PEACH COBBLER

Peach Cobbler image

I found this peach cobbler recipe on the internet from the Salt Lick Restaurant in Austin, TX. Everyone loves this recipe so much I have to make a double batch! Feel free to cut back on the sugar. Everyone has and the peach cobbler still comes out perfect. :D Personally, I always use two bags of frozen peaches instead of canned.

Peach Cobbler image

This old fashioned Peach Cobbler recipe is not only extremely easy to make from scratch, but it's made with fresh or canned peaches so you can enjoy it all year round!

Provided by Lauren Allen

Categories     Dessert

Time 55m

Number Of Ingredients 10

5 peaches (, peeled, cored and sliced (about 4 cups))
3/4 cup granulated sugar
1/4 teaspoon salt
6 Tablespoons butter
1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
ground cinnamon

Steps:

  • Add the sliced peaches, sugar and salt to a saucepan and stir to combine. *(If using canned peaches, skip steps 1 & 2 and follow the directions starting at step 3)
  • Cook on medium heat for just a few minutes, until the sugar is dissolved and helps to bring out juices from the peaches. Remove from heat and set aside.
  • Preheat oven to 350 degrees F. Slice butter into pieces and add to a 9x13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven.
  • In a large bowl mix together the flour, sugar, baking powder, and salt. Stir in the milk, just until combined. Pour the mixture into the pan, over the melted butter and smooth it into an even layer.
  • Spoon the peaches and juice (or canned peaches, if using) over the batter. Sprinkle cinnamon generously over the top.
  • Bake at 350 degrees for about 38-40 minutes. Serve warm, with a scoop of ice cream, if desired.

HOW TO MAKE THE BEST PEACH COBBLER

How to Make the Best Peach Cobbler image

Ree makes one of the best peach cobblers! Try her foolproof recipe with fresh peaches or even fresh plums for a plum cobbler. Just don't forget the ice cream!

Categories     picnic     Summer     baking     fruit

Time 25m

Yield 8-10 servings

Number Of Ingredients 13

Salted butter, for the baking dish
3 1/2 lb. fresh peaches
2/3 c. sugar
3 tbsp. cornstarch
1/4 tsp. kosher salt
3 tbsp. lemon juice
1 1/4 c. all-purpose flour
1/3 c. sugar
1 tsp. baking powder
1/4 c. salted butter, diced
1/2 c. whole milk
1 tbsp. coarse sugar, like sugar in the raw
Vanilla ice cream or freshly whipped cream, for serving

Steps:

  • Preheat the oven to 375˚. Butter a 9-inch by 13-inch baking dish.
  • For the fruit: Slice the peaches and remove the pits. Place them in a large bowl. In a small bowl, whisk together the sugar, cornstarch and kosher salt, until no small lumps of cornstarch can be seen. Set aside.
  • For the topping: In a separate medium bowl, whisk together the flour, sugar, and baking powder. Add the butter then cut it into the flour mixture with a pastry blender or your fingers, until pea-sized clumps form. Pour the milk into the flour mixture and stir with a fork until just combined.
  • Add the sugar mixture and lemon juice to the peaches and stir gently to combine. Pour the peaches into the prepared baking dish. With a small, trigger-handled ice cream scoop or two spoons, scoop small portions of the dough and drop it onto the surface of the fruit. (The topping will spread as it bakes.) Sprinkle all over with coarse sugar.
  • Bake until the topping is golden brown and the filling is bubbly, 45-50 minutes. (Tent the top of the cobbler with foil if the topping starts to get too dark). Let rest for 15 minutes before serving. Serve warm with vanilla ice cream or freshly whipped cream.

Black Folks Southern Peach Cobbler Recipe image

This soul food dessert and the darling favorite of the South is loaded with fresh, juicy peaches and topped with a light and airy cinnamon sugar crust. A cobbler so delicious, you may want to eat it all. All by yourself!

Provided by Shaunda Necole

Categories     Dessert

Time 1h

Number Of Ingredients 12

4 cups peaches (ripe & fresh, peeled and sliced (or two 28 oz. canned peaches, drained))
1 cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ginger (minced)
¼ cup water (cold)
2 tablespoons cornstarch
2 cups Bisquick (*See the notes below for how to make homemade Bisquick from scratch!)
1 cup milk
¾ cup sugar (granulated )
1 teaspoon vanilla extract
½ cup butter (melted )

Steps:

