Use this dough to make Old Vienna Apple Strudel.

Ingredients:

  • 1 1/2 cups (200 grams) unbleached bread flour, plus more for work surface
  • 1/4 teaspoon fine sea salt
  • 1 large egg
  • 1 tablespoon vegetable oil, such as safflower, plus more for bowl
  • Warm water

Steps:

  • Stir the flour and salt together in a bowl of an electric mixer.
  • Beat the egg and oil together with a fork in a 1-cup liquid measuring cup. Add enough warm water to make 2/3 cup.
  • Use a rubber spatula to mix the liquid into the flour; make sure no flour remains on the side of the bowl and clean off the spatula.
  • Attach the dough hook to an electric mixer and mix the dough on low speed until it begins to hold together, about 5 minutes. Increase the speed a couple of notches to just below medium and mix until the dough is smooth and elastic, another 5 minutes.
  • Scrape the dough onto a lightly floured work surface and knead for 1 minute. Coat a small bowl with a very thin layer of oil and invert the dough into it; turn the dough over so that the top is oiled, and directly cover the surface of the dough with plastic wrap. Let rest for at least one hour or up to overnight.

Ingredients:

  • 2 1/2 cups flour
  • 1 cup butter or 1 cup margarine
  • 1/8 teaspoon salt
  • 1/2 cup sour cream
  • 3 large egg yolks
  • 1 package yeast

Steps:

  • Cut the flour, butter, and salt together as for pastry.
  • Have the sour cream and egg yolks at room temperature.
  • Dissolve the yeast in the sour cream and add to the flour-butter mixture along with the egg yolks.
  • Stir all together and knead with the hands until mixture is smooth.
  • Brush the dough with butter and chill for 8 hours, or overnight.
  • When ready to use, place the dough on a lightly floured board, pat it down, and then turn it over so that both sides are floured.
  • Using a rolling pin, roll the dough as thin as possible.
  • It will make a long, very thin sheet of dough which may be cut in two to make two Strudels.
  • Spread dough with filling, keeping filling short of the edges.
  • Fold sides of dough over the filling, then roll the dough carefully and seal the edges so that the filling does not seep out.
  • Lift the roll carefully and place in a buttered shallow baking pan.
  • Bake at 350 degrees for 50 to 60 minutes, or until browned and done.

  • Arrange 1 sheet of phyllo on a work surface with the short side nearest you (keep the remaining sheets covered) and brush with some butter. Top with 2 more phyllo sheets, brushing each sheet with butter. Place a heaping 1/4 cup blueberry mixture over the lower third of the buttered phyllo, leaving a 2-inch border along the bottom and sides. Fold the bottom edge of the phyllo up over the blueberry mixture and fold in the sides to enclose the filling completely. Roll up the phyllo to form a strudel, about 4 by 2 inches.   • Peel, core and dice apples into ¼" (or slightly larger) pieces. Place apples into a bowl and toss with lemon juice as you are dicing to prevent them from browning. Melt butter in a large skillet set over medium heat and then stir in brown sugar, salt and cinnamon until sugar dissolves—about 30 seconds.
  • Add apples along with juices to skillet and stir to combine. Bring to a bubble and cook 8–9 minutes, stirring frequently. Sift flour over apples and stir to combine. Cook 1–2 minutes then remove from heat and cool to room temperature. While filling is cooling, preheat oven to 400 degrees.
  • Roll puff pastry on a lightly floured surface into a 10" x 12" rectangle. Transfer pastry to a sheet of parchment paper. With long side of dough facing you, spread softened cream cheese into a 4" x 10" rectangle directly in the center of the dough leaving at least a ½" border on left and right sides. Add the cooled apples on top of the cream cheese layer.
  • Beat one egg in a small bowl to use as an egg wash. Fold the top flap of dough down over the filling and brush the top with egg. Fold bottom flap up and over, allowing the egg to seal dough together. On the left and right sides, press the edges together and fold flaps of dough under.

  • Add the flour, egg, water and salt into a bowl of a stand mixer and knead the dough (with a dough hook) until it is nice and smooth (about 3-5 minutes). The dough should not be sticky and should come together in a coherent ball. The dough will be quite stiff,. If in doubt whether you've kneaded it enough: the dough should feel smooth, slightly flexible and should pass the "window pane test"***.
  • Take a little oil in your hand and cover the dough ball iwth a thin layer of oil. Cover the bowl with a plate/cover to make it air tight.
  • Place it in the fridge for at least 1 hour. Leaving it in for longer, preferably an extra hour will be beneficial and will make it easier to stretch out the dough. Best to take some time here!

  • Transfer the dough to a clean work surface and knead for 2-3 minutes, until smooth. Slam the dough onto the work surface a few times to enhance gluten development, then shape into a ball and transfer the dough to a lightly oiled bowl, giving the dough a quick torn to lightly coat it in oil on top so it doesn't dry out. Cover the bowl tightly with plastic wrap and let the dough rest for 60-90 minutes.
  • When the dough is almost done resting, heat the oven to 375 degrees F. Place the raisins in a bowl of hot water to soak. Peel, core, and slice the apples into thin slices. Mix the sugar and cinnamon together. Cover your kitchen table or large counter space with a clean tablecloth or sheet.
  • To stretch the dough, first move it from the bowl to a clean, dry surface and cut it cleanly in half with a bench scraper, pizza cutter, or large knife. Set one half of the dough to the side. Shape the other half of the dough into a ball and roll it out as thin as you can.
