Watermelon Salad with Watermelon Vinaigrette makes a delicious summer salad recipe.

2 cups watermelon (cubed)
2 cups spring mix salad greens
1 (10-ounce) package Feta cheese, cubed
1/2 medium red onion (sliced)
1/2 cup watermelon
¼ cup honey
1 tablespoon apple cider vinegar
1 tablespoon Dijon mustard
½ cup extra-virgin olive oil

Steps:

  • For the Watermelon Salad
  • Add watermelon, salad greens, cheese, and red onion to a large bowl and toss to combine. Alternately, layer on a large platter for serving.
  • Serve with Watermelon Vinaigrette or another sweet and tangy dressing.
  • For the Watermelon Vinaigrette
  • Add watermelon pieces to the container of a blender. Blend until pureed. Then, add honey, apple cider vinegar, and mustard to container. Blend on low speed until well-combined. With the lid of the blender container removed, slowly add olive oil while the blender is on low speed. Return the lid to the blender and increase the speed to medium to completely blend. Remove from blender and pour into a container for serving.

1 cup honeydew melon, cubed
1 cup cantaloupe, cubed
1/4 cup vidalia onions or 1/4 cup other sweet onion, slivered
1/4 cup fresh lime juice
2 tablespoons honey
2 tablespoons of fresh mint, chopped
1 tablespoon vegetable oil
coarse sea salt, to taste
fresh coarse ground black pepper, to taste

Steps:

  • Whisk lime juice, honey, mint, and oil together until honey is dissolved.
  • Combine the melons and onion in a large bowl.
  • Toss melon mixture with lime dressing to coat.
  • Garnish with salt and pepper to taste.

3 tablespoons champagne vinegar
3 tablespoons lemon juice
2 tablespoons chopped fresh mint leaves, from about 3 or 4 sprigs
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
3/4 cup grapeseed oil
1 head arugula, soaked to remove all grit, stiff spines of leaves removed, dried in a salad spinner, and torn into bite-sized pieces
1 small red onion, sliced thin
1 small seedless watermelon, such as Crimson Sweet (or your choice, as long as the seeds are removed) cut into 1-inch cubes or into 1-inch spheres with a melon baller
3 ounces feta cheese, cubed

Steps:

  • Prepare vinaigrette just before use. Through the feed opening of a running blender, add 1 at a time: champagne vinegar, lemon juice, chopped mint, salt and pepper. Leaving the blender running, add the oil in a slow stream. Adjust seasoning, to taste, with salt and pepper.
  • Toss together arugula and onion. Fold in watermelon. Gently stir in enough of the vinaigrette to coat. Top with feta cheese. Serve with any extra dressing on the side.

Steps:

  • Chop 180g watermelon and ½ cucumber into chunks and tip into a bowl with the leaves from ½ bunch mint (reserving a few for garnish) and drizzle with 1 tbsp olive oil. Season and pile on to a serving plate. Crumble over 100g feta, the remaining mint leaves, then drizzle with 1 tbsp balsamic glaze just before serving.

⅓ cup lime juice (from about 3 juicy limes)
⅓ cup fish sauce
3 tablespoons thinly sliced cilantro stems
3 tablespoons finely chopped palm sugar or coconut sugar
½-inch knob fresh galangal, peeled and roughly sliced against the grain
1 large garlic clove, peeled
1 small moderately hot fresh red chile, such as Fresno or ripe red jalapeño, stemmed and roughly chopped
1 fresh red Thai chile, stemmed
For the salad:
2 pounds peeled watermelon
1 small red onion, halved and thinly sliced
1 teaspoon flaky sea salt
6 cups mixed berries, halved if large
2 large lemongrass stalks trimmed, bruised, then very thinly sliced
½ cup extra-virgin olive oil
2 big handfuls very lightly packed mixed herbs, such as mint leaves, Thai or Italian basil leaves, and small cilantro sprigs

Steps:

  • Make the dressing:
  • Combine all the dressing ingredients in a blender and blend on high speed until smooth, about 2 minutes. It keeps in an airtight container in the fridge for up to 3 days. Shake well before using.
  • Make the salad:
  • Cut the watermelon into 3 x 1 x 1-inch sticks, flicking out seeds as you go. You will have about 6 cups. Chill the watermelon in the fridge for at least an hour.
  • Combine the chilled watermelon and onion in a large mixing bowl and season all over with the flaky salt. Add the berries, lemongrass, and dressing, then toss gently but well. Drizzle on the olive oil, add the herbs, and gently toss once more. Transfer to a platter to serve.
