop the chicken into 1-inch chunks and slice the steak across the grain. Serve immediately with the tortillas, corn salsa, Monterey Jack, avocados, limes, radishes and salsa.

¼ cup cider vinegar
¼ cup vegetable oil
2 teaspoons seasoned salt
1 teaspoon red pepper flakes
1 teaspoon monosodium glutamate (such as Ac'cent®)
½ teaspoon ground black pepper
¼ teaspoon salt
4 skinless, boneless chicken breast halves - cut into chunks
2 tablespoons vegetable oil
1 cup heavy whipping cream
1 (8 ounce) package egg noodles

Steps:

  • Mix cider vinegar, 1/4 cup vegetable oil, seasoned salt, red pepper flakes, monosodium glutamate, black pepper, and salt in a resealable plastic bag. Place chicken pieces into marinade, seal bag, and marinate in refrigerator for 1 hour.
  • Heat 2 tablespoons vegetable oil in a large skillet over medium heat. Remove chicken from marinade; discard used marinade. Cook chicken in hot oil until browned and no longer pink inside, about 10 minutes. Stir frequently. Transfer chicken to a bowl with a slotted spoon, leaving accumulated juices in skillet.
  • Whisk whipping cream into pan juices and cook until cream has started to thicken, about 5 minutes. Stir chicken back into skillet and reduce heat to low. Simmer chicken in cream sauce until sauce is thick, 15 to 20 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain. Gently stir cooked noodles into skillet with chicken and cream sauce.

3 cups heavy cream
6 tablespoons freshly grated parmesan cheese

4 (6 ounce) boneless chicken breasts

1 lb linguine, cooked
1 cup diced tomato
1/4 cup sliced green onion
1/2 cup shredded parmesan cheese
8 pieces garlic toast

Steps:

  • To prepare the sauce, melt butter over medium heat. Add all-purpose flour, stirring until blended. Continue stirring for 3 minutes. Remove pan from the heat.
  • Add milk and cream and whisk until well-blended. Return pan to medium heat. Heat mixture, stirring frequently until temperature reaches 200°F The mixture will just begin to bubble up the sides of the pot. When the mixture reaches 200° F, remove from the heat and add the 6 tablespoons of Parmesan and 3 tablespoons of Cajun seasoning.
  • Sprinkle chicken breasts with the Cajun seasoning. Grill for 6 to 8 minutes, or until an internal temperature of 165° F is reached.
  • Pour 4 cups of Cajun Cream Sauce into a large saute pan. Add linguini and toss with tongs until pasta is evenly coated with the sauce. Cook over medium heat for about 30 seconds.

EASY SPICY PASTA



Easy Spicy Pasta image

This is an easy spicy pasta dish with a few different elements to bring out the spice. The best part is... you can control the amount of spice you want throughout the dish and each guest can add more spice to their taste. I like the recipe due to the minimal effort it takes to prepare/cook and it also has other flavors to offer amongst the spice like starchy noodle and caramelized meat. Small details are explained in the directions (just in cause all of you aren't experts on cooking!)

1/2 lb penne pasta
1/2 ring polska kielbasa
1 red pepper
1 (26 ounce) jar of your favorite red pasta sauce (no meat)
1/2 tablespoon oil
cayenne pepper
shredded colby-monterey jack cheese

Steps:

  • Start heating up your water for the pasta.
  • Cut your Kielbasa half into 1/4 inches medallions (I like to cut them at an angle, makes them look prettier) and throw them into a hot pan (about medium temperature). Cook the Kielbasa for about 10 minutes, flipping them over about half the time to caramelize each side. If you think they will stick to the pan, add the 1/2 tablespoon oil. Adjust heat as needed.
  • While your Kielbasa cooks, prepare the red pepper. Cut the pepper in half and remove the stem and seeds. If you like a lot of spice, leave the seeds in, if you cant handle a lot of spice, scoop them out along with the membrane. Once cleaned out, cut the pepper into 1/4 inch strips. They will end up kind of long so cut them in half.
  • Remove Kielbasa from pan and leave on a plate while the pepper strips cook. Pour in 1/2 tablespoon oil into the same pan and let it heat up. Add noodles to boiling water (it should be boiling by now) and set a timer for 10 minutes. You don't want to cook the noodles to al dente since they will simmer in the sauce and soak up flavors, that will finish the few minutes of boiling the noodles missed. Toss your pepper strips into the pan and cook them for about 7 to 8 minutes (they will cook a bit more in the sauce too).
  • Add your pasta sauce to the pan and grab the Cayenne pepper. Sprinkle in however much you want until you get the desire spiciness. I didn't measure any certain amount out, I just sprinkled some in, stirred, tasted, repeat as needed. Don't forget to add your Kielbasa in too!
  • Drain your noodles and add them to the sauce. Stir well so the noodles are covered in the sauce. Simmer on medium to medium-low, covered, for about 10 minutes or until the noodles are al dente.
  • Serve with the Colby Jack cheese sprinkled on top and tell everyone there is more Cayenne pepper to spice it up more if they like!
