DELICIOUS TANGY PORK CHOPS

This is a variation of the 'Tangy Chicken' recipe here on Allrecipes.com. It's fast and easy. It makes the chops very juicy and tender. You may be put off by the lemon, but you really don't taste it that strong, it's overpowered by the Worcestershire Sauce. It seems the acid in the lemon helps make the more meat tender and helps the flavor soak in. The garlic is just a hint also, not too strong at all! Garlic powder could also be used.

½ cup lemon juice
½ cup Worcestershire sauce
½ cup vegetable oil
1 tablespoon minced garlic

Steps:

  • Combine the pork chops, lemon juice, Worcestershire sauce, vegetable oil, and garlic in a large resealable plastic bag. Squeeze as much excess air from bag as possible. Marinate in refrigerator 4 to 24 hours.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove the pork chops from the marinade directly to the grill. Discard the marinade.
  • Cook until the pork is no longer pink in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

6 bone-in pork loin chops (7 ounces each)
2 teaspoons canola oil
2 celery ribs, finely chopped
1 small onion, finely chopped
1 tablespoon butter
1/2 cup ketchup
1/4 cup water
2 tablespoons cider vinegar
1 tablespoon brown sugar
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1/8 teaspoon pepper
1 small onion, thinly sliced
1 large green pepper, cut into rings

Steps:

  • Preheat oven to 350°. In a large nonstick skillet, brown chops in oil in batches. Transfer to a 13x9-in. baking dish coated with cooking spray., In the same pan, saute celery and chopped onion in butter until tender. Stir in the ketchup, water, vinegar, brown sugar, lemon juice, Worcestershire sauce, salt and pepper. Bring to a boil. Reduce heat; cover and simmer until slightly reduced, 15-20 minutes., Pour sauce over chops. Top with sliced onion and pepper rings. Cover and bake until a thermometer reads 145°, 20-25 minutes., Freeze option: Place pork chops in freezer containers; top with sauce. Cool and freeze. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, gently stirring sauce; add a little water if necessary.

Four 1 1/2-inch thick center cut bone in pork chops
Neely's Seasoning Salt, recipe follows
Sweet and Tangy Glaze, recipe follows
2 tablespoons kosher salt
1 tablespoon onion powder
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
1/4 teaspoon celery seed
1/4 teaspoon cayenne pepper
1/4 teaspoon smoked paprika
1/4 cup apple cider vinegar
1/4 cup tablespoon real maple syrup
2 tablespoons ketchup
2 tablespoons Dijon mustard
1 dash Worcestershire sauce
1 dash hot pepper sauce (recommended: Tabasco)
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the grill to medium-high heat.
  • Season the pork chops lightly on both sides with the Seasoning Salt. Remember, we aren't rubbing the chops.
  • Grill the chops for 5 to 7 minutes per side. Brush them with the Sweet and Tangy Glaze the last 5 minutes of grilling. Internal temperature should register 145 degrees F on an instant-read thermometer. Remove the chops from the grill to a serving platter and allow them to rest for 5 minutes before serving.
  • Mix the salt, onion powder, black pepper, garlic powder, celery seed, cayenne, and smoked paprika in a small bowl. Reserve a small amount for another use.
  • You can store the remaining Seasoning Salt in an airtight container for up to 6 months.
  • In a small bowl, mix together the apple cider vinegar, maple syrup, ketchup, mustard, Worcestershire, and hot sauce. Season with salt and pepper, to taste, and refrigerate if not using immediately.

1 large egg
¼ cup flour
1 cup panko breadcrumbs
4 (½-inch-thick) boneless center-cut pork chops (1 pound)

Steps:

  • 1. In a small bowl, whisk the ketchup, Worcestershire sauce, and soy sauce and reserve.
  • 2. In a shallow dish, beat the egg. Place the flour and crumbs in two separate shallow bowls. Sprinkle the pork with salt and pepper. Working with one piece at a time, dredge the pork in the flour to coat and shake off excess. Dip in the egg and let excess drip off. Finally, dredge in the panko until well coated. Transfer to a large clean plate. Repeat with the remaining ingredients.
  • 3. Fill a large, heavy skillet with oil to a depth of ¼ inch. Heat over medium heat until hot but not smoking. Add two pork chops; do not crowd the pan. Cook until golden brown on the bottom, about 3 minutes, then carefully turn the pieces over. Cook until golden brown and cooked through, about 3 minutes, then transfer to paper towels to drain. Repeat with the remaining pork, adding and heating more oil if necessary. Serve the pork with the dipping sauce.
  • 4. Once the stovetop is cool, wipe up any oil splatters or meat juices that may have spilled on the counter with Clorox® Disinfecting Wipes*. Rinse hands once complete.

3 tablespoons red wine vinegar
2 cloves garlic, minced
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh parsley
¼ teaspoon crushed red pepper flakes, or more to taste
4 (4 ounce) boneless pork chops, 1/2-inch thick
¼ cup chicken broth
1 tablespoon olive oil
½ yellow onion, thinly sliced
1 cup chicken broth
⅓ cup milk
¼ cup white wine
4 cremini mushrooms, chopped
4 white mushrooms, chopped
2 tablespoons all-purpose flour

Steps:

  • Whisk together 1/3 cup olive oil, vinegar, garlic, thyme, parsley, and pepper flakes in a bowl. Place pork chops in a glass or ceramic baking dish and pour marinade over top. Marinate in the refrigerator for 1 hour, turning chops after 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Pour 1/4 cup chicken broth in the bottom of a shallow roasting pan.
  • Remove pork chops from the marinade and shake off excess. Discard any remaining marinade.

1/2 cup chicken broth
1/3 cup brown sugar

  • Opt for Thick-Cut Bone-In Pork Chops. Thin-cut pork chops won't sear properly in the time it takes to cook them through. So while boneless, thin-cut pork chops are great for dishes like schnitzel or tonkatsu—recipes that call for breading and frying the chop—for a pan-seared chop you'll want to buy something that is at least one-inch-thick (we prefer center-cut rib chops), but no larger than two inches.
  • Skip the Brine, but Season Liberally. Not only is brining unnecessary for making tender pork chops, it can also introduce a lot more water to your meat, which will not improve its texture.
  • Let the Pork Chops Rest. Leave the seasoned meat at room temperature for at least 30 minutes (and up to two hours) to give the seasoning time to work its way into the meat, and to let the meat come to room temperature, which will allow it to cook more evenly.
  • Sear Pork Chops Over Medium-High Heat. Heat a skillet (preferably cast-iron, though stainless steel works too) over a medium-high burner. Our own Anna Stockwell likes to start her pork chops by searing the fat cap, which you can certainly do—other recipes may suggest doing this step last.
  • Baste the Pork Chops. Remove the pan from the heat and toss in a knob of unsalted butter, plus some hearty herbs and spices (rosemary, thyme, bay leaves, and dried chiles are all good bets).
  • Let the Pork Chops Rest, Again. While the pork chop rests, the temperature of the meat will continue to rise as the juices relax and redistribute throughout the chop.
  • Serve. You can choose to serve the chops as is, or to slice away the bone and cut the pork into 1/4- to 1/2-inch slices. If you haven't cooked pork to medium before, you may notice that it's pinker than you remember.
