Sugar Free Blueberry Syrup image

This simple low carb syrup is great for topping low carb ice cream, cheesecake, pancakes, or waffles. The recipe can be used with any kind of berry.

2 ½ cups blueberries ((fresh or frozen))
1/4 cup low carb sugar substitute (or powdered erythritol)
1/2 cup water
1 teaspoon fresh lemon juice
1/2 teaspoon stevia concentrated powder

Steps:

  • Mix all ingredients in medium saucepan.
  • Simmer 10 to 15 minutes.
  • Cool and refrigerate.

My husband's family makes a cranberry beverage for the holidays. I changed it up and serve it this way in winter and summer, when blueberries are in season. -Rebecca Bratsman, Tacoma, Washington

Yield 20 servings (1 cup each).

Number Of Ingredients 7

2 cups sugar
4 cups water
1 can (12 ounces) frozen limeade concentrate
1 can (12 ounces) frozen orange juice concentrate
2 cups blueberry juice or blueberry juice cocktail
2 liters regular or diet lemon-lime soda, chilled
Fresh or frozen blueberries, optional

Steps:

  • In a large saucepan, combine sugar and water; bring to a boil, stirring to dissolve sugar. Cool 30 minutes., Stir juice concentrates and blueberry juice into syrup; divide mixture (about 2 cups each) among five 1-1/2-pint freezer containers. Freeze, covered, overnight or until firm., For each four-serving batch, place one portion frozen mixture into a blender; add 1-2/3 cups soda. Cover and process just until blended. Serve immediately. If desired, serve with blueberries.

1 (8 ounce) vanilla instant pudding mix
2 cups sugar
1 (8 ounce) Cool Whip
2 tablespoons vanilla flavoring

Steps:

  • Place milk in electric mixing bowl.
  • Make pudding according to directions on box.
  • Add pudding & sugar to mixer, blend well.
  • Add Cool Whip and Vanilla to mixer, blend well.
  • Pour mixture into 1 gallon ice cream maker.

This dairy-free and vegan friendly "ice cream" is so smooth and sweet, and very easy to do! Tastes just like soft serve. To mix it up, consider adding cocoa powder, chocolate chips, nuts, honey, fresh or dried mint, maple syrup, strawberries or other fruit.

1 -2 ripe banana, peeled and frozen
1/2 teaspoon vanilla extract
1 ice cream cones (optional)

Steps:

  • Peel ripe bananas and freeze them on a plate, in a ziplock, or wrapped in parchment paper for 5-10 hours until solid.
  • Break bananas and add to blender with vanilla.
  • Add 1-3 Tbsp of mix-ins or toppings.
  • Blend on high until creamy. Stir as needed. Add a tiny bit of water to thin if blender keeps getting stuck.
  • Serve into bowls or ice cream cones.
