STURDY WHIPPED CREAM FROSTING

Sturdy Whipped Cream Frosting image

This is a YUMMY whipped cream frosting that is very stable and does not melt at room temperature unlike many standard whipped cream frostings. It also makes a GREAT dip for fresh fruit -- not too sweet, just right! This recipe is GREAT for a stand mixer but will work with any good mixer.

STABILIZED WHIPPED CREAM ICING

Stabilized Whipped Cream Icing image

This cream holds up longer on pies because it doesn't separate. Gelatin stiffens whipped cream and makes the texture seem fuller and slightly spongy. May be used to top a pie or frost a cake.

WHIPPED CREAM CHEESE FROSTING RECIPE

Whipped Cream Cheese Frosting Recipe image

Creamy and delicious Whipped Cream Cheese Frosting recipe! We've used this recipe as a filling as well as a frosting, and it pipes great!

Provided by Melissa Diamond

Number Of Ingredients 4

Two 8 ounce (423g total weight) packages cream cheese, softened. It must be full fat, not reduced fat or cream cheese in a tub, those are too soft.
2 cups (230g) powdered sugar, measure then sift
2 teaspoons (8g) vanilla extract
3 cups (696g heavy whipping cream

Steps:

  • Freeze your mixing bowl and beaters 15 minutes before whipping the cream (30 minutes if chilling in the refrigerator.
  • Use the whisk attachment for a stand mixer, beaters on your hand mixer. Beat the cream until stiff peaks form. This can happen very quickly so don't walk away from the mixer. You are at the stiff peak stage when you lift the beater and the cream stands straight up forming a peak. Keep in the refrigerator while completing the next step.
  • In another bowl combine the cream cheese, powdered sugar and vanilla. Beat until very smooth. Fold this into the whipped cream. Cover and refrigerate. If you are piping this frosting and it becomes too soft, just refrigerate the filled piping bag for a short while.

BLACK FOREST CAKE WITH WHIPPED CREAM FROSTING

Black Forest Cake with Whipped Cream Frosting image

Provided by Food Network

Time 38m

Yield 36 mini cupcakes

Number Of Ingredients 23

2 cups sugar
1 3/4 cups all-purpose flour
1 1/2 teaspoons baking soda
1 1/4 teaspoons baking powder
1 teaspoon salt
3/4 cup cocoa powder
1 teaspoon vanilla extract
1 cup milk
1/2 cup vegetable oil
2 large eggs
1 cup boiling water
1 can pitted tart red cherries
3/4 cup sugar
3 tablespoons cornstarch
2 tablespoons kirsch liqueur
2 tablespoons red food coloring
16 ounces cream cheese, softened
1 teaspoon vanilla extract
3 ounces sugar
2 large eggs
3 cups non-dairy whipping cream
Thin chocolate shavings, for garnish
Maraschino cherries, for garnish

Steps:

  • For the cake: Preheat the oven to 325 degrees F. Line a mini-cupcake pan with 36 mini liners.
  • In a heavy-duty mixing bowl, mix together all the dry ingredients. Once thoroughly mixed, add all the wet ingredients except the boiling water. Once all mixed together, slowly add the boiling water.
  • For the cherry filling: Put all the ingredients in a saucepan over medium heat. Bring to a boil and boil for 1 minute. When the filling is done, it should be thick like marmalade.
  • For the cream cheese filling: In a small bowl, whip the cream cheese with a hand mixer until fluffy. Add all the other ingredients until completely combined. Cool in the fridge until ready for use.
  • To assemble: Fill the cupcake liners two-thirds of the way with the batter. Spoon 1 teaspoon cream cheese filling and 1 teaspoon cherry filling on top. Bake until the cake bounces back after you touch it, about 22 minutes. When the cupcakes are done, remove from the pan and place onto a tray to cool.
  • Whip the non-dairy whipping cream in a heavy-duty mixing bowl with a whisk attachment until stiff peaks form. Place the whipped cream in a pastry bag and, when the cupcakes are completely cooled, pipe a generous amount of frosting on top. Garnish with chocolate shavings and maraschino cherries.

