GRILLED FLANK STEAK
Steps:
- Make the marinade: Combine the canola oil, vinegar, mustard, garlic, oregano, parsley, rosemary and Worcestershire sauce in a food processor; season with salt and pepper. Pulse until the garlic and herbs are incorporated in the oil.
- Place the steak in a resealable plastic bag. Pour the marinade over the steak and marinate in the refrigerator at least 30 minutes or overnight.
- Make the sauce: Remove the steak from the bag and pour the marinade into a small pan. Bring the marinade to a boil, then reduce the heat to a simmer and cook until thickened, 2 to 3 minutes.
- Preheat a grill to high and oil the grates. Grill the steak 3 to 5 minutes per side for medium rare. Transfer to a cutting board and let rest 5 to 7 minutes, then slice against the grain. Serve with the herb sauce.

My ex husband always did steaks like this. It is so tasty, that I cannot eat a steak any other way. I am basing servings on my family. Prep time does not include the marinating of the steaks.

- In a glass baking dish, lightly sprinkle each steak with seasoned salt on both sides and rub into meat.
- Generously sprinkle with A-1 sauce and rub in on both sides of meat.
- Sprinkle with Worcestershire sauce on both sides and rub in.
- Sprinkle both sides with Parsley flakes and cover leaving steaks to marinate in refrigerator for at least an hour.
- Fire up the grill and when hot, put steak on the grill, add any extra marinade to the steaks from the dish, as they are grilling.
- For medium doneness, I grill for about 5 to 7 minutes on each side.

- Add steaks.
- Seal the bag and turn to coat.
- Refrigerate overnight, turning as often as you can. (I actually marinated my for a day and a 1/2.).
- Drain and discard marinade.

GRILLING THICK STEAKS - THE REVERSE SEAR
Steaks 2 inches thick or more generally don't respond well to traditional grilling over high heat. The outside and layer below it tend to be heavily charred and dry by the time that the center reaches the desired temperature (unless you are a black and blue fan). The reverse sear brings the steak up to temperature slowly over low indirect heat, allowing the meat enzymes to work their magic. The steak is then grilled at high temperature to get the appropriate crust.

- Season steak generously with salt and black pepper on both sides.
- Place wood chips in the smoker box of your gas grill according to manufacturer's instructions.
