Veggie gumbo from the Grace Lutheran Church Cookbook I bought at a garage sale. The book doesnt say where Grace Lutheran is, but I thought it sounded great.

1 onion, chopped
1/2 green pepper, diced
2 celery ribs, diced
1 clove garlic, minced
1 lb okra, sliced,fresh,frozen
1 lb tomatoes, fresh,or canned
2 cups corn, fresh,frozen,canned
1 teaspoon vegetable bouillon granules
1/2 cup white grape juice
1/2 cup water
1/4 teaspoon Tabasco sauce
1/4 teaspoon paprika
2 tablespoons chopped fresh parsley
1 tablespoon basil or 1 tablespoon rosemary, minced

Steps:

  • Method: In a large heavy stew pot, place bouillon and white grape juice, onion, green pepper, celery garlic, cook until tender, 5-7 minutes.
  • Add other ingredients, cook over low heat, stirring occasionally to keep from sticking to bottom.
  • Cover and simmer gently until corn and okra are done.
  • (or simmer in crockpot 6-7 hours) If you use dried herbs, rub them with the palms of your hands before adding to the pot, this releases their mojo.

1 -2 onion, chopped
6 stalks celery, diced
4 garlic cloves, minced
2 teaspoons dried thyme (or 2 tablespoons fresh thyme, minced)
1/2 teaspoon peppercorn, cracked
1 bay leaf
1 (28 ounce) can diced tomatoes
1/2 cup brown rice
4 cups vegetable broth or 4 cups chicken broth
2 teaspoons paprika
4 teaspoons lemon juice
salt (optional)
2 cups okra, sliced (I use frozen)
1 green pepper, diced
1 -2 dash hot pepper sauce (Tabasco)

Steps:

  • In a skillet over medium heat, heat oil for 30 seconds. Add onions and celery, cook stirring until soft (5 minutes).
  • Stir in garlic, thyme, peppercorns, and bay leaf, cook stirring for 1 minute.
  • Stir in tomatoes and bring to a boil.
  • Transfer to large crock pot insert.
  • Stir in rice and broth.
  • Cover and cook on low for 6 hours or high for 3 hours or until rice is tender.
  • Discard bay leaf.
  • In a small cup mix together the paprika and lemon juice.
  • Add paprika/lemon juice mixture, okra and green pepper, stirring in well.
  • Cover and cook on high for 20 minutes or until pepper is tender.
  • Add a dash or two of hot pepper sauce if desired.

2 1/2 lbs potatoes, peeled and diced
2 1/2 lbs vegetables, chopped (you can use almost anything, including carrots, broccoli, peppers, onions, courgettes, eggplant, cel)
2 cloves garlic, crushed
3 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon rosemary
2 teaspoons paprika
1 tablespoon fresh parsley, chopped
1 bay leaf
1 teaspoon mustard powder
3 tablespoons flour
1 tablespoon tomato paste
2/3 cup cold water
2 cups vegetable stock
salt and pepper, to taste

Steps:

  • Boil potatoes just lightly until about cooked.
  • Place chopped veggies and garlic in a casserole dish or saucepan with 1 tablespoon oil and sweat veggies for 5 minutes. (This means to put them (preferably) in a covered frying pan and let cook on low for about 5 minutes -- just long enough to take a bit of the crunch off, but not enough to cook them entirely.)
  • Do not overcook.
  • Add the herbs and seasonings to the vegetables.
  • Mix mustard powder, flour and tomato paste with water and stock until smooth.
  • Pour mixture onto the vegetables and bring to a boil, stirring constantly.
  • Season with salt and pepper.
  • Transfer to an ovenproof dish if necessary.
  • Place the potato in a bowl with the remaining 2 tablespoons of oil and toss until coated.
  • Season with salt and pepper.
  • Pile the potatoes on top of the veggies and bake in a preheated oven at 400 F for 45 minutes.
  • The potatoes should be brown, but if they're not you can grill them for another 5 minutes.
  • Serve with a salad or on top of rice.

