I love experimenting with recipes, and I came up with this one after a lot of experimenting with my favorite waffle recipe. These are more filling than your average waffles. I use aluminum-free baking powder. These are wonderful with homemade blueberry syrup.

2 eggs, beaten
1 ¾ cups skim milk
¼ cup canola oil
¼ cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup whole wheat pastry flour
½ cup flax seed meal
¼ cup wheat germ
¼ cup all-purpose flour
4 teaspoons baking powder
1 tablespoon sugar
¼ teaspoon salt

Steps:

  • In a large bowl, whisk together the eggs, milk, oil, applesauce, and vanilla. Beat in whole wheat pastry flour, flax seed meal, wheat germ, all-purpose flour, baking powder, sugar, and salt until batter is smooth.
  • Preheat a waffle iron, and coat with cooking spray. Pour batter into waffle iron in batches, and cook until crisp and golden brown.

These waffles are light but also crispy on the outside from just a touch of oil and a yeasted batter with buttermilk. Oats and whole wheat pastry flour make a heartier waffle that is delicious with fruit, yogurt or syrup.

1 (1/4-ounce) package active dry yeast
1/2 cup warm water (105 to 110 degrees)
2 cups buttermilk
3 tablespoons peanut oil
2 tablespoons sugar
2 cups whole-wheat pastry flour
1/2 cup rolled oats
4 large egg whites
1/8 teaspoon baking soda
1/4 teaspoon fine salt
Cooking spray for waffle iron
Maple syrup, for serving

Steps:

  • 1. Sprinkle the yeast over the water in a large mixing bowl; let stand until foamy, about 5 minutes. Add the buttermilk, oil, sugar and flour and whisk until smooth. Cover the bowl with plastic wrap and refrigerate overnight.
  • 2. Preheat a waffle iron. Whisk the oats, egg whites, baking soda, and salt into the waffle batter until smooth. Lightly mist the hot waffle iron with cooking spray. Add about 1/3 cup of batter to each section, using the back of a spoon to spread batter to the edges. Cook until the waffles are crisp and golden brown, 5 to 7 minutes. Repeat with the remaining batter. Serve with maple syrup.

1 cup whole wheat pastry flour
1 cup whole wheat flour (you can also use spelt, rye, cornmeal or buckwheat)
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups buttermilk (make your own: add 2 tablespoons of vinegar or lemon juice to 2 cups milk, and let sit for 5 minutes)
3 eggs
1 tablespoon maple syrup (or honey)
1/4 cup (1/2 stick) butter (original recipe called for one full stick of butter)
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract

Steps:

  • To keep the cooked waffles warm while you finish cooking the rest, reheat your oven to 200 degrees and heat up your waffle iron.
  • Mix the dry ingredients (flours, baking powder, baking soda, and salt) in a large mixing bowl.
  • In a large measuring cup, whisk together the buttermilk, eggs and syrup or honey.
  • Pour the liquid ingredients into the dry ingredients. Stir just until they are mixed. Add the melted butter and mix well.
  • Pour batter into your waffle iron until the batter reaches the edges of the iron. Cook until crisp and golden.
  • Place each waffle on a rack in the oven in a single layer to keep them warm until you're ready to serve. Five minutes in the oven may actually help them get a little crispier.

1/4 cup firmly packed light brown sugar
2 tablespoons wheat germ
4 teaspoons baking powder
1 teaspoon ground cinnamon
Pinch fine salt
2 large eggs
1 1/2 cups milk
1/4 cup unsalted butter, melted
1/4 cup peanut or walnut oil
Maple syrup

Steps:

  • Preheat a waffle iron to medium-high.
  • Whisk the flour with the oats, sugar, wheat germ, baking powder, cinnamon, and salt in a medium bowl. In another medium bowl, lightly whisk the eggs, then add the milk, butter, and oil.
  • Gently stir the wet ingredients into the dry ingredients with a wooden spoon, to make a batter. Take care not to overwork the batter, it's fine if there are a few lumps.
  • Pour 1/3 to 1/2 cup of batter per waffle (it depends on the size of your waffle iron) and cook until the outside of the waffle is crisp and inside is cooked through, 3 to 5 minutes. (The time varies depending on the size and spread of a waffle iron). Serve warm with maple syrup. Repeat with remaining batter.

Steps:

  • For each waffle, brush hot waffle maker with vegetable oil. Spread batter onto center of hot waffle maker. (Waffle makers vary in size; check manufacturer's directions for recommended amount of batter). Close lid of waffle maker.

1 egg, separated
3/4 cup skim milk
1/4 cup mashed banana
1 tablespoon canola oil
Vegetable oil cooking spray
3/4 cup nonfat plain Greek yogurt, divided
1 1/2 cups sliced strawberries, divided
3 tablespoons sliced almonds, divided
6 teaspoons maple syrup, divided

Steps:

  • Heat waffle iron. In a blender, process oats until flourlike in texture. In a bowl, combine oats with flour, flaxseed, baking powder, pumpkin pie spice and salt. In a second bowl, beat egg white until stiff peaks form. In a third bowl, mix milk, banana, oil and egg yolk. Gently stir milk-banana mixture into dry ingredients; gently fold in egg white until just combined. Coat waffle iron with cooking spray; pour 1/3 cup batter onto iron, and cook until waffle is crispy and pale gold, about 4 minutes. Repeat twice. I have not tried these waffles. I'm posting this for safe keeping. I found this recipe in The Breakfast Book. Adding granola makes a chewy, tasty, and substantial waffle that soaks up lots of butter and syrup and is delicious served with sliced bananas or melon. Use your own homemade granola in these waffles and the flavor will be worlds better.

1 1/2 cups granola cereal (without raisins or dried fruit)
1 3/4 cups milk, plus a few tablespoons more if needed
1/2 cup butter, melted (1 stick)
2 eggs
1 1/2 cups whole wheat flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
melted shortening or oil, if needed

Steps:

  • Stir together the granola and milk in a medium-size mixing bowl and allow to stand for 10-15 minutes, until the granola has softened.
  • Beat the melted butter and eggs into the granola-milk mixture. In a separate bowl, stir together the flour, baking powder, baking soda, and salt. Add to the first mixture and beat just until the batter is blended.
  • Heat the waffle iron and brush lightly with melted shortening or oil, if necessary. Pour in just enough batter (1/2-3/4 cup) to barely fill the grids. Close the iron and cook just until the steaming stops and the waffles are golden. If the batter becomes too thick while standing, stir in a tablespoon or two more milk.
