½ cup butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
⅓ cup unsweetened cocoa powder
½ cup all-purpose flour
¼ teaspoon salt
¼ teaspoon baking powder
3 tablespoons butter, softened
3 tablespoons unsweetened cocoa powder
1 tablespoon honey
1 teaspoon vanilla extract
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan.
  • In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
  • Bake in preheated oven for 25 to 30 minutes. Do not overcook.
  • To Make Frosting: Combine 3 tablespoons softened butter, 3 tablespoons cocoa, honey, 1 teaspoon vanilla extract, and 1 cup confectioners' sugar. Stir until smooth. Frost brownies while they are still warm.

1 1/3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup butter, melted
1 cup cocoa
2 cups white sugar
4 eggs
1 1/2 teaspoons vanilla
1 cup chopped walnuts
1/2 cup butter
1/4 cup milk
1/4 cup cocoa
3 cups icing sugar
1 teaspoon vanilla

Steps:

  • Combine flour, baking powder and salt (set aside).
  • Combine melted butter, cocoa, sugar, eggs and vanilla.
  • Blend dry mix into moist mixture.
  • Add nuts and pour batter into a greased 9x13-inch pan.
  • Bake at 350°F degrees for 35 minutes or until it just starts to pull away from sides.
  • ICING: Melt butter in saucepan with milk on medium/low.
  • Combine cocoa with sugar and stir into milk mixture.
  • Add vanilla and let cool till spreading consistency (will be runny at first).
  • Sprinkle with more nuts if desired.

1 1/2 sticks (12 tablespoons) unsalted butter, plus more for the pan
9 ounces bittersweet chocolate, chopped
1 1/2 cups granulated sugar
3/4 cup plus 2 tablespoons lightly packed brown sugar
3 extra-large eggs, plus 2 extra-large egg yolks
3/4 teaspoon kosher salt
1 teaspoon pure vanilla extract
1 cup all-purpose flour
1 cup semisweet chocolate chips or chunks (optional)

Steps:

  • Preheat the oven to 350 degrees F and butter a 9-inch square pan. Lining it with parchment paper is helpful as well. In a double boiler or a heatproof bowl set over a small saucepan of simmering water, melt the butter and bittersweet chocolate together, stirring often to avoid scorching. Set it aside off the heat.
  • In a big bowl, whisk both sugars, the eggs and yolks. Whisk in the salt and vanilla. Add the melted butter and chocolate and whisk to just combine.
  • Gradually stir in the flour and mix until everything is combined and smooth. Stir in the chocolate chips.
  • Scrape the batter into the prepared pan and bake for 35 to 45 minutes, or until a toothpick inserted into the middle displays as much goo on it as you want to see in the middle of those brownies!
  • Let the brownies cool in the pan on a rack for about 45 minutes. Brownies need time to set, and if you try to cut them while they are too warm, they will fall apart and ruin your day. Slice them at room temperature or colder, and if you want them warm, just put them in a hot oven for a minute or two. Serve the brownies with ice cream, duh!

2 sticks (16 tablespoons) unsalted butter, plus more for greasing the foil
1 1/2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon fine salt
4 ounces semisweet or bittersweet chocolate, chopped
2 cups sugar
4 large eggs, slightly beaten

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking pan with foil, leaving a 2-inch overhang on at least 2 sides. Butter the foil.
  • Whisk together the flour, cocoa powder and salt in a medium bowl. Melt the butter and chocolate in a medium saucepan over medium heat, stirring frequently. Let cool slightly. Stir in the sugar and eggs. Add the flour mixture, and stir to combine. Pour the batter into the prepared pan, and bake until a toothpick comes out with just a few crumbs, 30 to 35 minutes.
  • Let the brownies cool completely in the pan on a cooling rack. Use the foil overhang to help lift them out of the pan. Cut into 16 squares. Store in an airtight container at room temperature for up to 3 days.

375g good quality dark chocolate
375g butter, cut into pieces
500g caster sugar
6 medium eggs
225g plain flour
140g good quality dark chocolate
50g butter, cut into pieces
icing sugar for dusting

Steps:

  • Butter and line a 30cm x 21cm tin. Preheat the oven to 180C/160C fan/gas 4. Break up the chocolate with the butter and melt in the microwave on medium for about 5 minutes, stirring halfway through.
  • Beat the sugar and eggs in a bowl. Stir in the melted chocolate, add the flour and beat well. Pour into the tin and bake for 40-45 minutes, or until the top looks papery and feels slightly wobbly. Leave to cool in the tin.
  • If you're making the topping, break up the chocolate with the butter and melt in the microwave on medium for about 1 minute. Stir until smooth then spread over the cake. Dust with icing sugar and cut into squares.

1 1/3 cups chopped Almond Roca or Heath Bars (about 7 ounces)

Steps:

  • For brownies:
  • Preheat oven to 350°F. Butter and flour 13 1/2x8 1/2-inch baking dish. Melt chocolate and butter with espresso powder in top of double boiler over simmering water; stir until smooth. Cool slightly.
  • Whisk eggs in large bowl to blend. Gradually whisk in sugar. Add vanilla and salt. Whisk in melted choclate. Add flour and stir until just blended. Spread batter in prepared dish. Bake until tester inserted in center comes out with a few moist crumbs, about 30 minutes. Cool brownies completely in pan on rack. (Can be prepared 8 hours ahead. Cover tightly.)
  • For topping:
  • Blend cream cheese, cream and vanilla in processor until smooth. Mix in sugar.
  • Spread topping over brownies. Sprinkle with Almond Roca. (Can be prepared 2 hours ahead.)

  • Stir in the walnuts.
  • Put in a greased 8 inch squared pan, bake at 350 for 25 minutes.
  • I make a double batch.
  • Cocoa Glaze: Combine icing sugar, and cocoa powder.
  • Beat in margarine, add 1-2 tbsps of boiling water to make a smooth glaze.

The first time I made brownies without my mother was in the late 1960s, using a recipe from Paula Peck, the cookbook writer. Over the years, I tinkered with that and a similar version by Marion Cunningham. As my daughters learned to cook, they experimented a bit further. But we never really strayed from the originals. As long as you keep the flour to a minimum and don't add chemical leavening like baking powder, you will produce a true and beautiful brownie.

3 ounces unsweetened chocolate
8 tablespoons (1 stick) salted or unsalted butter, more for greasing pan
1 cup sugar
2 eggs
1/2 cup all-purpose flour
Pinch salt if you use unsalted butter
1/2 teaspoon vanilla extract, optional

Steps:

  • Heat oven to 350 degrees. Combine chocolate and butter in a small saucepan over very low heat, stirring occasionally. When chocolate is just about melted, remove from heat, and continue to stir until mixture is smooth. Meanwhile, grease an 8-inch-square baking pan. If you like, also line it with waxed or parchment paper and grease that.
  • Transfer mixture to a bowl, and stir in sugar. Beat in eggs, one at a time. Add flour (and salt and vanilla if you are using them), and stir to incorporate. Stop stirring when no traces of flour remain.
  • Pour into pan, and bake 20 to 30 minutes, or until set and barely firm in the middle. Cool on a rack before cutting.