1 green bell pepper, chopped

1 teaspoon smoked paprika (preferably hot)
2 cups low-sodium vegetable broth
1 pound kale or Swiss chard, stemmed and chopped

Steps:

  • Heat the vegetable oil in a large pot over medium-high heat. Add the flour and cook, stirring, until golden, about 3 minutes. Add the onion, bell pepper, celery, garlic, 3 tablespoons water and 1/4 teaspoon each salt and pepper. Reduce the heat to medium, cover and cook, stirring occasionally, until the vegetables soften, about 8 minutes.
  • Add the soy sauce and paprika and cook, stirring, 30 seconds. Stir in the vegetable broth, scraping up any browned bits from the bottom of the pot, then cover and bring to a boil.
  • Add the greens and black-eyed peas to the pot. Reduce the heat, cover and simmer, stirring occasionally, until tender, about 15 minutes. Season with salt and pepper. Serve with the rice, if desired.

1/2 cup okra, large slice
1 gallon vegetable stock, recipe follows
1/4 cup brown roux
1/2 (8-ounce) can whole peeled plum tomatoes
2 tablespoons each thyme, sage, rosemary
2 tablespoons seafood spice
2 tablespoons sassafrass leaves
Lemon juice, to taste
1 1/2 tablespoons chile paste
Salt and pepper, to taste
2 tablespoons vegetable oil
1/4 cup okra, sliced
1/4 cup tomatoes, skinned, seeded, diced
1/4 cup corn
1/4 cup spaghetti squash
1 red pepper, diced
1 green pepper, diced
1 ounce thyme, chopped
1 ounce sage, chopped
1 ounce rosemary, chopped
Salt and pepper, to taste
3 carrots, large dice
2 stalks celery, large dice
2 cups mushroom stems
2 bay leaves
1 1/2 onion, large dice
1/2 bunch parsley stems
1 gallon water

Steps:

  • Creole Sauce: In a large soup pot, sweat all your vegetables except for your tomatoes for about 5 to 7 minutes, add your liquid and bring to a simmer. When it begins to boil take a little liquid out and place it in a bowl and slowly stir in your roux, then slowly add that back to the simmering liquid. Let simmer for 15 minutes, add your tomatoes, herbs, seasonings, lemon juice and chili paste. Simmer 10 minutes or until desired taste. In a blender puree everything (be careful not to put too much in at one time to prevent from burning yourself).
  • Garnish: In a large pot, heat oil, sweat all of your vegetables for 2 to 3 minutes. Add your creole sauce, bring to a simmer and let simmer for five minutes. Add your herbs and let simmer for another 2 to 3 minutes.
  • In a large stock pot, over high heat, place all ingredients and bring to a boil. Reduce heat and simmer stock for 45 minutes. Strain the liquid and set aside.

I leave the roots on the leeks until after cooking, so they don't fall apart. Just wash and trim beforehand.

Number Of Ingredients 22

6 medium-sized leeks (4 inches of green left on)
1 tablespoon white vinegar
3 quarts defatted chicken broth or vegetable broth
2 tablespoons olive oil
6 large fresh cilantro sprigs, rinsed, with roots and stems crushed
8 cloves of garlic, lightly bruised and peeled
3 cinnamon sticks (each 3 inches long)
2 teaspoons ground cumin
2 teaspoons curry powder
1/4 teaspoon crumbled saffron threads
1 teaspoon coarse salt
2 medium-sized zucchini, ends trimmed
6 medium-sized carrots, peeled, halved lengthwise and cut into 2-inch lengths
3 Idaho potatoes, peeled and cut into quarters
8 ounces small white turnips, peeled and quartered
3 small yellow onions, peeled and halved
3 ripe large tomatoes, cored and quartered
1 cup chickpeas, rinsed
1 cup pitted prunes, halved
1/2 cup golden raisins
4 tablespoons chopped cilantro or parsley
8 cups cooked couscous (2 2/3 cups dried), hot (optional)