  • Preheat the oven to 350°F.
  • Place the butter in the baking dish and then place the dish in the oven to melt the butter while the oven is preheating.
  • Remove the melted butter from the oven after a few minutes and set it aside.
  • Peel and slice the peaches into quarters, and then halve the quartered peach slices. (If using canned peaches, use a colander to drain the peach juice before slicing them).
  • In a medium-sized bowl, mix the ingredients for the peach filling: peaches, brown sugar, cinnamon, nutmeg, and ginger. (I mixed the peach cobbler filling in my Instant Pot inner pot with the lid off and the 'keep warm' setting on.)
  • Add the cornstarch to the cold water and stir until smooth.
  • Pour the cornstarch mixture into the peach mixture.
  • Stir the peach mixture to combine the ingredients and then set aside.
  • In a second medium-sized bowl, whisk the ingredients for the cobbler batter: Bisquick, milk, sugar, and vanilla.
  • Pour the Bisquick mixture over the melted butter in the baking pan.
  • Then, pour the peaches into the Bisquick mixture (the dough will rise around the peaches as it bakes).
  • Bake at 350 degrees F for 50-60 minutes in the conventional oven. Bake at 350 degrees F for 35-45 minutes if using the Instant Pot Omni Plus oven. Watch the cobbler while baking, and bake until the cobbler dough is golden brown.
  • To test if the cobbler is done, insert a toothpick into the center of the cobbler dough. If it comes out clean, then it is done.
  • Serve Black folks Southern peach cobbler recipe warm, and enjoy!

THE BEST PEACH COBBLER

The Best Peach Cobbler image

In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

Categories     dessert

Time 1h10m

Yield 4 to 6 servings

Number Of Ingredients 12

5 small peaches, cut into 1/4-inch-thick slices (about 5 cups)
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 teaspoons fresh lemon juice
1/2 stick (4 tablespoons) unsalted butter
3/4 cup all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
3/4 cup milk, at room temperature

  • For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
  • Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
  • Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.

BOURBON PEACH COBBLER

Bourbon Peach Cobbler image

A comfort food masterpiece loaded with fresh peaches and a hint of bourbon.

Provided by Tyler Florence

Categories     bake,comfort food,dessert,fruit,Summer

Time 1h20m

Yield 6 - 8 servings

Number Of Ingredients 10

8 peaches, peeled and sliced, about 6 to 8 cups
¼ cup bourbon
¾ cup sugar, plus more for dusting
2 Tbsp corn starch
1 tsp ground cinnamon
1 ½ cups all-purpose flour
2 tsp baking powder
½ tsp kosher salt
16 Tbsp (2 sticks) cold unsalted butter
¾ cup heavy cream, plus more for brushing

Steps:

  • Heat the oven to 375ºF.
  • In a large bowl add the peaches, bourbon, 1/4 cup sugar, cornstarch, and cinnamon and mix well to coat the peaches evenly; set aside.
  • Prepare the dumplings: Into a bowl sift together the flour, 1/2 cup sugar, baking powder, and salt. Cut 12 tablespoons (1 1/2 sticks) butter into small pieces. Add it to the flour mixture and cut it in with a pastry blender or your hands until the mixture looks like coarse bread crumbs. Pour in the cream and mix just until the dough comes together. Don't overwork; the dough should be slightly sticky but manageable.
  • In a 10-inch cast iron skillet over medium-low heat, melt the remaining 4 tablespoons butter. Add the peaches and cook gently until heated through, about 5 minutes. Drop the dough by tablespoonfuls over the warm peaches. There can be gaps, the dough will puff up and spread out as it bakes. Brush the top with some heavy cream and sprinkle with some sugar; put it into the oven on a baking sheet to catch any drips. Cook for 40 to 45 minutes until the top is browned and the fruit is bubbling.

  • Preheat the oven to 375°F. Prepare a 9 X 13 baking dish with 1 tablespoon of soft butter spread to coat the insides of the dish.
  • First, prepare the peaches. Bring a medium pot of water to a boil. Add a few of the peaches to the water (don't crowd the pot) and boil for 30-45 seconds or until the skin softens and easily pulls away. The time will vary depending on how ripe the peaches are. Use a slotted spoon to remove the peaches from the pot to a cutting board. Cool the peaches until you can handle, then gently rub the skin from the fruit, or use a paring knife to peel the skin from the peaches. Slice the peaches in half and remove the pit, then slice into 1/4-inch pieces.
  • Layer the peaches in the baking sheet and toss with the brown sugar, cinnamon and nutmeg. Bake in the oven for 15 minutes then remove.
  • While the peaches are baking, in a large mixing bowl, use a fork or whisk to mix the flour, sugar, egg, melted butter, baking powder and salt until the mixture is similar in texture to cookie dough. Drop the dough onto the top of the baked peaches, gently spreading to cover.

  • Start by preparing your peaches. Peel with a vegetable peeler if they are firm. If they are ripe, a vegetable peeler will bruise them so it's best to blanch: bring a large pot of water to a boil. Add the peaches a few at a time so that they are totally submerged. Let boil for 30-45 seconds. Remove from the boiling water. When they are cool enough to handle, use your hands to easily remove the peels. Slice the peaches. You should end up with about 9 cups of sliced peaches. Add your peaches to a 9x13 inch casserole dish (no need to grease the pan).
