Almond Flour Crackers image

Homemade almond flour crackers with 4 simple ingredients: almond flour, water, ground flaxseed and sea salt. Rich, buttery, crunchy, gluten-free, vegan and perfect for dipping into hummus!

1 cup almond flour (not almond meal)
3 Tablespoons water
1 Tablespoon ground flaxseed
1/2 teaspoon fine sea salt
flaked sea salt (optional)

Steps:

  • Preheat oven to 350°F.
  • Add almond flour, water, ground flaxseed, and sea salt into a medium sized bowl and stir together until the mixture turns into dough.
  • Place the dough on a piece of parchment paper and cover with a second piece of parchment.
  • Pat it out with your hands and then use a rolling pin to roll out the dough. You'll want the dough to get pretty thin - about an 1/8 of inch thick. Try to keep form the dough into a rectangular shape, but it's okay if it's not perfect.
  • Once the dough is rolled out, remove the top sheet of paper and sprinkle a bit of flaked sea salt over the dough. Use your hands to press the salt down to help it stick. This step is optional, but the flaked sea salt makes the crackers really pretty.
  • With the top sheet of parchment removed, use a pizza wheel or knife to cut the dough into small squares. I made mine about 1/2 -1 inch. If you want to get fancy you can use a tooth pick to create a little hole in the center of each cracker.
  • Carefully transfer crackers (still on parchment paper) to a baking sheet and bake the crackers for 20-25 minutes or until the crackers turn golden brown and crispy. The pieces on the outer edges will get brown faster than the center pieces. You can transfer those that are golden to a cooling rack and put the pan back in the oven to bake the remaining crackers.
  • Let the crackers cool completely, either on the baking sheet or on a cooling rack. Enjoy immediately after cooling.
  • Place any leftover crackers in an airtight container or bag. Crackers will keep on the counter or in the pantry for about 4-5 days.

1 cup almond flour
2 tablespoons finely chopped walnuts
1 ½ teaspoons flax seed meal
½ teaspoon salt
2 tablespoons water
1 ½ teaspoons olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Mix almond flour, walnuts, flax seed meal, and salt together in a bowl until well combined. Add water and olive oil; mix until dough is moist and holds together.
  • Turn dough onto prepared baking sheet. Place a second piece of parchment over dough. Roll dough, using a rolling pin, into a 1/16-inch thick rectangle. Remove top piece of parchment paper and cut sides of dough to make an even rectangle. Add excess dough to corners or 1 end of rectangle and re-roll to uniform thickness.
  • Cut dough into 1-inch squares using a pizza cutter, keeping dough still attached.
  • Bake in the preheated oven until outside edges of dough are browned, about 15 minutes. Cool crackers on the baking sheet; break into squares.

This is a fantastic, quick to prepare snack. You will love the combination of salty/sweet taste and the crunch of the almonds and browned crackers. I got the recipe from my friend after we tasted these snacks at her home. These crackers are really pleasing to the eye and will keep several days in a container with a tightly-fitting lid. They would also make a great Christmas gift in a decorative tin.

5 ounces Club crackers
1/2 cup butter
1/2 cup sugar
1 teaspoon vanilla
1/2 cup sliced almonds

Steps:

  • Arrange single layer of Club Crackers on a cookie sheet with sides.
  • In saucepan, melt butter, add sugar and boil for two minutes; add the vanilla and stir. Pour immediately over crackers and sprinkle with sliced almonds.
  • Bake in the oven for 10-12 minutes at 350 degrees or until lightly browned.
  • Cool, break apart crackers carefully and arrange on serving platter.48.

This treat is made with butter crackers, brown sugar, a little vanilla and sliced almonds, great as a snack, dessert or for kids.

52 individual butter crackers, such as Club
8 Tbsp (1 stick) salted butter
1 cup firmly-packed brown sugar
1 tsp vanilla extract
1 cup sliced almonds

Steps:

  • Preheat the oven to 350ºF.
  • Arrange the crackers in a single layer on a rimmed baking sheet so that the baking sheet is completely covered with a solid layer of crackers. Set aside.
  • In a medium saucepan, melt the butter with the brown sugar and vanilla. Bring to a gentle boil over medium heat and boil until it starts to thicken, 1 to 2 minutes. Immediately pour the mixture over the crackers in an even layer. Use an offset spatula to spread the mixture all over the crackers. Bake for 5 minutes. Sprinkle the almonds all over, then let cool completely.
  • When cool, break apart for a great snack.

CHOCOLATE ALMOND ROCA BAR

My colleague Grace made up these these wonderful gift boxes of goodies including this recipe. These are so good and when I found out how easy they are to make, I was sold! Personally I like to use semi sweet chocolate chips, but that is personal preference. Split you wafers before placing in the pan but fit them tightly together--the grahams that split to approx 1x2 inches are ideal, but cut them to the size you like. After you have made the almond roca and cooled the tray, put it in the freezer for only 10 minutes to really solidify the chocolate. Then remove from freezer and flip the whole tray so you can see where the graham wafer splits are. It is then very easy to just slice gently with a knife and you get perfect cut pieces. I store mine in a tin box in the fridge, but if you have chocoholics they won't last so just put them out on a plate!

16 graham wafers
1 1/2 cups almonds, sliced
1 cup butter (not margarine)
1 cup brown sugar
1 1/2 cups chocolate chips

Steps:

  • Layer an 11x17-inch cookie sheet with sides with the graham wafers, cut to fit snuggly.
  • Sprinkle with the almonds and set aside.
  • Put the butter and brown sugar in a saucepan and bring to boil, stirring to incorporate the butter.
  • Pour in a thin stream over the almond/wafer base.
  • Place in 350 Oven for 8 minutes until bubbly all over.
  • Remove from the oven and sprinkle with Chocolate chips.
  • Run the tines of a fork through the chips to spread.
  • Set on counter to cool and cut into squares.