Steps:

  • 1. Wash leek roots well and trim, leaving 1/4 inch of roots on the bottom of the bulbs. Cut a 3-inch-long X through the green of each leek. Place the leeks in a bowl and cover with water. Add the vinegar and let soak for 30 minutes to remove any sand. Drain and rinse under cold running water. Set aside.
  • 2. While the leeks are soaking, prepare the seasoned broth: Combine the broth, oil, cilantro sprigs, garlic, cinnamon sticks, cumin, curry powder, saffron, and salt in a very large heavy pot. Bring to a boil, reduce the heat and simmer, uncovered, for 30 minutes.
  • 3. Using a potato peeler, peel each zucchini lengthwise at intervals to make 3 or 4 stripes in the skin. Cut the zucchini into 1 1/2-inch lengths. Set aside.
  • 4. Place the reserved leeks, the carrots, potatoes, turnips, and onions in the broth. Bring to a boil, reduce the heat and simmer, uncovered, for 30 minutes.
  • 5. Add the reserved zucchini, tomatoes, chickpeas, prunes, and raisins. Stir gently so that the vegetables don't break up. Simmer 30 minutes longer.
  • 6. Just before serving, remove the leeks carefully and trim off the roots close to the bottom of each white bulb. Gently heat the vegetables and broth through. Stir in 3 tablespoons chopped cilantro.
  • 7. Spoon cooked couscous into each bowl, if desired. Top with the vegetables and broth. Garnish with the remaining tablespoon chopped cilantro.

Steps:

  • In a large pot, heat 1 tablespoon of olive oil over medium heat. Once the oil begins to shimmer, add ½ cup (75g) diced onion and cook for 3-4 minutes, until semi-translucent.
  • Add the mushrooms and cook for 5 minutes, until most of the juices have evaporated.
  • Add 2 cloves of minced garlic, the soy sauce, 1 teaspoon thyme, 1 teaspoon paprika, ½ teaspoon oregano, ¼ teaspoon cayenne, 2 teaspoons vegan Worcestershire sauce, ½ teaspoon liquid smoke, ½ teaspoon salt, and ¼ teaspoon pepper and cook for another 4-5 minutes, until all of the liquid has evaporated and the spices are fragrant.

Then, add the mushroom mixture, bread crumbs, vital wheat gluten, and 2 tablespoons vegetable broth and mix well until combined.   • In the same large pot, heat 3 tablespoons of olive oil over medium heat. Once the oil begins to shimmer, add the meatballs and cook for about 5 minutes on each side, until golden brown. Remove the meatballs from the pot and set aside.
  • Add the remaining 2 tablespoons of olive oil to the pot, along with the flour. Stir the roux continuously with a wooden spoon for about 3-4 minutes, until the consistency resembles wet sand.
  • Add the remaining ½ cup (75g) diced onion, the celery, and the okra to the pot and cook for 4-5 minutes, until the onion is semi-translucent.
  • Add the remaining 4 cloves of minced garlic and the green bell pepper and cook for another 3-4 minutes, until the garlic is fragrant.
  • Add the remaining teaspoon of vegan Worcestershire sauce, ½ teaspoon liquid smoke, 1 teaspoon thyme, ½ teaspoon oregano, 1 teaspoon paprika, ¼ teaspoon cayenne, and ½ teaspoon pepper and cook for 4 more minutes, until the spices are fragrant.
  • Add the crushed tomatoes and stir until combined. Then, add the red beans and add the remaining 3½ cups (840ml) vegetable broth and stir until well combined. Simmer on low heat for 30 minutes, stirring from time to time, until the gumbo has thickened.
  • Season with salt to taste. Then, add the meatballs and stir to incorporate.
  • Serve over rice and garnish with parsley.
