3/4 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons vegetable oil
1/4 cup finely chopped shallots (1 to 2)
2 tablespoons unsalted butter
1/2 cup reduced-sodium chicken broth
1/4 cup country-style Dijon mustard
2 tablespoons heavy cream
2 teaspoons fresh lemon juice

Steps:

  • Put oven rack in middle position and preheat oven to 325°F.
  • Heat a dry 12-inch heavy skillet over moderately high heat until hot. Pat pork dry and sprinkle with salt and pepper. Add oil to hot skillet, swirling to coat, then brown chops, turning over once, about 8 minutes total. Transfer to a shallow baking pan, reserving skillet, and bake, uncovered, until cooked through, about 5 minutes. Let stand, loosely covered with foil, 5 minutes.
  • Meanwhile, pour off fat from skillet, then cook shallots in butter over moderate heat, stirring, until softened, 3 to 5 minutes. Add broth and any juices from baking pan and boil, scraping up any brown bits, 2 minutes. Add mustard and cream and return to a boil, then add lemon juice and simmer until sauce is slightly thickened, about 3 minutes.

6 pork loin chops or 6 rib chops, about 1-inch thick
2 tablespoons flour
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter or 2 tablespoons margarine
1/4 cup white wine
1 tablespoon lemon juice
1 1/2 tablespoons flour
1 cup light cream
2 tablespoons Dijon mustard
1 dash cayenne pepper

Steps:

  • Dry chops and cover with the flour, salt and pepper.
  • Brown in hot butter on both sides, about 20 minutes.
  • Add wine and lemon juice and simmer for about 45 or 50 minutes, or until tender. Remove to warm serving platter.
  • Make mustard sauce. Stir flour into drippings in skillet until smooth.
  • Stir in cream, mustard and cayenne.
  • Boil, stirring 1 minute.
  • Serve chops with sauce.

2 tablespoons chopped shallots

1 cup heavy cream

Squeeze of fresh lemon juice

2 teaspoons mixed chopped fresh herbs, such as chives, flat-leaf parsley, tarragon, and/or chervil leaves

Steps:

  • In a skillet large enough to hold the pork chops in a single layer, heat the oil over medium-high heat until it just begins to smoke. Add the chops and saute until well browned on each side, 4 to 5 minutes per side. Transfer to a platter and cover to keep warm. Discard the oil in the skillet, then wipe out the skillet with a paper towel. Set over medium heat and add the butter. When it's melted, add the shallots and garlic and saute until aromatic but not browned, about 1 minute. Remove the skillet from the heat and add the brandy; be careful here, because the brandy may ignite. Add the cream and mustard to the skillet and return the skillet to the heat, increasing the heat to high. Bring the mixture to a boil, then reduce the heat to low. Return the veal chops to the skillet, along with any accumulated juices, and simmer until the sauce has reduced enough to coat the back of a spoon and the chops are just cooked through, 4 to 5 minutes. Turn the chops in the sauce once as they cook. Remove the skillet from the heat and season the chops with lemon juice and salt and pepper. Transfer the chops to a serving platter, spoon sauce over them, and serve immediately, sprinkled with the chopped fresh herbs.

1/2 teaspoon salt
1/2 teaspoon pepper
2 thin slices deli Swiss cheese (1 oz each)
2 thin slices deli ham (1 oz each)
1/4 cup Gold Medal™ all-purpose flour
1 egg
2/3 cup Progresso™ plain panko crispy bread crumbs
3 tablespoons vegetable oil
1 tablespoon olive oil
1/4 cup finely chopped shallots
3/4 cup Progresso™ chicken broth (from 32-oz carton)
1/2 cup dry white wine
1/2 cup heavy whipping cream
2 tablespoons Dijon mustard
1 tablespoon chopped fresh parsley leaves

Steps:

