1 teaspoon margarine

Steps:

  • Heat oven to 375°. Spray 1-quart casserole with nonstick cooking spray. Layer yams and crushed pineapple in casserole. Sprinkle brown sugar, pecans and crystallized ginger over top; dot with margarine. Cover and bake about 45 minutes or until yams are tender.

2 (8 ounce) cans crushed pineapple, with juice
½ pound golden currants
½ teaspoon ground cinnamon
1 ⅔ cups miniature marshmallows

Steps:

  • Cook yams in a large pot of salted water until tender, about 20 to 30 minutes. Dice the yams and place into a 9x13 inch baking dish.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir pineapple, currants and cinnamon into the casserole dish. Sprinkle marshmallows over the casserole.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 35 minutes.

1/4 tsp salt
1/2 tsp cinnamon

2/3 can(s) marshmallows, mini
1/4 c orange juice, fresh opptional

Steps:

  • 1. beat all ingredients together,butter baking dish,dot 1/2 of the marshmallows,then add remaining mixture. bake at 350 degrees fir 30 minutes remove from oven, dot top with marshmallows and replace in oven about 10 minutes longer or till browned on top. enjoy

1/2 cup butter or 1/2 cup margarine
1/4 cup milk
1 (20 ounce) can crushed pineapple, drained
1/2 teaspoon salt (to taste)

Steps:

  • Place potatoes in 8-10 quart saucepot; add water to cover; bring to boil over high heat.
  • Lower heat to simmer and cook, covered, 15-20 minutes, or until tender.
  • Heat oven to 325 degrees F.
  • Drain potatoes thoroughly, then mash until smooth.
  • Beat in butter, milk, pineapple, salt, and pepper.
  • Spoon into 9"x13" baking dish or 3 quart casserole; top with marshmallows.
  • Bake for 15-20 minutes until marshmallows have lightly browned.
  • Note: Casserole may be prepared in advance and set aside or refrigerated until baking time; in that case, baking time must be increased so potatoes will heat through, and marshmallows should not be added until last 15 minutes of baking time.

1 20 oz. can crushed pineapple, drained
1-1/4 cups sugar
6 T. butter, melted
3 eggs
2 t. salt
2 t. ground cinnamon
1/4 t. ground allspice
1/4 t. ground nutmeg
1/2 C. brown sugar
2 T.butter, melted
1/3 C. all purpose flour
1 C. pecans or walnuts, chopped

Steps:

  • Preheat oven to 375. Lightly grease a 9" x 13" baking dish. In the oven on a cookie sheet, bake sweet potatoes whole until soft (approx. 45 min.) Remove skins,cut in half and quarter. With an electric mixer, mix sweet potatoes, crushed pineapple, sugar, butter, salt, and spices. Stir in one egg at a time. Pour into baking dish. Mix topping ingredients together and sprinkle over top of the casserole. Reduce heat in oven to 350. Bake 35-40 minutes at 350 degrees.

Grandma was always in charge of Thanksgiving dinner in my family. This is my variation on her candied yams (sweet potatoes), and they are the best!

4 large sweet potatoes, peeled and cut into 1/4-inch-thick rounds
8 tablespoons (1 stick) salted butter
2 cups granulated sugar
One 20-ounce can crushed pineapple
1 teaspoon ground cinnamon
1 teaspoon ground cloves
Pinch kosher salt
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 375 degrees F. Place the sweet potatoes in a 2-quart baking dish. Set aside.
  • In a medium pot, melt the butter over medium-low heat. Add the sugar and stir until smooth. Drain the pineapple in a strainer, reserving the juice. Stir in about half the pineapple and half the pineapple juice; reserve the rest of the pineapple and juice for another use. Stir in the cinnamon, cloves and salt. Bring the mixture to a boil, remove from the heat and add the vanilla extract. Pour the mixture directly over the sweet potatoes.
