4 (6 -8 ounce) halibut fillets
salt and pepper
1 tablespoon olive oil
1 garlic clove, crushed
1 shallot, sliced
1/2 cup white wine, eyeball it
1 (15 ounce) can diced tomatoes, well drained
1/4 lemon
20 leaves fresh basil, torn, rolled and shredded with your knife, chiffonade

Steps:

  • Season fish with salt and pepper.
  • In a large skillet add the oil.
  • Arrange fish in the pan and turn to coat in oil, then add garlic, shallots and wine.
  • Top each fillet of fish with 1/4 of the tomatoes.
  • Place the pan on the stove top and bring the liquid to a boil over medium high heat.
  • Top the pan with a tight fitting lid and reduce heat to moderate.
  • Cook fish 8 to 10 minutes until opaque and flaky, but not dry.
  • Carefully transfer fish topped with tomatoes to dinner plates or serving plate with a thin spatula.
  • Spoon pan juices over the fish.
  • Squeeze the wedge of lemon over the cooked fish and top each fillet with lots of torn or shredded basil.
  • Serve immediately.

Grilled Halibut With Tomato-Basil Salsa image

This is an easy fish recipe with light, bright flavors. You can use any mild flavored, firm, white fish; but halibut is my favorite with this. Watch the fish carefully as it cooks, if you overcook it, it will be rubbery. Make sure that the tomato you choose is fully ripe- this will not come out tasting right with under ripe tomatoes.

1 tablespoon extra virgin olive oil
1 tablespoon balsamic vinegar
1 garlic clove, minced or pressed
1/8 teaspoon kosher salt
1/8 teaspoon ground black pepper
1 medium tomatoes, cored seeded and diced
1/2 ounce basil leaves, sliced into ribbons (about 5 large leaves)
8 ounces halibut fillets
salt and pepper

Steps:

  • In a non-reactive bowl, whisk together the oil, vinegar, garlic, salt and pepper.
  • Add the tomatoes and basil, stirring gently to combine. Set aside while you cook the fish.
  • Preheat your grill to medium high.
  • If your fish has skin on it, season the flesh side with salt and pepper. If it has no skin, place the fish on a folded piece of aluminum foil, large enough to hold the fish in one flat layer, coated with cooking spray. Season with salt and pepper.
  • Place the fish on the grill, skin/foil side down. Cook until the fish flakes with a fork, or is barely opaque in the middle. It should still look a little wet in the center.
  • Remove the flesh from the skin (I just leave the skin on the grill and burn it off) or the foil, and place on a serving platter. Stir the salsa, then drizzle over the fish. Serve immediately.

6 large heirloom tomatoes, cored and chopped
1/2 English cucumber, peeled and chopped
1 clove garlic, smashed
Kosher salt
1/2 cup fish sauce
1/2 cup rice wine vinegar
2 1/2 teaspoons sugar
1 teaspoon sambal
3 English cucumbers, peeled
2 sprigs thyme, stems removed and leaves chopped
1/2 bunch chives, thinly sliced
1/2 bunch flat-leaf parsley, stems removed and leaves finely chopped
1 cup instant mashed potato flakes
Four 6-ounce halibut fillets, skin removed
Kosher salt
2 large eggs, beaten with 1 tablespoon water
Extra-virgin olive oil
2 cloves garlic, smashed
4 baby zucchini, diced
2 ears corn, kernels removed
3 large heirloom tomatoes, 2 sliced 1/2-inch thick and 1 diced
Canola oil, for frying
1 cup all-purpose flour
1 cup white wine, plus more as needed
4 zucchini blossoms
Micro basil, for garnish

Steps:

