BAKED TURKEY PARMESAN

Steps:
- Season the scaloppini evenly with 4 1/2 teaspoons salt.
- Place the flour in a shallow bowl, the eggs in a separate shallow bowl and the breadcrumbs in a third shallow bowl. Season the breadcrumbs with the oregano, pepper flakes and remaining 1 1/2 teaspoons salt. Working with one piece of turkey at a time, dredge each piece in the flour, followed by the egg and finished with the breadcrumbs. Place on a baking sheet.
- Heat a large skillet over medium-high heat. Place a wire rack on a baking sheet. Add 1/4 cup of grapeseed oil to the hot skillet. Fry the turkey pieces, 2 at a time or as many as will fit in your skillet, until golden brown and crispy, about 3 minutes per side. Add more oil to the skillet as needed. Remove to the rack and continue with the remaining turkey pieces.
- Preheat the oven to 400 degrees F. Butter an 11-by-13-inch roasting pan.
- Spoon 1 cup of marinara on the bottom of the prepared pan. Nestle the turkey pieces in the sauce to make one layer covering the bottom of the pan, about 4 pieces. Spoon another cup of sauce on top and sprinkle with 1 cup mozzarella and 1/2 cup Parmesan. Sprinkle half of the basil over the top. Shingle another layer of turkey, sauce, cheese and basil. On the final layer, cover the top with the remaining turkey and spoon over the remaining sauce. Sprinkle with the remaining 1 1/2 cups mozzarella and 1/2 cup Parmesan. Bake until golden brown and bubbly, about 45 minutes. Allow to rest for 10 minutes before slicing and serving.

- Heat oven to 350°F. Line bottom and sides of 15x10x1-inch pan with foil. Generously spray foil with cooking spray.
- In large bowl, stir together all ingredients except Parmesan cheese and marinara sauce, using hands or spoon. Shape mixture into (48) 1-inch balls. Place Parmesan cheese in small bowl. Roll balls in Parmesan cheese, pressing to adhere. Place in pan.
- Bake 18 to 23 minutes or until brown and cooked through in center (at least 165°F). Immediately remove from pan. Serve warm with sauce for dipping.

TURKEY MEATBALLS BAKED WITH PARMESAN CHEESE
Steps:
- Gather the ingredients and preheat the oven to 375 F.
- Line a large baking sheet, such as a large half sheet pan or jelly roll pan, or 2 small jelly roll pans with nonstick foil.
- Combine turkey, cheese, 3/4 cup fresh breadcrumbs, egg, Italian seasoning, parsley, garlic powder, salt, and pepper. Stir or mix on low speed of a stand mixer with paddle attachment until blended.
- Shape into small meatballs, about 3/4 ounce each. Use a small cookie scoop or weigh them as you shape them to keep them even in size.
- Roll the meatballs in the fine dry breadcrumbs to lightly coat, then arrange them on the baking sheet and dust with the dry breadcrumbs.
- Bake for 20 to 25 minutes or until browned and cooked through. If you make larger meatballs, allow more time.
- Serve and enjoy.

TURKEY MEATBALLS
Steps:
- Bring a large pot of salted water to a boil for the pasta. In a bowl mix together; green onion, garlic, egg, bread crumbs and Parmesan cheese. With a fork stir in ground turkey or chicken and season to taste with salt and pepper. (You can crumble some in a skillet, cook, taste, and then adjust seasoning). Shape mixture into small meatballs. In a large skillet heat olive oil. Add meatballs in a single layer and let them cook for 2 to 3 minutes a side, without disturbing. If they stick, loosen with a slotted spoon. Stir in tomato sauce into the skillet, cover and simmer 10 to 15 minutes (while spaghetti is cooking) to reheat sauce and cook meatballs through. Drain pasta and then return to the pot and toss with remaining 2 tablespoons of olive oil. Dish out a portion of pasta on each plate and spoon some meatballs and sauce in center.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan.
- Heat vegetable oil in a medium saucepan over medium-high heat. Saute zucchini and onion until softened, about 8 minutes. Add garlic; cook for 2 minutes. Remove from heat and let mixture cool to room temperature.
- Soak bread in a small bowl with milk until milk is absorbed, about 2 minutes. Remove bread and gently squeeze out excess milk. Place bread in a food processor and pulse until mixture forms fine crumbs resembling wet sand.
- Combine ground turkey with the sauteed zucchini mixture, bread crumbs, oregano, salt, pepper, and nutmeg in a large bowl. Add eggs, Parmesan cheese, and parsley; mix thoroughly. Form mixture into 12 large meatballs using a large ice cream scoop.
- Place 1/3 cup flour in a shallow dish. Dredge meatballs in flour and place 1 inch apart in the prepared baking pan. Drizzle olive oil over meatballs.
- Bake in the preheated oven until meatballs are lightly browned on top and no longer pink in the center, 30 to 38 minutes. An instant-read thermometer inserted into the center of a meatball should read at least 160 degrees F (71 degrees C).

TURKEY PARM MEATBALLS
I wanted to get away from ground beef for a few recipes. This is great in spaghetti. I had leftover meatballs and put them with marinara sauce and hoagie rolls, I spread them with butter, garlic powder, and more parm. After putting them on the broiler for a minute or two, We had sub sandwiches. Everyone loved them! Hope you enjoy!

- Place all ingredients except olive oil in a large bowl.
- Mix with your hands.
- Have some paper towels handy and keep the warm water running in the sink because it gets cold after a while!
- Shape into golf ball sized balls.
- Let rest while you wash up and heat the olive oil in a large skillet.
- Fry the meatballs and turn every three minutes until cooked all the way through.
- Let them rest on a plate with paper towels.