  • Heat oven to 400°F.
  • Using small sharp knife, make pocket in each pork chop by cutting into side of chop toward bone. Season chops with 1/4 teaspoon salt and 1/4 teaspoon pepper.
  • Place Swiss cheese slices on top of ham slices, and starting from one of the short ends, roll up. Tuck 1 ham and cheese roll into each pork chop pocket.
  • In shallow pan, stir flour, remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Coat both sides of pork chops with flour mixture. Beat egg in shallow bowl with whisk to blend.   • Meanwhile, in 8-inch skillet, heat olive oil over medium-high heat. Add shallots; cook 2 to 3 minutes, stirring occasionally, until tender. Add broth and wine; cook 10 to 15 minutes or until reduced by three-fourths. Stir in cream; cook 3 to 4 minutes, stirring occasionally, until slightly thickened. Stir in mustard and parsley. Remove from heat.
  • Place pork chops on serving plates. Serve with sauce.

In the Burgundy region of France, home of Dijon, pork chops are traditionally served in a sauce made with mustard, cream and white wine, and there are very few pairings that are better. Richard Olney, a prominent food writer and authority on French cooking, sautéed sliced apples and chops and then baked them all together with cream and mustard dribbled on top. I prefer the method here, but you could always fry up some apples and serve them on the side. (For a dish with roots closer to Normandy than Burgundy, make the same recipe but omit the mustard, deglaze the pan with Calvados instead of wine and stir sliced sautéed Granny Smiths into the sauce itself.)

Immediately spoon sauce over the chops and serve.

2 pork steaks
3/4 cup onion
3/4 cup green bell pepper
1 stalk celery
1 (15 ounce) can diced tomatoes
1/2 cup low sodium beef broth
1 (8 ounce) can mushrooms (optional)
1 teaspoon Worcestershire sauce
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon garlic powder
1 1/2 cups flour
3 tablespoons oil (I use bacon fat)

Steps:

  • Wash pork to remove bone crumbs. Pat and partially dry steaks with paper towel,but leave moist enough for flour mixture to adhere to meat.
  • Combine salt,pepper and garlic powder with flour.
  • Push steak into flour mixture with hands making sure to coat both sides well. Let sit while oil is heating in pan.
  • Add oil to pan and brown steak on both sides,remove from pan when golden and let drain on paper towel.
  • Add green pepper,onion and celery to pan and lightly brown.
  • Add tomatoes,beef stock,worcestershire (and drained mushrooms if using) to skilet and boil for about three minutes.
  • Reduce heat to a simmer and return pork steak to pan.
  • Cook slow until meat is tender and broth has thickened. May be thickened with cornstarch and water if you like.
  • Serve over mashed potatoes or rice.
  • I also have made this for my picky eater by adding a can of cream of mushroom soup.

Dijon mustard-smeared pork with a piquant fennel and green bean salad and crispy potato fries

700g floury potato , cut into thin chips, patted dry
2 tbsp olive oil , plus 2 tsp
½ tsp fennel seed , crushed
½ tsp smoked paprika
280g pack green bean
2 tsp white wine vinegar
1 shallot , finely chopped
1 tsp sugar
1 tbsp Dijon mustard
1 large fennel bulb , halved and very thinly sliced
4 pork chops

Steps:

  • Heat oven to 220C/200C fan/gas 7. Toss the potatoes with 1 tbsp oil and some seasoning in a baking tray. Spread out in a single layer and bake for 20 mins. Add the fennel seeds and paprika, turn potatoes and bake for 20 mins more until golden.
  • Meanwhile, cook the green beans in boiling water for 5-6 mins. Run under cold water and drain well. Mix 1 tbsp more oil, the vinegar, shallot, sugar, 1 tsp mustard and some seasoning. Toss the fennel and green beans in the dressing.
  • Rub the remaining oil on the chops and season. Pan-fry for about 7 mins on each side until cooked through. Make sure to brown fat on the edge, too. Smear with remaining mustard and rest for a few mins. Serve with the chips and bean salad, drizzling over the mustardy resting juices.
