Tasty Thai tuna burgers with a hint of sesame, ginger, and soy. Made from minced fresh tuna steaks, these are a delicious alternative to the all-beef patty. Serve with lettuce, tomato, and your own personal favorite burger toppings.

- In a bowl, thoroughly mix minced tuna, bread crumbs, green onion, carrot, ginger, cilantro, sesame oil, ketchup, soy sauce, cumin, salt, pepper, and egg. Cover, and refrigerate for 30 minutes.
- Preheat oven broiler.
- Form tuna mixture into 6 patties, and place in a broiler pan on top oven rack. Cook, uncovered, 4 minutes per side, or until easily flaked with a fork. Serve on hamburger buns with lettuce and tomato.

TUNA PATTIES
Simple dinner idea. We serve this with a veggie (usually broccoli or spinach) and either mac & cheese or fried potatoes. You can use cracker crumbs instead of breadcrumbs. It's just to soak up some moisture. The patties can be made earlier and set in the fridge. I've never frozen them, so you'll need to do your own experimentation for that! You can cook these in a George Foreman grill, or in a skillet or frying pan. We like them fried!

Steps:
- Mix all ingredients.
- Use more or less breadcrumbs, as needed, to soak up the moisture from the tuna and egg until it is the consistency of a "patty" (I'm sorry I can not explain this better!).
- Make into patties 1/2 inch thick.
- Sprinkle both sides of patties with pepper, and pat it inches.
- Warm up oil and butter in a pan over medium heat, enough so it's hot enough to cook but not burn. You know how your own burners work.
- Fry until golden brown, and flip to cook the other side.
SPICY TUNA & CHICKPEA PATTIES

- Mix the yogurt with half the coriander in a small bowl. Cover and chill until needed.
- Tip the chickpeas into a food processor. Blitz for a just a few seconds so they keep some of their texture. Transfer to a large bowl. Flake in the tuna and mix in the onion, garlic, lemon juice, cumin, chilli and rest of the coriander. Season, then gently stir to mix all the ingredients. Shape into 12 patties with your hands. Dust with flour.
- Heat half the oil in a large frying pan. Cook 6 patties for 5-6 minutes, turning over after 3 minutes. Keep them warm while you cook the rest.
- Put the tomatoes in the pan. Cook over a high heat for 30-40 seconds until warmed through and starting to soften. Serve with the patties (3 per person) and the coriander dip.

This is a great recipe I came up with to get rid of leftover bread. I generally use the contents of my vegetable drawer here so I kind of throw in whatever I have at the time, so you can use your own judgment. They taste really nice when eaten with sour cream or low-fat mayo or even on their own - though my husband prefers ketchup. I generally use this recipe as a guideline, so have fun with it!

- Soak bread in water in a large shallow dish until softened completely; remove from dish and squeeze as much water from bread as possible.

- If baking(you can also fry-instructions below), preheat oven to 450 degrees F.
- In a small bowl, mix sauce ingredients. Place 2 tbls. of the sauce in a large bowl. Cover and chill the remaining sauce in the fridge.
- To the same large bowl, add the eggs, panko, soy sauce, and Thai chili sauce. Break up the tuna and add to the bowl. Add celery, green onions and red bell pepper. Salt and pepper to taste. Stir and let stand about 10 minutes.
- Using wet hands, shape the tuna mixture into 4 patties, about 3/4" thick.
- If you want to fry them, put the oil in a skillet and heat on medium high heat. Turn down the heat to medium and add burgers and saute about 4-5 minutes each side, turning gently.
- If you bake them, place on baking sheet. Bake at 450*F. for 10-12 minutes.
- To serve, spread sandwich buns with remaining mayo/ginger sauce. Add patties to the bottom half of bun. Top with baby greens, and top buns.
- Enjoy!

- Heat skillet.
- In large mixing bowl, flake tuna and add in the rest of the ingredients (except sesame seeds.).
- Drop spoonfuls to desired size on heated skillet. The mix will be kind of runny, not something you want to try to mold in your hands. If you like, you can lightly sprinkle sesame seeds on top before turning (this is mostly for looks.).
- Great served with soy sauce, brown rice and steamed veggies or with a gyoza dipping sauce. *Note: If you're not concerned about the WW Core-ness of this recipe, you can use breadcrumbs instead of oatmeal and increase the oil a bit. Serving size is 2-3 patties.

- Spread 1/4 cup of the bread crumbs in an even layer on a sheet of waxed paper, reserve.
- With kitchen scissors, snip enough chives or green part of scallion to measure 2 tablespoons.
- In a medium bowl, stir together the mayonnaise, egg yolk, chives, pickle relish, and cayenne pepper until combined.
- Flake the tuna into a bowl.
- Add the remaining 1/4 cup bread crumbs and stir until well combined.
- Drop 1/4 of the tuna mixture onto the crumbs on the waxed paper and form into an oval patty (about 3 inches).
- Coat both sides in crumbs.
- Repeat with the remaining tuna mixture and crumbs.
- Heat the olive or vegetable oil in a large nonstick skillet over medium heat.
- Add the patties and cook until golden brown and heated through, about 3 minutes per side.

- In a medium bowl, toss the cucumbers, onion, vinegar, 1 tablespoon of the sugar and 1 teaspoon of salt. Season with pepper and let stand for 1 hour at room temperature.
- In a mortar or medium bowl, using the back of a spoon, mash the ginger with the garlic, chile and remaining 1 teaspoon of sugar to a paste. Stir in the fish sauce, cilantro and basil. On a clean cutting board, thinly slice the tuna. Stack the slices and cut into thin matchsticks. Cut the matchsticks into rough cubes, then chop until the pieces are roughly 1/8 inch. Add the tuna to the ginger paste and stir until evenly combined.
- Using lightly moistened hands, shape the tuna mixture into 4 patties about 1 inch thick. Set them on a large plate lined with plastic wrap. Refrigerate the tuna burgers for 20 minutes.
- Light a grill. In a small bowl, combine the vegetable oil with the sesame oil. Lightly brush the burgers and the cut sides of the buns with oil. When the fire is medium hot, brush the grate with oil. Grill the burgers for 6 minutes, turning once, for medium rare. Move the burgers away from the heat and grill the cut sides of the buns until toasted, 1 minute.
