1 onion, finely chopped
1 celery, finely chopped
1/2 green bell pepper, seeded and chopped
3 slices bacon, crisp-cooked and crumbled
1/2 cup apple juice
1/4 cup cider vinegar
1 tablespoon all-purpose flour
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • In a large bowl, combine potatoes, onion, celery, bell pepper, and bacon; set aside.
  • In a small saucepan, whisk the apple juice, vinegar, and flour; bring to a boil, whisking constantly. Boil, whisking constantly, until thickened, about 4 minutes; stir in the salt and pepper. Drizzle over the vegetables, toss to coit, and serve immediately.

1 tablespoon of branston pickle (Can be found in the "Irish food section" of Super Stop and Shop)
1/4 teaspoon black pepper
2 teaspoons dried parsley flakes
1/4 cup imitation bacon bits

Steps:

  • IN a slow cooker, combine potatoes, onion and celery.
  • In a medium bowl, combine water, vinegar, sugar, tapioca, black pepper and parsley flakes.
  • Pour mixture over potato mixture.
  • Mix well to combine.
  • Cover and cook on LOW for 8 hours.
  • Stir in bacon bits.
  • Serve warm.

1 1/2 lbs uncooked red potatoes, unpeeled (about 14 small potatoes)
3 1/2 ounces Canadian bacon (1/4 lb)
1 tablespoon olive oil
1 medium onion, chopped (about 1/2 cup)
2 teaspoons arrowroot
1 tablespoon Splenda sugar substitute
1 teaspoon table salt
1/2 teaspoon celery seed
1/2 teaspoon dry mustard
1/4 teaspoon black pepper
2/3 cup water
1/4 cup apple cider vinegar
1 egg, hard-boiled
2 tablespoons fresh parsley, chopped

Steps:

  • Place potatoes in a large saucepan; add enough water to cover potatoes.
  • Bring to a boil; reduce heat and simmer, covered, until tender, about 15 minutes.
  • Drain potatoes and allow to cool. Cut potatoes into 1/4-inch-thick slices; set aside.
  • Meanwhile, cook bacon in a large skillet over medium heat until slightly brown, about 5 minutes. Remove from skillet; set aside.
  • Add oil to pan and cook over medium heat until sizzling.
  • Add onion and cook until tender, about 5 minutes.

1/2 pound thick-cut bacon
3/4 cup finely chopped onion
1/3 cup white vinegar
1/4 cup sugar
1 tablespoon Dijon mustard

Steps:

  • Place the potatoes in a medium-size pot and cover them with enough water to extend 2 inches above the surface of the potatoes. Salt the water and bring to boil over medium-high heat. Continue cooking until potatoes are tender when pierced with a fork, about 15 to 20 minutes. Drain and slice into 1/4-inch rounds.
  • Cook the bacon in a large skillet over medium-high heat. Once crisp, place on a paper towel-lined plate and crumble into small pieces. Pour off the rendered fat, reserving 1/4 cup in the pan. 3 1/2-4 cups frozen potatoes, such as Ore-Ida cottage fries (found in the frozen section next to tater tots) or 3 1/2-4 cups waffle-shaped French fries (found in the frozen section next to tater tots)
1/2 cup cold water
6 slices bacon, minced
1/2 cup celery, chopped
1/2 cup red onion, chopped
2 tablespoons flour
1 1/2 tablespoons sugar
1 1/2 teaspoons salt
1/2 teaspoon celery seed
2/3 cup water
1/3 cup tarragon vinegar or 1/3 cup apple cider vinegar
2 hard-cooked eggs
paprika, to garnish

Steps:

  • Place frozen potatoes and cold water in covered skillet; cook over medium heat for 8-10 minutes or until fork-tender; drain.
  • Meanwhile, in skillet, cook bacon until softened; add celery and onion and cook until bacon is crisp and celery golden. Remove from skillet and drain on paper towels.
  • Spoon off excess fat, reserving 2 T bacon drippings in skillet; blend in flour,sugar,salt and celery seed. Add water and vinegar; cook while stirring until smooth and thickened.

4 ¼ pounds waxy potatoes
1 small onion, finely chopped
1 cup hot vegetable broth
5 tablespoons white vinegar
2 tablespoons vegetable oil
salt and freshly ground black pepper to taste
1 pinch white sugar, or to taste
1 tablespoon chopped fresh chives

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 30 to 40 minutes. Drain. Cool until easily handled, about 5 minutes. Peel while still warm. Cut into thin slices and put in a large bowl. Add onion.

1/2 lb bacon, chopped

2 lbs potatoes, cubed and cooked

  • Precook potatoes, unless you happen to have some left over.
  • Cook bacon pieces over med-high heat until crisp, remove from pan, reserving about half the fat.
  • Add butter to bacon grease, melt.
  • Add onion, cook until translucent.
