Sweet Fruit Salsa with Cinnamon Chips image

2 tart green apples
1 kiwi fruit
1/2 cup red seedless grapes
1 cup fresh strawberries
1 small orange
2 tablespoons brown sugar
1 teaspoon Spice Islands® Ground Saigon Cinnamon
1/8 teaspoon Spice Islands® Ground Nutmeg
2 tablespoons apple jelly
1/4 cup sugar
2 teaspoons Spice Islands® Ground Saigon Cinnamon
10 (8-inch) flour tortillas
1 tablespoon melted butter OR margarine

Steps:

  • To prepare salsa: Finely chop apples, kiwi, grapes and strawberries and place in medium bowl. Grate orange peel to measure 1 teaspoon. Squeeze juice from orange. Add juice and grated peel to chopped fruit. Stir together brown sugar, cinnamon, nutmeg and apple jelly in small bowl. Add to fruit; toss gently to mix. Refrigerate 1 hour to mix flavors. To make cinnamon chips: Preheat oven to 400°F. Mix sugar and cinnamon in small bowl. Brush one side of tortillas with melted butter. Sprinkle cinnamon sugar mixture on tortillas. Cut each tortilla into 8 wedges (as you would a pie) and place on ungreased cookie sheet. Bake for 5 minutes, or until golden. Cool. Recipe Tip: substitute 1-¼ teaspoons Jamaican jerk seasoning for cinnamon and nutmeg in the salsa.

2 tablespoons honey
1 tablespoon minced fresh basil
1 tablespoon lemon juice
1 teaspoon ground cinnamon
Pinch kosher salt
1/4 cup sugar
1 teaspoon ground cinnamon
6 (8-inch) flour tortillas
4 tablespoons (1/2 stick) unsalted butter, melted

Steps:

  • For the salsa: In a large mixing bowl, combine the mixed stone fruits, honey, basil, lemon juice, cinnamon and salt. Stir to coat the fruit evenly. Taste and season accordingly. Refrigerate until ready to serve.
  • For the chips: Preheat the oven to 350 degrees F.
  • In a small bowl, combine the sugar and cinnamon. Brush both sides of the flour tortillas with the melted butter. Sprinkle the cinnamon sugar over both sides of the tortillas. Cut the tortillas into 8 wedges. Place on a baking sheet and bake until crisp, about 20 minutes, flipping half way through. Serve with the fruit salsa.
  • Cook's Note: Feel free to add in other fruits to the salsa. Try strawberries, nectarines and mango.

2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 pound strawberries
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor
10 (10 inch) flour tortillas
butter flavored cooking spray
2 tablespoons cinnamon sugar

Steps:

  • In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
  • Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

1 Peach
1 Nectarine
1 Plum
2 Apricots
10-15 Cherries
1 Tablespoon Finely Chopped Red Onion
1 Tablespoon Freshly Chopped Mint
¼ Lime
1 Bag of Tortilla Chips (Plain or Lightly Salted)
Coconut Oil (or Avocado Oil) Spray
¼ Cup Coconut Palm (or Cane) Sugar
2 Tablespoons Cinnamon
Note: If using the unsalted chips, add in ¼ teaspoon of salt to the cinnamon/sugar mixture.

Steps:

  • Cut up all fruit into small cubes and add to a serving bowl.
  • Add in red onion, juice from ¼ of a lime, and fresh mint.
  • Gently fold all ingredients together and set aside.
  • Preheat oven to 250° Fahrenheit.
  • In a small bowl, mix together the cinnamon and sugar (and salt if using the Original flavor chips).
  • Place parchment paper on a large baking sheet.
  • Lay out the entire bag of tortilla chips in a single layer on the baking sheet.
  • Spray with coconut oil (or avocado oil). If you don't have this in a spray version, you can brush the oil on.
  • Sprinkle with cinnamon sugar mixture using a spoon. Try to coat the chips fully and evenly.
  • Flip the chips over and repeat steps 5 and 6.
  • Place into the 250° Fahrenheit oven and bake for just 5 minutes. This will just help the cinnamon sugar mixture stick to the chips.
  • Serve with fresh stone fruit salsa!