  • For the tomato water: Line a hand strainer with cheesecloth and set over a large bowl. Add the tomatoes, cucumbers, garlic and a nice big pinch of salt to the bowl of a food processor. Pulse a few times, scrape down the sides with a spatula, and pulse again. Pour the mixture into the cheesecloth-lined strainer. Set aside to strain for 2 hours, giving it an occasional stir to redistribute the juices.
  • For the cucumbers: Add the fish sauce, rice wine vinegar, sugar and sambal to a large bowl and stir to combine. Trim the ends of the cucumbers so they are even in size. Using a mandoline, shave the cucumbers lengthwise on all sides, turning the cucumber when you get to the seeds. Discard the center with the seeds. Stack the shaved cucumber and slice lengthwise into noodles, about the width of linguine. Add to the dressing and sit for 30 minutes. Drain and set aside.
  • For the fish: Preheat the oven to 350 degrees F.
  • Add the thyme, chives, parsley and potato flakes to a small bowl and mix to combine. Sprinkle the halibut with salt, then brush with the egg wash. Dip each piece of fish into the herb and potato flake mixture, pressing firmly to ensure the crust is tightly adhered. Place onto a sheet tray with the crusted side up and set aside.
  • Heat a large saute pan with some olive oil and the smashed garlic over medium-high heat. Swirl the pan to infuse the oil with the garlic. Cook until the garlic is golden brown, a few minutes, then remove from the pan. Add the zucchini and cook to soften, 2 to 3 minutes, then toss in the corn and cook for another minute. Finally, add the diced tomatoes and season with salt. Cook for just a minute, then turn off the heat.
  • Heat a large nonstick pan with some olive oil over medium-high heat until the oil shimmers. Add the fish, crusted side down. Cook until the crust is golden brown and crispy, about 5 minutes. Flip the fish, then transfer onto a sheet tray lined with a rack. Arrange the sliced tomatoes next to the halibut. Place into the oven and bake until it reaches an internal temperature of 125 to 130 degrees F when inserted with a thermometer, 5 to 7 minutes.
  • Set up a deep fryer and heat canola oil to 350 degrees F. Combine the flour and wine in a small bowl and stir to make a batter. It should be the consistency of a thin pancake batter. If it's too thick, add a bit more wine. Dip the zucchini blossoms into the batter, then fry until golden brown, 1 to 2 minutes, flipping halfway through. Drain on a paper-towel-lined plate and season with salt.
  • To serve: Place a slice of the roasted tomato on the bottom of a shallow bowl and top with the cucumber noodles. Add some of the sauteed zucchini, corn and tomatoes over the top, followed by the fish, crust side up. Garnish with the fried zucchini blossoms and micro basil. Pour some of the tomato water around the edge of the plate right before serving.

6 plum tomatoes, cut into 1-1/4-inch slices
1 tablespoon olive oil
4 to 6 garlic cloves, peeled
1/2 teaspoon balsamic vinegar

4 halibut steaks (1 inch thick)
TOPPING:
1/2 cup mayonnaise
1/2 teaspoon Dijon mustard
1 cup soft bread crumbs
2 tablespoons minced fresh basil
2 tablespoons chopped ripe olives

Steps:

  • Place tomatoes on a baking sheet; drizzle with oil. Wrap garlic in aluminum foil and place on the baking sheet. Bake at 450° for 20 minutes or until edges of tomatoes are lightly browned and garlic pierces easily with a fork. Place tomatoes and garlic in a food processor or blender; cover and process until smooth. Add vinegar, basil and water to achieve desired thickness; set aside., Place halibut in a greased 13-in. x 9-in. baking dish. Combine mayonnaise and mustard; spread over fish. Combine bread crumbs, basil and olives; sprinkle over mayonnaise mixture and press down gently. Bake, uncovered, at 400° for 20 minutes or until topping is golden brown and fish flakes easily with a fork. Spoon tomato sauce onto four dinner plates; top with fish.

This is a pungent tomato sauce that I learned to make in Provence. It goes well with any type of robust fish.