EUROPEAN WHIPPED CREAM FROSTING (VIDEO)

European Whipped Cream Frosting (video) image

Creamy, European-style whipped cream frosting with sweetened condensed milk, perfect for cakes and desserts!

Provided by tatyanaseverydayfood

Categories     Dessert

Number Of Ingredients 6

1 cup unsalted butter (softened at room temp)
12 ounces cream cheese or mascarpone (softened at room temp)
1 teaspoon vanilla extract
pinch of salt
14 ounce can sweetened condensed milk
1 1/2 cups heavy cream (min. 35% fat content)

Steps:

  • Softened butter and cream cheese (or mascarpone( at room temperature for about 30 minutes, until soft to touch but not melted. Place the butter and cheese into mixing bowl and whisk on high speed for 3 to 4 minutes until light and fluffy.
  • Add the vanilla extract, pinch of salt (about 1/8 tsp), and sweetened condensed milk. Whisk again for a few minutes until well combined, stopping to scrape down the sides of the mixing bowl.
  • Pour the heavy cream into a separate bowl and whisk it on high speed until stiff peaks form, about 4 minutes. Add the cream cheese, butter and milk mixture. Whisk again for about 30 seconds, just until stiff peaks form. Do not over mix! Over mixing will cause the frosting to separate. I recommend mixing on medium speed to avoid separating the mixture.
  • If not frosting a cake right away, place frosting into the refrigerator for 30 minutes. This will thicken the frosting further, making it easier to work with. Do not keep at room temperature for too long.

WHIPPED CREAM FROSTING

Whipped Cream Frosting image

Whipped cream is a light and simple option for frosting cakes and cupcakes, especially when paired with fresh fruit. The trick is making sure it doesn't get too soft before it's served. Some cooks mix in cream of tartar, which can add a sour note. We prefer powdered milk. It helps create a frosting that's stable enough for piping and layering without affecting the taste

Provided by Food Network Kitchen

Time 10m

Yield 4 cups

Number Of Ingredients 4

1/4 cup confectioners' sugar
2 teaspoons non-fat or skim powdered milk
2 cups cold heavy whipping cream (see Cook's Note)
2 teaspoons pure vanilla extract

Steps:

  • Place a large mixing bowl or the bowl of a stand mixer in the freezer until cold, about 5 minutes. Alternatively, fill the bowl with ice water and let stand for 5 minutes. Pour out the ice water and quickly wipe the bowl dry.
  • Sift the sugar and powdered milk into the chilled bowl, then add the cold cream and vanilla. Whip the mixture on high speed until stiff, but smooth peaks form, about 2 minutes. If you accidentally overwhip, the peaks will look like they are cracking. Add about a tablespoon more heavy cream and hand whip the frosting until it smooths out.
  • The recipe makes enough frosting to generously top 24 cupcakes or to cover two 8-inch-round cakes, plus extra to pipe decorations. Unrefrigerated, the frosting will hold its shape for up to 6 hours.

  • Prepare the berry sauce first and allow it to cool before using in this recipe. A hot berry sauce will cause the whipped cream to melt. Combine the raspberries (or other berries) and sugar in a small saucepan. Use a spoon to crush the berries; if using strawberries, dice them before cooking. Bring the berries to a simmer over medium-high heat and simmer for 4 to 5 minutes, until the berries are falling apart. Pour the resulting sauce into a fine mesh strainer arranged over a bowl. Use the back of a large spoon to press the sauce through the strainer, discarding any seeds and pulp. Allow the sauce to cool in the refrigerator.
  • Next, prepare the whipped cream. Pour the chilled cream into a stand mixer bowl and add the confectioner's sugar. Whisk on medium speed first for a few minutes, then turn the speed up and whisk for about 3 to 4 minutes until stiff peaks form. Set aside.
  • In a separate mixing bowl, beat the softened cream cheese or mascarpone for a few minutes until it's smooth and creamy. Melt the white chocolate in the microwave or over a double boiler. Do not let the chocolate cool!! Add the warm, melted white chocolate, vanilla and salt to the cheese. Mix again for a few minutes until well combined. Add the berry sauce last, along with red food coloring if desired. Beat again until the sauce is well-incorporated and the mixture is smooth.