1 tablespoon extra virgin olive oil
1/2 medium onion, finely chopped
4 plump garlic cloves, minced or mashed in a mortar and pestle
1/4 cup capers, drained, rinsed and finely chopped or mashed with the garlic in a mortar and pestle
2 pounds tomatoes, peeled, seeded and finely chopped, or 1 28-ounce can diced tomatoes with juice
Salt, preferably kosher salt
freshly ground pepper to taste
Pinch of sugar
1 teaspoon chopped fresh thyme leaves
1 tablespoon slivered fresh basil leaves
1 recipe tomato-caper sauce, above
6 6-ounce halibut fillets (Choose Pacific halibut over Atlantic halibut. According to the Environmental Defense Fund and the Blue Ocean Institute, Pacific halibut fisheries have been properly managed, but they are overfished in the Atlantic.)
Salt, preferably kosher salt
freshly ground pepper
1 tablespoon extra-virgin olive oil
6 lemon slices

Steps:

  • Heat the olive oil in a large, heavy skillet over medium heat, and add the onion. Cook, stirring often, until tender, three to five minutes, and add the garlic and the capers. Cook, stirring, for three to five minutes, until the onion has softened thoroughly and the mixture is fragrant. Add the tomatoes, salt, pepper and a pinch of sugar. Stir in the thyme, bring to a simmer and cook, stirring often, for 15 to 20 minutes, until the sauce is thick and fragrant. Taste and adjust seasonings. Serve hot or cold.
  • Make the sauce as directed and keep warm.
  • Preheat the oven to 450 degrees. Oil a baking dish large enough for the fish to lie flat. Season the fish with salt and pepper, and arrange in the baking dish. Drizzle the olive oil over the fillets, and place a round of lemon on each one. Cover the dish tightly with foil, and place in the oven. Bake 15 minutes. Check the fish; if you can cut into it with a fork, it is done. If it doesn't yield, (halibut fillets tend to be thick can take time to cook), cover and return to the oven for five minutes. Remove from the oven, and check again. Remove the lemon slices from the fish.
  • Place a spoonful of sauce on each plate, and place a piece of fish partially on top. Spoon some of the liquid from the baking dish over the fish. If you wish, top the fish with another spoonful of sauce, garnish with basil leaves and serve.

1 medium onion, coarsely chopped
1 medium carrot, peeled and coarsely chopped
1 medium bulb fennel, coarsely chopped
1 bunch opal basil or regular basil, coarsely chopped
12 ounces tomato paste
1 46-ounce can V-8 juice
4 pounds fresh tomatoes, cut into 1-inch chunks (8 cups)
2 tablespoons salt
1 large pinch saffron
12 egg whites
6 7- to 8-ounce halibut fillets, 1 inch to 1 1/2 inches thick
Salt to taste
Freshly ground black pepper to taste
1 cup flour
1 cup thinly sliced opal basil or regular basil
2 small ripe red tomatoes, peeled, seeded and diced

Steps:

  • Working in batches, puree the broth ingredients, except the egg whites, in a food processor. Transfer to a heavy-bottomed stock pot, over medium heat. Whisk the egg whites until frothy, and add to the pot. Whisk frequently until mixture comes to a boil and has a solid mass on top. There should be liquid and foam bubbling around the edges.
  • Lower heat, poke a hole in the solid mass and continue to simmer for 1 hour. Remove from heat and cool at room temperature for 15 minutes. Ladle the broth through a fine-mesh sieve lined with a double layer of damp strong paper towels. Do not press; allow liquid to drip. Strain again, if necessary, to remove all particles. Keep broth warm.
  • Pat the fish dry and season with salt and pepper. Dust with flour. Heat oil in a skillet until very hot but not smoking. Cook fish for 2 to 3 minutes on each side, until browned and just cooked through.
  • Place the fish in large shallow bowls. Pour about 1 cup of the broth over each. Sprinkle with basil and diced tomato and serve.

  • Whisk oil, vinegar, green onions, chopped cilantro, basil, and saffron in small bowl to blend. Season dressing to taste with salt and pepper. Pour dressing evenly over fish. Let stand 10 minutes.
  • Bake until fish is opaque in center, about 10 minutes. Cool slightly. Place 1 fillet on each of 8 plates. Season tomato mixture to taste with salt and pepper. Top fish with tomato mixture, dividing equally. Garnish with cilantro sprigs. Serve warm.
